Soft cut out sugar cookie recipe that keeps its shape and dough does not need to be chilled before baking- perfect edges every time!

Number Of Ingredients 8

1 Cup unsalted butter (226 grams)
1 Cup granulated white sugar (200 grams)
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 egg
2 teaspoons baking powder
1/2 teaspoon salt
3 cups all purpose flour (360 grams)

Steps:

  • PREHEAT oven to 350° F.
  • In the bowl of your mixer, CREAM butter and sugar until smooth, at least 3 minutes
  • BEAT in extracts and egg. (PLEASE NOTE there is 1 egg in this recipe.)
  • In a separate bowl, COMBINE baking powder and salt with flour and add a little at a time to the wet ingredients.
  • IMPORTANT NOTE: If the dough looks crumbly keep mixing for 30 seconds to 1 minute longer. The dough should be pulling away from the sides of the mixer.
  • If the dough still looks too dry or stiff for your mixer, turn out the dough onto a countertop surface, flour surface as needed. Wet your hands and finish off kneading the dough by hand.
  • DO NOT CHILL THE DOUGH. Divide into workable batches (2-3 chunks), roll out onto a floured surface, and cut. You want these cookies to be on the thicker side (closer to 1/4 inch rather than 1/8).
  • Bake at 350 for 6-8 minutes. Let cool on the cookie sheet until firm enough to transfer to a cooling rack.

This is my great-grandmother's sugar cookie recipe.

3 cups sifted all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
1 cup white sugar
1 cup butter
1 egg, lightly beaten
3 tablespoons cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C) .
  • Over a large bowl, sift together all-purpose flour, baking powder, salt, sugar. Cut in butter and blend with a pastry blender until mixture resembles cornmeal. Stir in lightly beaten egg, cream, and vanilla. Blend well. Dough may be chilled, if desired.
  • On a floured surface, roll out dough to 1/8 inch thickness. Sprinkle with sugar; cut into desired shapes. Transfer to ungreased baking sheets.
  • Bake for 6 to 8 minutes, or until delicately brown.

2 ¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
1 cup butter, softened
1 ½ cups white sugar
1 egg
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  • In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
  • Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

2 cups all-purpose flour
1/4 teaspoon salt
1 cup cold butter, cubed
1 package (8 ounces) cream cheese, cubed
2/3 cup marshmallow creme
2/3 cup butter, softened
1-1/3 cups confectioners' sugar
Optional flavoring: 2 tablespoons baking cocoa, 1/2 teaspoon lemon extract or 1/2 teaspoon peppermint extract
Optional filling: seedless raspberry preserves, blueberry preserves or crushed peppermint candies
Additional confectioners' sugar

Steps:

  • In a large bowl, combine flour and salt. Cut in cold butter and cream cheese until mixture resembles coarse crumbs. Shape into a disk; wrap in plastic. Refrigerate 2 hours or until easy to handle., Preheat oven to 350°. On a lightly floured surface, roll dough to 1/8-in. thickness. Cut out with a floured 1-1/2-in. cookie cutter. Place 2 in. apart on parchment paper-lined baking sheets. Bake 7-10 minutes or until light golden brown. Remove to wire racks to cool completely., Meanwhile, in a large bowl, beat marshmallow creme and softened butter until light and fluffy. Gradually beat in confectioners' sugar., TO MAKE CHOCOLATE-RASPBERRY COOKIES: Beat cocoa into marshmallow creme mixture. Spread on the bottoms of half of the cookies. Spread raspberry preserves on the bottoms of remaining cookies; top with creme-topped cookies. to make Snickerdoodles for a variation:
2/3 cup Crisco solid shortening
3/4 cup sugar
1/2 tsp grated orange peel (opt)
1/2 tsp vanilla
1 egg
4 tsp milk
2 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
mix sugar and cinnamon to sprinkle over cookies before you bake them

Steps:

  • Cream butter and sugar well. Add eggs one at a time beating well after each addition. Mix flour, salt, baking powder and soda. Add to creamed mixture. Drop by spoonfuls on a greased cookie sheet at least 1 inch apart. Flatten with a spatula into circles about 2" in diameter. Sprinkle with sugar and cinnamon sugar mixture to make Snickerdoodles if you wish. Bake at 400 degrees 10 to 12 min.

1 c powdered sugar
1/2 c margerine
1/2 c shortening
1 c vegetable oil
2 eggs
2 tsp vanilla extract
4 1/2 c white flour
1 tsp baking soda
1 tsp salt
1 tsp cream of tartar

Steps:

  • 1. Beat together first 7 ingredients until fluffy.
  • 2. Slowly add flour, soda salt and cream of tartar until dough is soft and pliant.
  • 3. Shape into 1/2 inch balls.
  • 4. Press down with base of a glass dipped in sugar.
  • 5. Bake at 350 degrees 8-10 minutes. Remove promptly from cookie sheet onto racks to cool.
