4 ears corn, shucked
½ stick unsalted butter
½ cup brown sugar, lightly packed
1 tablespoon heavy cream
4 teaspoons fish sauce
1 lime, zested
½ lime, juiced
fresh thai basil, for garnish
lime, halved, for serving

Steps:

  • Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.
  • Bring a large pot of salted water to boil. Add the corn and boil for 5-7 minutes, until the kernels are tender and bright yellow. Use tongs to remove the corn and set aside.
  • In a small saucepan, combine the butter and brown sugar. Cook over medium-low heat, whisking together as the butter melts. Whisk in heavy cream and fish sauce. Let bubble for 1-2 minutes. Remove the pot from the heat and stir in the lime zest and juice.
  • Place the corn on the prepared baking sheet. Brush the corn on all sides with the caramel.
  • Bake the corn for 10 minutes, using tongs to rotate the cobs every few minutes and basting with more caramel, until caramelized and browned.
  • Serve corn with lots of chopped Thai basil and halved limes.

1 teaspoon coriander seeds
1 cup fresh parsley
1 cup fresh cilantro, plus more for garnish
1 1-inch piece ginger, peeled and roughly chopped
2 tablespoons vegetable oil
Kosher salt
1 3/4 cups corn kernels (fresh or frozen; thawed if frozen)
2 medium tomatoes, cut into chunks
4 6-ounce skinless striped-bass fillets (about 1 inch thick)
2 limes, cut into wedges

Steps:

  • Preheat a grill to high. Toast the coriander seeds in a dry skillet over medium-high heat, tossing, about 3 minutes. Crush the seeds on a cutting board (the bottom of a measuring cup works well), then pulse with the parsley, cilantro, ginger, vegetable oil, 1/2 teaspoon salt and 1 tablespoon water in a food processor to make a coarse mixture. Toss the corn and tomatoes with 2 teaspoons of the herb mixture in a bowl and season with salt. Tear off four large sheets (about 16 inches long) of heavy-duty foil. Place one piece of fish in the center of each. (If the ends of the fillets are thin, tuck them under.) Top with a spoonful of the remaining herb mixture and surround with the corn-tomato relish. Fold up the ends of the foil and seal into packets, leaving room inside for heat circulation. Grill the packets, covered, until the fish is just cooked through, 8 to 10 minutes. Carefully open the packets and slide the fish and vegetables onto plates. Top with more cilantro and serve with lime.

100g butter , at room temperature
1 tbsp runny honey
1 tbsp tomato ketchup
2 fat garlic cloves , crushed
2 tbsp harissa
6 corn cobs (cut into two if you have more than 6 guests)

Steps:

  • Mash together the butter, honey, ketchup, garlic and some seasoning, beating until quite smooth. At this point, if you are also cooking for children, split the mix into two serving bowls, before stirring the harissa into just one bowl. Add a pastry brush to each butter mix.
  • Wrap each corn cob in a double layer of foil. Barbecue, turning, for 30-35 mins until tender and a little charred. If you want them more blackened, simply unwrap and throw directly on the barbecue for a few more mins.
  • Pile onto plates and let everyone butter their own.

1 chipotle chile in adobo, minced (optional)

Steps:

  • Place corn in a very large piece of heavy duty foil or each one can have separate foils.
  • Pour butter over corn to coat each cob and to butter the foils. Sprinkle minced peppers over some all or none ot the corn. pour caramel evenly over the cobs. Seal foil around corn tightly.
  • Grill over hot coals for 5-8 minutes turning a couple of times.
  • Season with salt and top with additional caramel if you like.

4 ears fresh corn, shucked
1 lime
6 tablespoons mayonnaise
2 teaspoons fish sauce
1/2 teaspoon granulated sugar
1/2 to 3/4 cup finely chopped unsalted roasted peanuts
3 tablespoons chopped fresh cilantro (optional)

Steps:

  • Heat grill to medium-high. Grill corn, turning occasionally, until cooked through and lightly charred, 10 to 12 minutes. (Alternatively, drop corn in a large pot of salted boiling water and cook for 5 to 7 minutes.)
  • Meanwhile, zest the lime. Set aside the zest then cut the lime in half. Cut one half into four wedges and squeeze the remaining half into a small bowl. Stir the mayonnaise, fish sauce and sugar into the lime juice.
