2.5 pound flank steak ((we use Snake River Farms))
1 tablespoon kosher salt
1 tablespoon coarse ground pepper
1 cup fruity red wine (like Pinot Noir or Malbec)
2 cloves garlic, crushed
1/4 cup chopped shallots
2 tablespoon soy sauce
1 teaspoon red chili pepper flakes

Steps:

  • Trim any excess fat and sliver skin off the flank steak.
  • In a 1 gallon plastic bag, add marinade ingredients. Place flank steak in the baggie and seal. Marinade in the refrigerator for at least one hour, no more than 4.
  • Prepare grill for direct grilling using a good quality lump charcoal. Remove flank steak from marinade and pat dry with a paper towel. Combine the salt and pepper in a small bowl and season the steak with the rub.
  • Place the flank steak over direct heat and cook for 6 minutes or until a nice crust develops. Flip the steak and cook for another 6 minutes or until the internal temperature reads 125 degrees for rare.
  • Remove from the grill and let rest for 10 minutes to allow to come up to temperature and to let the cells reabsorb the juices.
  • Slice against the grain and serve.

1 1/4 pounds flank steak, rinsed and patted dry
1 (1.06-ounce) packet zesty herb marinade (recommended: McCormick)
1 1/2 cups red wine, preferably Merlot
1 teaspoon dried rosemary, chopped

Steps:

  • In a large zip-top bag, combine all ingredients. Squeeze out air and seal bag. Massage bag until well combined and marinade mix is dissolved. Marinate in refrigerator for a minimum of 1 hour or up to 8 hours. Remove flank steak from refrigerator 30 minutes before cooking.
  • Preheat grill to medium-high heat. Oil grate when ready to start cooking.
  • Remove steak from marinade; discard marinade. Place steak on grate. Grill for 5 to 6 minutes per side for medium.
  • Remove from grill and let rest for 5 minutes.
  • To serve, slice across the grain.

1 (1 1/2-pound) flank steak, fat trimmed
¾ cup olive oil
½ cup light brown sugar
½ cup dry red wine
¼ cup soy sauce
3 tablespoons onion powder
3 tablespoons honey
3 whole green onions, coarsely chopped
4 cloves garlic
2 tablespoons garlic vinegar
1 ½ teaspoons ground ginger
1 ½ teaspoons garlic powder

Steps:

  • Score the flank steak by making shallow crisscross cuts on both sides.
  • Place the olive oil, light brown sugar, red wine, soy sauce, onion powder, honey, green onions, garlic cloves, garlic vinegar, ground ginger, and garlic powder in a blender. Puree until smooth; pour mixture into a resealable plastic bag. Add the steak, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator overnight.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Allow the flank steak to rest at room temperature for 20 minutes. Remove the steak from the marinade, and shake off excess. Pour the marinade into a small saucepan and bring to a boil over high heat. Reduce heat to medium-low, and simmer for 10 minutes; set aside.
  • Grill the steak on the preheated grill until it starts to firm, and is reddish-pink and juicy in the center, about 7 minutes per side, basting often with the sterilized marinade. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).

1-1/2 teaspoons olive oil, divided
1 beef flank steak (1-1/2 pounds)

1 cup dry red wine or 1/4 cup grape juice and 3/4 cup additional reduced-sodium beef broth

  • Remove papery outer skin from garlic bulb (do not peel or separate cloves). Cut top off of garlic bulb; brush with 1/2 teaspoon oil. Wrap bulb in heavy-duty foil. 2 pounds flank steak, cut into 4 equal pieces
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
1/4 cup red wine vinegar
2 tablespoons chopped fresh oregano leaves or 1 teaspoon dried oregano
2 tablespoons unsalted butter
10 ounces (1 bag) Italian salad blend

Steps:

  • Heat the olive oil in a large skillet over medium heat. Season both sides of the steaks with salt and pepper. Cook in 2 batches if necessary. When the oil is hot and shimmering, add the steaks and cook, tuning each once, until seared and rich mahogany, about 6 minutes per side for medium-rare. Transfer the steaks to a plate.
  • Add the garlic to the pan and cook, stirring occasionally, until aromatic, about 1 minute. Pull the skillet from the heat, add the vinegar, and use a wooden spoon to scrape up any brown bits that cling to the pan. Stir in the oregano, butter, and any juices from the steak, until the butter melts. Add the greens to the skillet, season with salt and pepper, and toss until they begin to wilt, about 30 seconds.
  • Slice the meat against the grain into thin slices, divide between 4 plates, top with the greens and the pan juices. Serve.

4 shallots, coarsely chopped
1 cup dry red wine, such as Cabernet
1/4 cup olive oil
2 pounds flank steak, butterflied
Salt and pepper
1/4-pound thinly sliced prosciutto
1/4-pound thinly sliced fontina cheese
14 fresh basil leaves
Olive oil
Cabernet-Shallot Reduction, recipe follows
2 teaspoons olive oil
3 shallots, finely chopped
1 bottle Cabernet wine
1 teaspoon black peppercorns
Salt
1 tablespoon honey

Steps:

  • Whisk together shallots, wine and olive oil in a large baking dish. Add the steak and turn to coat. Cover and refrigerate for at least 4 hours or overnight.
  • Heat grill to high.
  • Remove the steak from the marinade and blot with paper towels. Lay on a flat surface, cut side up, and season with salt and pepper. Cover the surface with the prosciutto slices, then top with the cheese and a layer of basil leaves. Starting with the side facing you, tightly roll up the steak around the filling. Using kitchen string, tie the roll in 4 or 5 places.
  • Brush the outside of the steak with oil and season with salt and pepper. Grill the steak over high heat until browned all over, 8 to 10 minutes. Turn the steak 4 times as it cooks. Move the meat away from the direct heat and grill for 15 to 20 minutes, or until an instant-read thermometer registers 125 degrees F for medium-rare. Remove from the grill and let rest 5 minutes before slicing. Slice against the grain into 1/2-inch thick slices and drizzle with the Cabernet-Shallot Reduction.
  • Heat oil in a large saucepan on the grates of the grill over high heat. Add the shallots and cook until soft. Add the wine and peppercorns, bring to a boil and cook until thickened and reduced to 1 cup. Strain the mixture into a bowl and season with salt, to taste, and honey.

1 1/2-2 lbs flank steaks
coarse salt
fresh ground black pepper
1/2 cup extra virgin olive oil
1/4 cup sherry wine vinegar
2 tablespoons balsamic vinegar
1 tablespoon ketchup
1/2 teaspoon Worcestershire sauce
1 teaspoon honey
1 teaspoon sugar
1/2 cup red onion, very finely diced
1 pinch cayenne pepper
1 teaspoon fresh rosemary, chopped
1/2 teaspoon fresh thyme, chopped
1/2 teaspoon black pepper, freshly ground
1/4 cup water

Steps:

  • In a large bowl, combine all the marinade ingredients and whisk well.
  • Pour into a large Ziploc bag and add the steak; seal the bag and refrigerate for 24-36 hours.
  • Thirty minutes before grilling, preheat the grill to high and remove the steak from the refrigerator.
  • Transfer the meat to a platter and reserve the marinade for basting.
  • Season the steak on both sides generously with salt and pepper.
  • Place the steak on the hot grill and cook for 2 minutes.
  • Rotate the steak a quarter turn to mark the steak which promotes even cooking and makes an attractive grill pattern on the meat.
  • Cook for 2 minutes more, then turn and sear the other side.
  • Dab the marinade onto the meat with a pastry brush.
  • Cook for 2 minutes, then mark by rotating a quarter turn. Cook another 2 minutes and baste again.
  • Reduce the heat to low and transfer the steak to the warming shelf placed in the highest position. If you don't have a warming shelf, move the meat to a cooler section of the grill.
  • Close the lid and continue to cook for 8-12 more minutes more for medium-rare, depending upon the thickness of the steak.
  • Lift the lid to turn the steak over and baste with the marinade every 2 minutes or so.
  • Allow the meat to rest for 5 minutes off the grill before thinly slicing it across the grain on a slight bias, 1/4-1/8 of an inch thick.
  • Serve warm.
