Yield 4 servings

Number Of Ingredients 23

1 1/4 cups sour cream
2 cloves garlic, minced
1 jalapeño, seeded and finely chopped
1 lime, juiced
1/2 bunch cilantro (1 cup), leaves finely chopped, plus more for serving
Kosher salt and freshly ground black pepper
1 lime, juiced
1/2 red cabbage, thinly sliced
1/2 red onion, thinly sliced
1 tablespoon olive oil
2 teaspoons sugar
Kosher salt
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
1/2 cup all-purpose flour
1 large egg
1 1/4 cups panko breadcrumbs
3 fillets walleye or trout (about 12 ounces total), patted dry
Flavorless oil, like canola or vegetable, for frying
Four 2-ounce bags salt and vinegar potato chips (store-bought or filled yourself)
Yogurt or sour cream, lime wedges, sliced avocado, jalapeño slices (optional), fresh cilantro, for serving

Steps:

  • For the cilantro lime sour cream: Combine the sour cream, garlic, jalapeño, lime juice, cilantro, 1/2 teaspoon salt and 1/2 teaspoon pepper in a small bowl and set aside.
  • For the red cabbage slaw: Combine the lime juice, cabbage, onion, oil, sugar and 1/2 teaspoon salt in a large bowl and massage for 2 minutes to soften the cabbage and distribute all ingredients evenly.
  • For the fish: Mix the cayenne, cumin and paprika with 1/2 teaspoon salt and a few turns of pepper in a dish and sprinkle all over the fish. Put the flour in a shallow dish and season with a pinch of salt and pepper. Beat the egg with 1 tablespoon water in another shallow dish, then put the breadcrumbs in a third shallow dish and season with salt and pepper.
  • Coat the fish all over in the flour and then the egg and then the breadcrumbs.
  • Heat a large skillet over medium-high heat and add a thin layer (about 1/4 cup) of oil. Fry the fish until golden and crispy, 4 to 6 minutes per side. Transfer to a cutting board and chop into strips.
  • To serve: Fill paper bags with chips (or open small bags of store-bought ones) and crush them coarsely. Top with a big plop of cilantro-lime sour cream, some fish, a squeeze of lime, slaw, avocado, jalapeños and a pile of fresh cilantro. Enjoy!

Get three of your 5-a-day in just one portion of these epic Mexican-inspired fish tacos.

Provided by Jamie Oliver

Categories     Healthy meals     Everyday Super Food     Alfresco     Dinner for two     Father's day     Romantic meals     Mexican

Time 35m

Yield 2

Number Of Ingredients 14

100 g plain wholemeal flour
2 ripe kiwi fruit
4 spring onions
1 fresh jalapeño or green chilli
1 bunch of fresh coriander, (30g)
2 limes
Tabasco chipotle sauce
¼ of a small red cabbage, (150g)
1 tablespoon red wine vinegar
½ an orange
1 red or yellow pepper
2 x 120g fillets of firm white fish, such as haddock, skin on, scaled and pin-boned, from sustainable sources
olive oil
2 tablespoons natural yoghurt

Steps:

  • In a bowl, mix the flour and a pinch of sea salt with 60ml of water to form a dough. Knead for a couple of minutes, then put aside.
  • Peel the kiwi fruit, cut in half and put into a large dry non-stick frying pan on a medium heat with the green halves of the spring onions and the deseeded chilli.
  • Lightly scald it all, turning every now and again, then place in a blender with half the coriander, the juice of 1 lime and a few shakes of chipotle Tabasco. Blitz until smooth, then taste and season to perfection.
  • Very finely slice the red cabbage, ideally on a mandolin (use the guard!), scrunch with the remaining coriander leaves and the vinegar and orange juice, then season to perfection.
  • To make your tacos, divide the dough into four balls and roll out each one thinly. Cook each through in a non-stick pan for just 1 minute on each side until soft, turning when you see bubbles. Cover with a tea towel to keep warm.
  • Slice up the whites of the spring onions. Deseed the pepper and cut into 1cm dice. Slice the fish into 2cm strips, then toss with the spring onion, pepper and 1 tablespoon of oil.
  • Return the pan you used for your tacos to a high heat and cook the fish mixture for around 4 minutes, or until the fish is cooked through and lightly golden.
  • Divide the yoghurt, fish and veg between your warm tacos. Serve with the dressed red cabbage, that killer salsa and lime wedges for squeezing over, then devour!

Categories     main-dish

Time 55m

Yield 6 to 8 appetizer servings

Number Of Ingredients 21

1/2 cup sour cream
1/4 cup mayonnaise
Juice of 2 limes (1/4 cup)
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/2 green cabbage, sliced (about 8 cups)
1/2 cup packed fresh cilantro leaves, chopped
Canola oil, for frying
1 pound catfish or other firm white fish fillets, cut into 1-by-2-inch pieces (about 24 total)
3 teaspoons taco seasoning
1 cup breadcrumbs
1 cup all-purpose flour
1 teaspoon baking powder
1 large egg
1/4 cup pilsner or lager beer
1/4 cup hot sauce, plus additional for assembly and serving
Four 10-inch tortillas, such as flour, spinach or sun-dried tomato
1 avocado, sliced
1 cup crumbled tortilla chips
1/2 cup thinly sliced radishes

Steps:

  • Combine 1/4 cup sour cream, the mayonnaise, lime juice, cayenne, salt and pepper in a large bowl. Add the cabbage and cilantro and toss to combine. Cover and refrigerate until ready to serve.
  • Heat 1/2 inch of the oil in a cast-iron skillet to 345 degrees F. Lay out the fish pieces and pat dry with a paper towel. Sprinkle them with salt, pepper and 1 teaspoon taco seasoning.
  • Combine the breadcrumbs, flour and baking powder in a bowl and sprinkle with salt and pepper. Combine the egg, beer, hot sauce and remaining 2 teaspoons of taco seasoning in a second bowl. Dip the fish in the egg mixture, letting any excess drip off, and dredge in the flour mixture. Working in batches, fry in the hot oil, turning once, until golden brown, 3 to 5 minutes total. Remove with a slotted spoon or tongs and place on a paper towel-lined plate. Season with salt.
  • Lay out 1 tortilla on your work surface. Pile the following ingredients on top of each other in the middle of the tortilla in this order: 1 cup slaw, 6 pieces of the fried fish, a quarter of the avocado slices, a quarter of the crumbled tortilla chips and a quarter of the radishes. Smear 1 tablespoon of the remaining sour cream on the tortilla next to the avocado and add a few dashes of hot sauce; this will act as the glue to keep help keep everything together.
  • Carefully roll up the tortilla into a burrito and place seam-side down on your work surface. Insert 6 evenly-spaced skewers crosswise through the roll. Using a serrated knife, trim and discard the very ends of the roll (or eat them), and then slice between the skewers to create 6 skewered rounds. Repeat with the remaining ingredients.

FISH TACO WRAP

Fish Taco Wrap image

This was a quick dinner I came up with. You can use any white fish. I used tilapia, but I might use haddock or cod next time. For the salsa, all I had on hand was Rotel tomatoes, which turned out good and spicy! You might find the cream cheese a bit weird as an ingredient. If so, you can omit that. This is for one serving, but easy to expand for more. See NOTE at the bottom for another way to prepare.

Time 25m

Yield 1 sandwich, 1 serving(s)

Number Of Ingredients 6

1 burrito-size flour tortilla
1 -2 tablespoon light cream cheese
1 -2 tablespoon salsa
1 small white fish fillet, cooked
1 slice cheddar cheese (or American)
1/2 cup shredded lettuce

Steps:

  • Place a tortilla on a microwave-safe plate.
  • Spread cream cheese, then salsa on top.
  • Add Fish on top of salsa, then the slice of cheese and lettuce.
  • Microwave 30 seconds. This makes it easier to fold tortilla around filling.
  • Fold up burrito style, or like a large egg roll.
  • Enjoy!
  • NOTE: I find that the salsa tastes best at room temperature. If you want this sandwich warm, Bake at 400 for 5-10 minutes. I just threw mine together after the fish was cooked, and I found it very satisfying.

  • Ahi Tuna Tacos. If your only ahi intake comes from your go-to sushi spot, it’s time to try using it at home. Fresh tuna tastes amaaazing in tacos, especially if you’re not quite game for eating it solo yet.
  • Blackened Cajun Shrimp Tacos. The best way to amp up shrimp’s flavor without deep-frying them? Serve them blackened! You’ll need a grill or cast-iron skillet, and plenty of Cajun seasoning to spice them up.
  • Fish Taco Cabbage Bowl. If you’re staying away from carbs, get your taco fix from this on-trend fish and cabbage bowl. Its main ingredients are just that—red and green cabbage and tilapia, plus a few spices.
  • Tropical Salsa Tilapia Fish Tacos. These tacos especially scream summer, given the pineapple-mango salsa thrown on top… we can taste how fresh and light they are just by looking at them.
  • Fish Taco Lettuce Wraps. Another low-carb, high-veg option: lettuce wraps! Get some sturdy leaves like large romaine or collards to use as your tortillas and pile them high with your fave white fish, an easy salsa verde, and avocado.
  • Cilantro Lime Fish Tacos. Chipotle fans, the cilantro lime crema on these tacos might remind you of their famous rice. But with grilled fish, cabbage slaw, pico de gallo, and guac making up the rest of the meal, you won’t feel quite as stuffed after digging in.
  • 15-Minute Spicy Fish Tacos. Need a super-fast meal you’ll want to make over and over again? Whip up these spicy fish tacos. The cumin and chili powders give them a kick, so no hot sauce-dousing is needed.
