Categories     Fish

Time 15m

Number Of Ingredients 11

4 boneless, skinless sole fillets (3-4 oz each)
1/2 teaspoon salt, plus more to taste
1/4 teaspoon freshly ground black pepper, plus more to taste
1/2 cup all-purpose flour, for dredging
2 tablespoons vegetable oil
3 tablespoons unsalted butter
Lemon wedges, for serving
1/4 cup unsalted butter, cut into 4 pieces
2 1/2 tablespoons chopped fresh Italian flat leaf parsley

  • Pat fish dry. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Dredge in flour, and knock off excess. Set aside.
  • Heat oil and butter for the fish in a 12-inch heavy skillet over medium-high heat until foam subsides. Add fish and cook, turning halfway through, until browned and cooked through. This will take about 2-3 minutes total. Do not overcook.
  • Transfer fish to a plate. Discard fat from skillet and reduce heat to medium-low.
  • Add butter, and cook until browned, about 3-5 minutes. Remove skillet from heat and add parsley, lemon juice, and lemon zest. Stir to combine.
  • Pour sauce over fish. Serve with lemon wedges.

FISH IN BUTTER SAUCE (FISH MEUNIèRE)

Fish in Butter Sauce (Fish Meunière) image

Julia Child made this classic French dish famous with her Sole Meunière. This easy fish meunière (fish in butter sauce) is seared in butter and oil, and served with a lemon and butter sauce.

Categories     Main Course

Time 10m

Number Of Ingredients 9

2 mild white fish fillets, such as flounder, Dover sole, cod, or halibut
1 tablespoon flour
pinch salt, pepper
1 tablespoon olive oil
2 1/2 tablespoons butter, divided
1/2 cup white wine (Substitute white wine or rice wine vinegar if needed)
1 lemon, juiced, plus 1 more lemon to char (optional)
1 tablespoon capers (optional)
Handful fresh herbs (parsley, chives, basil, cilantro etc)

Steps:

  • Pat fillets dry. Dust with flour, and shake off any excess. Sprinkle them on both sides with salt and pepper.
  • Prepare a heavy pan with the olive oil and 1 TB butter. Heat on medium-high until butter is melted but not browned, then turn the heat down to medium.
  • Place the fillets in the pan and cook 2-4 minutes. Don't touch the fillets until they're ready to flip.Note: Thin fillets like flounder will need to cook approx. 2 minutes per side, Dover sole 2-3 min per side, cod + halibut 4 min per side.
  • Use a thin metal spatula to test the fish. If you can slide the spatula under the fish without the fish sticking to the pan, it's ready to flip. If the fillets won't release- give them another 30 seconds. They'll release when they've finished cooking.
  • Cook fish another 2-4 minutes until done.(See note above for cook time.)
  • Divide the 1 TB butter over both fillets. Transfer the fish to plates, leaving the excess butter in the pan. Cover fish to keep warm, or set fish in a 200ºF oven.
  • Reduce heat to medium. Add the wine to the pan, and allow it to reduce for about a minute. Add the remaining butter and lemon juice and stir with a wooden spoon. Add half the herbs and stir again.
  • Optionally, cut remaining lemon in half. Turn heat to high, and set lemon cut-side down on the hot pan. Char 2-3 minutes until the cut side is charred.
  • Serve fish hot with pan sauce, remaining herbs, and optional capers and lemons.

FISH MEUNIERE WITH CAPERS

Fish Meuniere With Capers image

This is from the America's Test Kitchen Cookbook, 2006 edition. This kind of made me think of chicken piccata, only made with fish. Use a flatfish, like sole or flounder for best results.

Provided by IngridH

Categories     Egg Free

Time 20m

Yield 4 serving(s)

Number Of Ingredients 10

1/2 cup all-purpose flour
4 sole fillets or 4 flounder fillets, 3/8 inch thick, patted dry
salt
pepper
2 tablespoons vegetable oil
2 tablespoons unsalted butter, cut into 2 pieces
4 tablespoons unsalted butter, cut into 4 pieces
1 tablespoon fresh parsley, chopped
1 1/2 tablespoons lemon juice, fresh
2 tablespoons capers, rinsed

Steps:

  • For the fish: Set oven to 200 degrees, and place a heatproof plate in the oven.
  • Place flour in a baking dish. Season dry fish fillets with salt and pepper, set aside for 5 minutes or until moisture shows on the surface.
  • Coat fish with flour, shake off any excess, and set aside on a baking sheet.
  • In a large (12 inch) non-stick skillet, heat 1 tablespoon of the oil over high heat until shimmering.
  • Add 1 tablespoon of butter and swirl to coat the bottom of the pan. Add two fillets skin side up, to the skillet, and reduce heat to medium high. Cook the fish without distubing it, about 3 minutes, or until the edges are opaque and the bottom is golden.
  • Carefully flip the fish (you may need two spatulas to do this without breaking it), and continue to cook for another two minutes or until the thickest part flakes when a toothpick is inserted.
  • Transfer the fish to the oven to keep warm while you cook the remaining fillets.
  • Wipe the pan clean, and repeat steps 6 through 11 with the other two fillets.
  • For the browned butter: Heat remaining 2 tablespoons butter in a stainless steel skillet over medium high heat until the butter melts.
  • Continue to cook, swirling the pan, until the butter is golden brown and smells nutty, about 1 - 1 1/2 minutes more. Remove from heat.
  • To serve: Remove fish from the oven and sprinkle with parsley. Add the lemon juice and capers to the browned butter, swirl to combine. Taste butter sauce, add salt or pepper to taste. Spoon the butter sauce over the fish, and serve immediately.

RED FISH MEUNIERE PECAN

Red Fish Meuniere Pecan image

This is my favorite Meuniere sauce recipe. You saw many a different variation of this sauce paired with different fish and sometimes even steak down in New Orleans. It's a variation of the basic brown butter sauce, but done in a french/creole fashion. Very simple and delicious! You can leave out the pecans if they don't tickle your fancy, it's just as good.

Provided by graniteangel

Categories     Trout

Time 25m

Yield 4 serving(s)

Number Of Ingredients 12

24 ounces red fish fillets
1/4 cup cornflour
1/2 cup white flour
2 teaspoons creole seasoning
1/2 teaspoon white pepper
1 tablespoon olive oil
3 tablespoons unsalted butter
1 tablespoon fresh lemon juice
1 tablespoon fresh parsley
1/2 teaspoon Worcestershire sauce
kosher salt
2 tablespoons toasted pecan pieces

Steps:

  • Combine corn flower, white flour, creole seasoning, and white pepper together in a bowl or dish.
  • Heat olive oil and one tablespoon butter in large frying pan on Med heat.
  • Dredge red fish (can sub trout) in seasoned flour mixture, making sure to tap extra flour off before placing in hot pan. Turn heat to Med-High and let cook for about 3-4 minutes on each side, lightly shaking the pan by the handle over the heat for the first minute to avoid the fish from sticking (and again when you flip over).
  • Once fish is done remove and place on a plate or serving dish.
  • Immediately add butter, lemon juice, parsley, Worcestershire and sprinkle of salt to hot pan. Let butter melt and the sauce start to bubble, will turn a very light brownish color. Remove pan from heat and pour the butter/meuniere sauce over fillets.
  • Sprinkle fillets with toasted pecan pieces.
  • Serve with rice and veggies. I like to garnish with thin lemon wedges and fresh parsley.
