GRILLED FISH KEBOBS WITH PARSLEY AND GARLIC BUTTER

- Kebobs: Put the salmon, halibut and tuna in a resealable plastic bag. In a medium bowl whisk together the olive oil, lemon zest, lemon juice, garlic, parsley, thyme, salt, and pepper. Pour the oil mixture over the fish and seal the bag. Refrigerate for 30 minutes. Thread each skewer with 2 pieces of salmon, 2 pieces of halibut and 2 pieces of tuna, alternating the fish on the skewers.
- Butter: In a small bowl, mix together the butter, garlic and parsley. Season with salt and pepper, to taste. Transfer the butter to the center of a 6-inch-square piece of plastic wrap. Fold the plastic over the butter and form it into a log, about 4-inches long and 1 1/2 inches in diameter. Refrigerate until firm, about for 1 hour. Slice the butter into 1/4 to 1/2-inch thick slices and transfer them to a plate.
- Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Season the fish with salt and pepper, to taste, and grill the skewers until opaque, about 3 to 4 minutes on each side. Arrange the skewers on a platter and serve the butter alongside.

GRILLED SEAFOOD KABOBS
Steps:
- Mix lemon juice, olive oil, mustard, Italian seasoning, hot sauce, salt, and pepper together in a large bowl. Add swordfish, shrimp, and scallops and toss.
- Preheat an outdoor grill for low heat and lightly oil the grate.
- Drain skewers and thread swordfish, shrimp, scallops, bell pepper, onion, squash, mushroom, and pepperoncini in an alternating fashion onto the skewers. Place a lemon piece on the end of each skewer. Brush skewers with any remaining oil mixture.
- Cook skewers on the grill, turning every 5 minutes, until seafood is cooked through, 15 to 20 minutes total.

- Preheat oven to 375 degrees. In a large non-stick skillet, Lightly brown beef and onion. Turn heat to low and add seasonings and cook until beef is completely browned. Remove from heat and stir in spinach.
- Wash bell peppers and remove tops, cores and seeds. Stuff each pepper with 1/2 to 2/3 cup of beef mixture. Put peppers in glass baking dish and pour 2 tbsp water into the bottom. Cover with foil and bake for 50 minutes.
- Remove stuffed peppers from oven and take off foil. Turn up oven to 400 degrees. Cook peppers for additional 10 minutes. Allow to cool somewhat before serving.
CREAMY LINGUINI WITH CHICKEN, ZUCCHINI AND RED BELL PEPPER
A tasty pasta dish with a lightened up cream sauce and filling ingredients. I originally got this recipe from Recipe4Living and it was considered a budget dish. I've changed it up a few times to make it to our liking and included chicken and peppers. I have also changed the creamy sauce recipe to make it lighter then the original. Not hard to do, but definitely helps in reducing calories!

- Heat oil in large skillet over medium heat. Add diced zucchini, diced red pepper and minced garlic to hot oil. Season with salt and red pepper flakes. Cook, turning occasionally, until zucchini and red pepper are slightly browned on each side, about 20 minutes. Meanwhile, bake chicken in shallow glass baking dish at 350 degrees for 25 minutes and bring a large pot of generously salted water to boil. Cook pasta until al dente, about 8 to 10 minutes. Drain, and set aside. Stir 2% milk into zucchini and red pepper, and simmer until it is reduced by about half, about 10 minutes. Cut chicken into bite sized pieces. Add chicken and pasta to skillet, and stir well. Mix in 1/2 cup of parmesan cheese. Sprinkle parsley over top and toss.

- Preheat the oven to 180C/gas 4/ fan 160C. Line a baking tray with foil and brush lightly with oil.
- Mix the spices and oil in a shallow bowl and season well. Roll the fish in the spice mixture, then loosely concertina it on 4 skewers. Follow with 2-3 chunks of pepper and onion per skewer and finish with a cherry tomato.
- Roast the skewers on the foil for 8-10 minutes or until the fish is white and opaque. Stir the parsley into the yogurt, then add the lemon juice and salt and pepper to taste. Serve with the kebabs and rice.

- If fish are large, cut into 4 servings.
- Heat oil in 10-inch non-stick skillet.
- Layer onion and bell peppers in skillet.
- Sprinkle with half of thyme and pepper.
- Place fish over bell peppers and sprinkle with remaining spice.

- In a medium bowl, combine all ingredients for the marinade: parsley, marjoram, rosemary, garlic, lemon juice and zest, honey, salt, cumin, and avocado oil. Whisk to combine, then add fish pieces to the bowl and toss to coat. Allow fish to marinate for 15-20 minutes. After fish has marinated, thread 1 piece of fish onto a soaked skewer, followed by a cherry tomato, a cod piece, another cherry tomato, and a final fish piece—in total, each skewer should have 3 pieces of fish and 2 cherry tomatoes. - Place 1/3 cup olive oil, orange juice, lime juice, garlic and cilantro leaves in a food processor. Processor until thoroughly combined. Add salt and pepper to taste. Reserve 1/3 of the marinade for later use.
- Place the fish in the marinade and marinate for 20-30 minutes. Do not marinate for more than an hour or the citrus in the marinade will cook the fish.
- Thread the fish alternately with the pineapple and bell peppers onto 6 or 8 inch skewers. Season with salt and pepper to taste and drizzle with remaining 2 teaspoons of olive oil. You should end up with 6-8 kabobs, depending on the size of your skewers.
