MARY'S BAKED FRUIT
Steps:
- In a greased 13-in. x 9-in. baking pan, starting at the 9-in. end, arrange rows of fruit in the following order: half of the apricots, pears and plums, all of the peaches, then remaining apricots, pears and plums. , Drain pineapple, reserving 1/2 cup of juice. Lay pineapple over fruit in pan. In a saucepan, combine the pineapple juice, brown sugar, butter, cinnamon and cloves. Cook and stir until sugar is dissolved and butter is melted. Pour over fruit. , Bake, uncovered, at 350° for 20-25 minutes or until heated through.

BAKED FRUIT SLICE
An easy, healthy and delicious fruit slice that's great for the lunchbox or with a cuppa ! I use a mix of sultanas, currants and raisins for the dried fruit but you could add any other dried fruits.

Steps:
- Preheat oven to 190C and line a 28cm x 18cm pan with baking paper.
- Melt butter in a large saucepan.
- Add brown sugar and stir until dissolved.
- Remove from heat and allow to cool slightly.
- Add egg, fruit, sifted flour and spice and mix well.
- Press into pan and bake for 20 minutes.
- The slice should be soft and chewy rather than crisp.
- Allow to cool and then cut into squares.

- Preheat oven to 425*F Using a food processor, combine vanilla pod and sugar.
- Wash fruit.
- Halve and remove pits from plums, nectarines, peaches and apricots, if using, and peel bananas and cut into chunks.
- Place fruit in a single layer on baking sheet (s).
- Sprinkle with about 1/2 cup of vanilla sugar.
- (Store leftover vanilla sugar in an airtight container.) Bake fruit 10-15 minutes, or until fruit is soft but still holds its shape.
- Serves 8-10.

EASY PASSIONFRUIT SLICE / BARS
Super easy slice to prepare...no electric mixer required. Found in an old magazine at work. This slice works equally well using regular wheat flour or ga blended gluten-free flour mix. My photos are showing the gluten-free version- use gf flour and the slice is gluten-free suitable. This recipe uses a standard size tin of condensed milk and passionfruit pulp in syrup, so there is no wastage

Steps:
- Preheat oven to 180°C or 160°C if using a fan-forced oven. Line a 22cm square pan or a slice tin.
- Combine all ingredients for the slice base and press into the prepared pan.
- Bake 12-15 minutes. Remove from oven and allow to cool in the pan for 15 minutes. The base is still soft while hot, but will harden as it cools. The base will be light in colour.
- Using a bowl, combine the can of condensed milk and the passionfruit pulp.
- Spread the passionfruit mixture over the slice base and return to the oven for about 12 minutes, or until the topping is just firm to the touch.
- Remove from oven, allow to cool 15 minutes and then chill until set.
- Cut into squares to serve.
