I found this recipe on a library bookmark (believe it or not) and decided to try it out--the result was delicious! If you love the words chocolatey, peanut buttery, sweet and addictive, you'll love these cookies.

1/2 cup butter
2 cups sugar
1/2 cup cocoa
1 dash salt
1/2 cup milk
1 teaspoon vanilla
1/2 cup chunky peanut butter
3 cups quick oats

Steps:

  • combine butter, sugar, cocoa, salt, milk, and vanilla in a saucepan and cook for 5 minutes.
  • stir in peanut butter.
  • remove from heat and add quick oats; mix well.
  • drop from a teaspoon onto wax paper; let cool.

Great for beginning cooks! **Updated 3/5/2010 based on the first reviews I've adjusted the name and the ingredient list to add the the option of a 6th ingredient of using chocolate chips to the mix.

1/2 cup chunky peanut butter
1/2 cup brown sugar, packed
1 egg
1 1/4 cups quick-cooking oats
1/2 teaspoon baking soda
1/2 cup chocolate chips (this is the optional 6th ingredient)

Steps:

  • In a bowl, cream peanut butter and brown sugar until fluffy.
  • Beat in egg to the creamed mixture.
  • Add oats and baking soda and mix well. Add chocolate chips in this step if using this ingredient.
  • Drop by tablespoonfuls about 2 inches apart onto GREASED baking sheets. Flatten slightly (if you skip this you get mounds as they do not spread much).
  • Bake at 350F for 6-8 minutes then let cool completely on wire rack before storing.

I was trying to make simple, three ingredient peanut butter cookies, but I ended up short on peanut butter and had to improvise. They turned out very light, crispy and delicious! I am very happy with them----! ^w^

1/2 cup peanut butter (crunchy works best)
1 1/2 tablespoons flour
1 cup granulated sugar
1 egg
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F.
  • Sift together sugar, nutmeg, and cinnamon very well.
  • Add egg and peanut butter, mix thoroughly(about 1 minute or so).
  • Mixture should be very moist. Add the flour and mix thoroughly.
  • Roll into balls (I recommend using a tablespoon full, but I suppose they could be bigger is desired) and place on cookies sheet, leaing about an inch in between each cookie.
  • Bake for 15-20 minutes, checking every so often and touching (I really mean TOUCHING. Do not press or you will have flat cookies; very delicate.) the top of the cookie with a spoon. They are done when touching the top shows has no effect on the cookie.
  • Eat with milk or alone. I recommend eating them when they are still warm.so good -- >3

2 bananas, large and old
1 cup quick oats

Steps:

  • Mix those two together. Old bananas are amazing for this, but you can use fresh ones too.Then add in what sounds yummy to you! (or nothing!) We love:.
  • -a handful of chocolate chips.
  • -crushed walnut pieces.
  • -cinnamon.
  • -raisins.
  • Since all bananas are different sizes, the needed measurements can vary. If it seems too runny and the cookies would flatten out too much, add in more oatmeal. And make sure to not add in TOO many mix-ins as the cookies won't hold together very well. We cook them at 350 degrees for 15 minutes on a GREASED cookie sheet.

1 1/2 cup old fashioned oats
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 cup unsalted butter, room temperature
3/4 cup creamy peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 large egg
1 teaspoon vanilla

Steps:

  • Heat oven to 350 degrees. Line 2-3 baking sheets with parchment paper. Set aside.
  • In a medium-size bowl, whisk together oats, flour, salt, baking soda, and cinnamon.
  • To the bowl of a stand mixer, add the butter, peanut butter, white and brown sugars. Beat until creamy, about 2 minutes. Add the egg and vanilla and beat until blended.
  • Set the mixer to low and add in the dry ingredients. Mix until combined. Scrap down the sides of the bowl. Using a large cookie scoop, #16, scoop out cookie dough and place on prepared baking sheets, leaving about 2 inches between cookies. Place 6 cookies per baking sheet. Bake cookies in the oven for 12-15 minutes until golden brown on the edges but the center still soft. Be careful not to over bake.
  • Remove from the oven and let cool on the baking sheet for 5 minutes then place on a wire rack.
  • Serve or store in an airtight container at room temperature.
