Fresh snapper is paired with a delectable sweet-sour sauce and a lively parsley salad in this speedy supper inspired by the Saudi Arabian dish samak bil sabbar.

1/2 cup tamarind paste
2 cups hot water
2 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
6 cloves garlic, minced
1 large tomato, diced
3 teaspoons sugar
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
Kosher salt and freshly ground pepper
3 tablespoons unsalted butter
4 flaky white fish fillets (6 ounces each), such as red snapper
Gulf-Style Parsley Salad

Steps:

  • Place tamarind in a medium bowl and cover with hot water. Let soak for 15 minutes; mash tamarind. Strain through a sieve, pressing on solids and scraping the bottom of the sieve to remove pulp. Discard the seeds and set strained liquid aside.
  • Heat oil in a large saute pan over medium-high. Add onion and garlic and cook, stirring often, until golden, 5 to 8 minutes. Stir in tomato, sugar, coriander, cumin, cinnamon, 1/2 teaspoon salt, 1/2 teaspoon pepper, and reserved tamarind liquid. Simmer for 20 minutes, stirring occasionally, until sauce is thickened. Add more water if sauce becomes too dry. Stir in 1 tablespoon butter and season with salt and pepper; keep sauce warm.
  • Season fish with salt and pepper. Melt remaining 2 tablespoons butter in a large nonstick skillet over medium-high heat. Sear fish skin-side down, turning once, until cooked through, 2 to 3 minutes per side. Spoon sauce over fish and serve with parsley salad.

1 teaspoon mustard seeds (black or yellow)
2 dried red chilies
2 tablespoons tamarind paste
1/2 cup warm water
1 tablespoon olive oil
2 onions, sliced
2 garlic cloves, minced
2 teaspoons grated ginger
2 teaspoons curry powder
salt
1 lb salmon fillet, cut into 4 pieces

Steps:

  • Grind mustard seeds and chilies in a spice grinder and set aside.
  • Combine tamarind paste and warm water in a small bow and mash together to make a brown liquid. Strain through a sieve to remove solids. Toss solids, retain liquid.
  • Heat oil in large skillet over medium heat. saute onion and garlic for 5 minutes. Add ginger, saute for 2 more minutes. Add curry powder and mustard-chili mixture. Saute 1 minute. Add tamarind water and a dash of salt. Add fish. Simmer 10 minutes or so until the fish is cooked.

TAMARIND-GINGER DIPPING SAUCE

1 tablespoon canola or other neutral oil
2 tablespoons peeled and minced fresh ginger
1 large clove garlic, finely minced
6 tablespoons Tamarind Liquid (page 319)
2/3 cup water
3 to 4 tablespoons sugar
4 to 5 tablespoons fish sauce
2 or 3 Thai or serrano chiles, thinly sliced (optional)

Steps:

  • In a small saucepan, heat the oil over medium heat. Add the ginger and garlic and cook, stirring, until fragrant, about 30 seconds. Whisk in the tamarind liquid and water. When the mixture comes to a boil, remove from the heat.
  • Whisk in the sugar and fish sauce, starting out with the smaller amounts. Taste and add additional sugar or fish sauce to create a tart, spicy, sweet, savory sauce. Set aside, uncovered, to cool to room temperature and to let the flavors bloom.
  • Before serving, taste again and adjust the flavor balance a final time. Transfer to a serving bowl or divide the sauce among individual dipping sauce bowls. If all the diners like chile heat, add the chile slices to the bowl(s). If not, serve the chile slices on the side for diners to add as desired.

1 (1-inch) piece ginger, peeled and cut into matchsticks
2 cloves garlic, thinly sliced
6 scallions, sliced
4 (6-ounce) firm white fish fillets (such as striped bass or halibut)
Kosher salt and freshly ground pepper
4 teaspoons toasted sesame oil
Pinch of sugar
1 to 2 tablespoons soy sauce
2 tablespoons Chinese rice wine or dry sherry
1/3 pound snow peas, trimmed
2 tablespoons peanut or vegetable oil

Steps:

  • Set a large bamboo or metal steamer basket over a skillet of simmering water over medium heat.
  • Crush the ginger slices with the flat side of a knife. Place the garlic and half each of the ginger and scallions on a plate that will fit inside the steamer. Score the fish skin a few times with a knife; season with salt and pepper. Place the fish skin-side up on the plate, drizzle with 2 teaspoons sesame oil and sprinkle with the sugar. Put the plate in the steamer. Mix the soy sauce and rice wine and pour over the fish.
  • Cover and steam the fish until just cooked through, 6 to 12 minutes, depending on the thickness. Carefully remove the hot plate. Add the snow peas to the steamer, season with salt, cover and cook until bright green, 1 to 2 minutes.
  • Transfer the fish to a platter, spoon the juices on top and sprinkle with the remaining scallions. Heat the remaining 2 teaspoons sesame oil and the peanut oil in a skillet over high heat. Add the remaining ginger and cook until it begins to brown. Pour the hot oil over the fish.

6 garlic cloves
1 red chilli , roughly chopped (deseeded if you don't like it too hot)
thumb-sized piece ginger , peeled and roughly chopped
1 tsp turmeric
1 tbsp ground coriander
1 tbsp rapeseed oil
2 tsp cumin seed
1 tsp fennel seed
2 x 400g cans chopped tomatoes
200g green bean , trimmed and halved
1 tbsp tamarind paste
4 firm white fish fillets (we used hake)
handful coriander leaves, roughly chopped
cooked basmati rice , to serve

Steps:

  • Blitz together the garlic, chilli, ginger, turmeric and ground coriander with 3 tbsp water. Heat the oil in a large pan and toast the cumin and fennel seeds, letting them sizzle until aromatic. Add the ginger paste and fry for 3 mins.
  • Empty the tomatoes into the spice pan, plus a can of water. Add the beans, bring to the boil, then turn down the heat and simmer for 5 mins. Stir in the tamarind paste. Add the fish fillets, generously season with ground black pepper, cover and simmer for 10 mins. Take off the lid, carefully turn the fillets, then bubble the sauce until the fish is cooked through and the sauce is thick. Sprinkle over the coriander leaves and serve with rice.

5 in fresh gingerroot, peeled and grated
4 tablespoons lime juice or 4 tablespoons rice vinegar
3 tablespoons fish sauce or 3 tablespoons soy sauce

1 tablespoon soft brown sugar

Steps:

  • The marinade- Put the ginger in a fine sieve, or a sieve lined with muslin, and press the juice into a bowl.
  • You need to extract 7 tbs ginger juice - add a little water to the ginger pulp and squeeze again if necessary. Add the remaining ingredients, except the sugar, and stir to mix.
  • Put the meat or seafood in a non-metallic shallow dish and rub the marinade all over. For meat, cover and leave in the fridge for at least 4 hours or overnight. Fish and shrimp only need marinating for up to 30 minutes in the refrigerator.
  • Remember to give the marinated food at least 20 minutes to return to room temperature before cooking.
  • To cook- While cooking the food, season and baste it with the marinade. Before brushing the final few strokes on, add the sugar and stir to dissolve; this helps glaze the food, but if the sugar is added too soon, it will burn and stick.
