This is a Filipino fish soup with vegetables cooked in sour broth.

2 lbs fish (sliced (as needed))
40 g Knorr Sinigang sa Sampaloc Mix (Original)
2 pieces tomato (cubed)
1 cup Daikon radish (sliced)
1 piece onion (wedged)
3 cups spinach
10 pieces okra
2 pieces eggplant (sliced)
2 pieces long green pepper
2 quarts water
2 cup cooking oil
1 ½ tablespoons salt
Fish sauce and ground black pepper to taste

Steps:

  • Slice the fish as needed. Sprinkle salt all over the fish slices and then rub all over. Let it stay for at least 15 minutes.
  • Heat oil in a pan. Fry the fish slices until golden brown. Turn it over and perform the same step on the opposite side. Remove fish from the pan. Place in a clean plate. Set aside.
  • Boil water in a large cooking pot. Add tomato, onion, and radish. Continue boiling for 5 minutes.
  • Add Knorr Sinigang sa Sampaloc Mix. Stir.
  • Put the fried fish slices into the pot. Let the liquid boil. Adjust the heat between low to medium. Continue boiling for 7 minutes.
  • Add eggplant and long green peppers. Cook for 3 minutes.
  • Add okra. Cook for 3 to 5 minutes.
  • Season with ground black pepper and fish sauce.
  • Put the fresh spinach into the pot. Cook for 1 to 2 minutes.
  • Transfer to a serving bowl. Serve warm. Share and enjoy!

1 liter water
3 pieces tomatoes (- cut into quarters)
1 medium onion (- cut int quarter)
1 thumb ginger (- cut into 4-5 slices)
1 medium white radish (- cut into thin diagonal slices)
5 pieces yardlong beans (- ends trimmed and cut into 3-inch pieces)
1 piece Salmon head (- gills removed, cleaned and cut into half)
1 medium eggplant (- cut into 1-inch diagonal pieces)
5 pieces okra
3 pieces green chili peppers
1 packet Tamarind soup mix (- for 1-liter pack)
1 tablespoon fish sauce
1 bunch water spinach (Kangkong) (- hard part of the stalks trimmed)

Steps:

  • In a pot over high heat, bring 1 liter of water to boil.
  • Add tomatoes, onion, ginger, yardlong beans, and white radish. Lower heat to medium and cover pot with lid. Simmer for 5 minutes or until white radish is just half cooked.
  • Add the Salmon head, eggplant, okra, and green chili peppers. Pour in tamarind mix and fish sauce and gently stir to avoid breaking the fish into pieces. Simmer for 5 minutes or until fish is cooked
  • Add the water spinach (Kangkong) and cook for a few seconds then turn off the heat.
  • Transfer content to a serving soup dish and serve with steamed rice.

A very simple and quick Filipino dish. This is a sour broth soup with tilapia fish fillets. The flavor is sour but it actually enhances your appetite. This is considered comfort food in my house.

½ pound tilapia fillets, cut into chunks
1 small head bok choy, chopped
2 medium tomatoes, cut into chunks
1 cup thinly sliced daikon radish
¼ cup tamarind paste
3 cups water
2 dried red chile peppers

Steps:

  • In a medium pot, combine the tilapia, bok choy, tomatoes and radish. Stir together the tamarind paste and water; pour into the pot. Toss in the chili peppers if using. Bring to a boil, and cook for 5 minutes, or just until the fish is cooked through. Even frozen fish will cook in less than 10 minutes. Do not over cook or else the fish will fall apart. Ladle into bowls to serve.
