Amazing Fruit/Lettuce Salad image

I made this and took it to a party last weekend and is it ever knock your socks off good! To make it I chopped the lettuce up and put into one bowl and mixed the fruit and put into another bowl and refrigerated until time to serve. Just mix it all together and add the dressing and stand back! There weren't any leftovers. I'm just guessing on the servings because I didn't count. LOL! It makes a ton though!

1 head iceberg lettuce, chopped (not bagged)
1 cup blueberries, washed
1 pint strawberry, cleaned and sliced
16 ounces pineapple tidbits, drained well
15 ounces mandarin oranges, drained well
3/4 cup chopped pecans, toasted
1 (16 ounce) bottle poppy seed dressing

Steps:

  • Mix it all together and add dressing.
  • Serve!

1 head iceberg lettuce
2 (8 ounce) packages cream cheese, softened
1/3 cup crumbled blue cheese
1/4 cup mayonnaise
2 tablespoons finely chopped green peppers
2 tablespoons finely chopped red onions
2 tablespoons chopped fresh chives
2 tablespoons chopped walnuts
1 teaspoon Worcestershire sauce

Steps:

  • Core lettuce and hollow out the center, leaving a shell 1 1/2" thick.
  • Wash and allow to drain well.
  • Beat cream cheese, blue cheese, and mayo.
  • Add green pepper,onion, chives, walnuts and worchestershire sauce.
  • Add a few grinds of ground pepper.
  • Pack into lettuce shell.
  • Wrap in wet paper towels, then foil.
  • Chill at least two hours.
  • Cut into wedges and serve.

1/2 cup extra-virgin olive oil, eyeball it
1 teaspoon garlic powder

Steps:

  • Combine lettuce and chopped veggies in salad bowl.
  • Add all of the dressing ingredients into a blender. Put the top in place and blend on high until dressing is combined. Pour dressing over salad and toss. Adjust salt and pepper, to taste.

6 ounces crumbled blue cheese, at room temperature
1/3 cup vegetable oil
2/3 cup mayonnaise
2 tablespoons white wine vinegar
1 tablespoon hot sauce, such as Crystal or Louisiana, plus more if desired
Kosher salt and freshly cracked black pepper
1 head iceberg lettuce, cut into quarters through the equator (circular slices)
1 cup cherry tomatoes, cut into quarters
6 slices cooked bacon, crumbled or chopped into pieces
1/4 cup thinly sliced chives

Steps:

  • For the dressing: In a medium bowl, whisk together the blue cheese, oil, mayonnaise, vinegar and hot sauce. Season with salt and pepper and add more hot sauce if preferred. Set aside.
  • For the salad: Divide the lettuce rounds among 4 plates. Pour 1/2 cup of the dressing over each. Top each with one-quarter of the tomatoes and bacon. Sprinkle some chives on top. Serve immediately.

1/8 teaspoon curry powder
1/2 cup shredded cheddar cheese

1 tablespoon diced pimientos
1/4 cup salad dressing of your choice

Steps:

  • Remove and discard core from lettuce. Place lettuce core side down and cut in half with a plastic lettuce knife from top to bottom (save one half for another use). With knife, remove enough leaves from the center of the cut side of lettuce to create a 2-in. circle, about 1-1/4 in. deep., In a bowl, combine mayonnaise and curry powder. 1 large head iceberg lettuce, shredded
¼ cup sliced onion
¼ cup thinly sliced celery
1 (8 ounce) can water chestnuts, drained and sliced
1 (10 ounce) package frozen peas
1 cup mayonnaise, or to taste
1 tablespoon white sugar
2 tablespoons grated Romano or Parmesan cheese
4 tomatoes, cut into wedges
2 hard-cooked eggs, sliced
1 tablespoon chopped fresh parsley for garnish

Steps:

  • Spread the lettuce out on a large serving dish or bowl. Sprinkle the onion, celery, water chestnuts and frozen peas (unthawed) over the lettuce in layers. Spread mayonnaise over the top like a frosting. Sprinkle with sugar and grated cheese. Cover and refrigerate overnight.
  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
  • Before serving, sprinkle crumbled bacon over the top, and garnish with tomato wedges, slices of hard-cooked egg, and parsley.

3 tablespoons light mayonnaise
2 teaspoons balsamic vinegar
1/4 teaspoon dried basil
1/2 cup celery, diced
2 green onions, chopped
1 1/2 cups 2% fat cottage cheese
4 large tomatoes, freshly harvested, vine ripened
salt and pepper (I like a touch of cayenne pepper)
romaine lettuce leaf (inside leaves)

Steps:

  • Cook bacon until crisp; drain, crumble bacon and set aside.
  • In a bowl combine mayonnaise, vinegar, basil, crisp bacon and a dash of cayenne pepper.
  • In another bowl, stir together celery, green onion and cottage cheese.
  • Add bacon mixture.
  • Cover and let stand for one hour in refrigerator.

  • Cut stem ends from tomatoes.

1 (3 ounce) package cream cheese
2 tablespoons blue cheese
2 tablespoons grated carrots
1 tablespoon minced green pepper

Steps:

  • Wash lettuce; remove core.
  • With a tablespoon, remove enough of the lettuce around core to leave a cavity 2 to 3 in diameter.

4 hardboiled egg, sliced
1 (10 ounce) package frozen peas, thawed
1/2 cup diced green pepper
1 medium sweet onion, chopped

2 tablespoons sugar
4 ounces grated cheddar cheese

Steps:

  • Tear the cleaned crisp lettuce into small bite sized pieces and place in the bottom of 9x12 inch cake pan.
  • Layer the rest of the ingredients in the order given, do not cook peas.
  • Add the sugar to the mayonnaise and spread over the top as you would frosting.
  • Top with grated cheese.
