The Best Oven Roasted Garlic Flank Steak Recipe - how to cook flank steak or skirt steak in the oven with tons of garlic butter steak flavor!

Steps:
- Lay flank steak out flat, trim any extra fat or silver skin.
- Generously season steak with salt and pepper.
- Add olive oil, herbs, lemon zest and juice, and diced garlic to a large bowl or (preferably) a large plastic bag and mix well.
- Add steak to bag and let marinate for 40 minutes up to two hours.
- Preheat oven to 500 degrees (or 450 - as high as your oven broiler can go.)
- Add large cast iron pan or skillet to oven. If you don't have a pan or cast iron griddle large enough for your steak, you can use a heavy baking sheet lined with foil. (Cast iron will get best results, but don't worry if you don't have it.) Make sure pan is close to broiler, but not touching (I give about 5" to make sure my steak has room under the broiler since I have a gas flame broiler and don't want to start a fire from spattering fat.) Let pan get scorching hot before adding steak to it for the best texture.
- Remove steak from bag, and sprinkle with garlic powder.
- Cook steak in oven for 8 minutes, then flip to other side and cook another 8.
- Continue to cook until steak has reached desired doneness: 125 degrees with a digital thermometer inserted into the fattest part of the steak will give you a rare steak. 135 degrees will get you medium rare, 155 for medium well, and 165 degrees for well done.
- When your steak is done to your taste, remove from oven.
- Place a small piece of foil over the steak to "tent" it and let it finish carryover cooking as it rests for 10 minutes.
- When steak has rested for at least 10 minutes (don't rush - if you cut it right off the grill the steaks juices will all run out), slice it width-wise (so you have lots of thin strips instead of just a few long strips) against the grain - which is essential to keeping the steak from being too chewy or tough.
- Serve immediately and enjoy!

- In a medium bowl, mix the oil, soy sauce, vinegar, lemon juice, Worcestershire sauce, mustard, garlic, and ground black pepper. Place meat in a shallow glass dish. Pour marinade over the steak, turning meat to coat thoroughly. Cover, and refrigerate for 6 hours.

- Combine all marinade ingredients in large ziploc bag.
- Score steak by making shallow diagonal cuts across steak.
- Add steak to bag, seal bag.
- Refrigerate at least 2 hours (up to 24 hours).
- When ready to cook, remove steak from bag.
- You can either grill or broil it.
- 12 to 14 minutes or to desired doneness (160 degrees F for medium doneness).
- If you want to serve the marinade as a sauce, bring it to a boil in a small saucepan, reduce heat.
- Simmer 5 minutes.
FLANK STEAK
Steps:
- 1. Combine the marinade ingredients in a nonreactive bowl. Add the flank steaks and coat well with the marinade.
- 2. Marinate the steaks, covered, in the refrigerator for 30 minutes or overnight, turning once. Remove from the marinade and pat dry.
- 3. Broil or grill the steaks over high heat, 3 inches from the heat source, for 4 minutes per side for medium-rare meat. Remove to a cutting board and let rest for 10 minutes.
- 4. To serve, slice thinly on the diagonal and arrange on a board or platter.

- Slice steak thinly on the bias (this will be easier if you freeze the steak for 20-30 minutes first). Combine in a bowl with soy sauce, Worcestershire sauce and hot sauce. Let stand 10-15 minute.
- Heat oil in heavy skillet. Add beef and stir-fry quickly until meat loses its pink color. Remove from pan to a clean plate and set aside.

- Whisk marinade ingredients together in a freezer size ziploc bag. Reserve 2 tablespoons to use later. Add steak, press out excess air and seal. Massage marinade into the steak with your hands through the outside of the bag.
- Marinate in the refrigerator at least 2 hours or up to 12 hours.
- Preheat outdoor grill (or indoor grill pan) to medium-high heat, (450 degrees F when lid is closed).
- Grill steak for 5-6 minutes per side, or until an internal thermometer reads 130-135 degrees F for medium rare or around 140 degrees for medium. Grill time will vary depending on thickness of your steak and desired level of doneness.
- Remove the steak to a cutting board and let rest for 10 minutes before slicing. Slice steak into thin strips against the grain (perpendicular to the long strands) or ½-inch cubes. Drizzle with the 2 tablespoons reserved marinade.

Another great recipe my brothers & I grew up on... The outside gets a little but crispy and seals in the succulent juices inside - yum! It's as delicious the next few days as it is hot off the grill - make a bunch, store in a ziplock in the fridge & snack for days!

- Combine all ingredients in ziplock bag or possibly glass dish.
- Marinate steak overnight for best flavor.
- Grill on barbecue (best) or possibly broil to taste - I usually eat steaks med rare but I find this tastes best med/med well (very slightly pink in the middle).
- Slice thin against grain.
FLANK STEAK BORDELAISE
Steps:
- Combine all ingredients in gallon bag and place in the fridge for 23 hours, remove an hour before cooking and allow to bring up to room temp
- Remove from marinade and pat dry. Discard the marinade and place the steak on a roasting rack
- Place rack on sheet pan and place in cold oven as close to broil element without allowing meat to touch element
- Set oven to broil and cook for 10-12 minutes for rare, cook longer if desired however you are going to want some pink on this one its just that good
- When steak reaches desired temp remove from oven and let rest for 5 mins. Once rested cut into thin slices and serve with sauce drizzled over.
- Melt butter in med-high heat, add onions, and cook till soften and aromatic. Make sure not to brown. Add garlic and cook till aromatic. Once again adjust heat to make sure you don't brown or burn
- Mix in flour. Once the flour is combined stir in the rest of the ingredients. Bring to boil and simmer for at least 15 mins until the desired sauce consistency is reached. Season with salt and pepper to taste.
- Pre-heat oven to 375 degrees
- Cut russets into 1/8" thick slices. Place in ice water to keep from changing color
- Mix butter, thyme, oregano, and garlic together.
- Stack potato slices in muffin pans, cover with butter mixture, and add a pinch of salt and pepper to top
- Cook in the oven until the top is golden brown and the middle of the stack is tender. This should be around 30-40 mins
- Remove and serve
- Pre-heat skilled and oil over med-high heat
- Dredge zucchini sticks in scrambled egg and then into bread crumbs making sure a good layer of bread crumbs stick to the zucchini. Place in hot oil and brown all sides until zucchini starts to turn tender.
- Place cooked zucchini on a cooling rack or towel to allow oil to drain off. Serve while hot!
- Pre-Heat Oven to 450
- Slice tomatoes to desired thickness, place foil-covered cooking sheet.
- Drizzle with olive oil and sprinkle with garlic herbs and salt and pepper
- Place in oven and roast till start to soften. Make sure you don't put them in too long or they will turn to mush. 10-20 minutes should be perfect.

- In a nonreactive dish or large resealable plastic bag, combine all ingredients except steak and mix thoroughly. Add steak and turn to thoroughly coat. - Season steak with salt and pepper. Heat oil in large heavy pot over medium high heat. Add steak and cook until all browned and then remove meat to a plate.

- I like to take the flank steak and use a meat tenderizer on it - pound it out a few times all over. Place the flank steak in a baking dish or a ziplock bag. In a bowl, whisk together the cilantro, olive oil, lime juice, lime zest, garlic, red pepper flakes, salt and pepper. Pour it over the flank steak and marinate anywhere from 30 minutes to 2 hour or even overnight!
- When you’re ready to cook the steak, you can grill, broil or pan sear it to your liking. I tend to broil it as I find that easiest. Preheat the broiler in your oven and move the oven rack as close as possible. Place the steak on a broiler pan or baking sheet and broil on each side for about 5 minutes. This usually results in a medium doneness in my oven - but since the edges are thinner, they tend to be more well done.
- Allow the steak to rest for 10 minutes before slicing it thinly against the grain. While the steak is resting, toss together the cherry tomatoes, onions and cilantro with a pinch of salt and pepper. Juice half the lime over top and toss well. Place the tomatoes on top of the sliced flank steak and serve. We love to do this as tacos, on salads, or as a main dish with rice, quinoa or potatoes, along with a green veggie like asparagus or broccoli!
