Number Of Ingredients 14

4 pound(s) beef flank steak - 1 pound per steak ( if needed, ask your meat man to cut for you )
1/4 cup(s) fresh squeezed lemon juice
2 tablespoon(s) soy sauce - dark
1 teaspoon(s) cumin
1 teaspoon(s) fennel seeds - crushed
3 tablespoon(s) fresh cilantro - chopped - divided
2 teaspoon(s) extra virgin oil
6 clove(s) garlic - minced
2 cup(s) tomatillos - chopped
1/2 cup(s) gooseberries - stems removed and chopped
2 large roasted chipotle peppers - seeded, and finely chopped
1/2 cup(s) red onion - chopped
1 tablespoon(s) lemon zest
1/2 teaspoon(s) course sea salt - or to taste

Steps:

  • Place meat in a large plastic bag. ( You can use an Oven Bag, as for " Turkey " ) Prepare the marinade by stirring together lemon juice, soy sauce, cumin, fennel seeds, 1 chipotle pepper, 1 tablespoon cilantro, oil, and 3 garlic. Pour over steak in bag, close the bag. Marinate in the refrigerator for 6 hours, turning bag over about every 2 hours.
  • Chipotle-Tomatillo Salsa, stir together tomatillos, 1 chipotle pepper, gooseberries, red onion, the lemon zest, 1 tablespoon lemon juice, 1 tablespoon cilantro, 3 cloves garlic, and salt. Cover and refrigerator for 4 hours.
  • Drain steak, reserving marinade. Grill steak on the grill directly over hot coals for 6 to 7 minutes per side, or to desired doneness, when You turn steak over baste by brushing with reserved marinade.
  • NOTE: *** Once done with basting on the second side during grilling, *** MAKE SURE YOU DISCARD any reserved marinade. *** DO NOT EAT ***
  • Serve with the Salsa and a nice Crusty bread ENJOY !!!

Another great recipe my brothers & I grew up on... The outside gets a little but crispy and seals in the succulent juices inside - yum! It's as delicious the next few days as it is hot off the grill - make a bunch, store in a ziplock in the fridge & snack for days!

1 (8 ounce) can beef broth (bouillon)
1 bunch green onion, chopped
3 tablespoons lemon juice
3 tablespoons brown sugar
1/3 cup soy sauce
2 tablespoons Lawry's Seasoned Salt
1 -2 lb flank steak

Steps:

  • Combine all ingredients in ziplock bag or possibly glass dish.
  • Marinate steak overnight for best flavor.
  • Grill on barbecue (best) or possibly broil to taste - I usually eat steaks med rare but I find this tastes best med/med well (very slightly pink in the middle).
  • Slice thin against grain.

2 pound(s) stewing beef - coursely chopped
2 pound(s) rib eye steak - coursely chopped
3 tablespoon(s) butter - room temperature
4 tablespoon(s) seasoned flour - made with the fennel seeds and thyme
2 teaspoon(s) fennel seeds - crushred
2 teaspoon(s) fresh thyme - coursely chopped
4 tablespoon(s) worcestershire sauce
1/2 teaspoon(s) crushed red pepper flakes - or to taste
2 large white onion - coursely chopped
3 large carrots - coursely chopped
3 large turnip - coursely chopped
3 large parsnips - coursely chopped
14 large button mushrooms - cut in half
1 teaspoon(s) course sea salt or to taste
1 teaspoon(s) fresh cracked black pepper or to taste
1/2 gallon cold water
4 - beef bouillon cubes
- small srings of rosemary for garnish

Steps:

  • Ask your meat man to cut up beef for stew. ( I use a good Flank Steak, cooking time allows to get tender. ) Roll pieces of stew meat and rib eye in the seasoned flour. Place Floured meat in a hot Skillet with the butter and allow to brown.
  • Add the chopped onion, carrots, red pepper flakes, and turnips. Add the Worcestershire sauce, Cook on medium until softened. Place the browned meat into a Large Dutch Oven, add the vegetables and cook till they are softened.
  • Dissolve beef bouillon cubes in water. Pour the bouillon/water mixture in with the stew/ stew. Add Mushrooms to Dutch Oven. Season with salt and pepper.
  • Slow cook in oven at 295 degrees, and until beef is tender for 2 to 3 hours. Stir every 20 to 30 minutes and keep enough water to keep the gravy to your liking.
  • Serve with a Potato Bread. Garnish with srings of rosemary. Enjoy !!!

1/3 cup Bourbon
1/3 cup soy sauce
3 tablespoons sweet vermouth
2 tablespoons light brown sugar
2 tablespoons peeled finely chopped fresh ginger
1 scallion, chopped, white and green parts
2 garlic cloves, chopped
1 1/2 lbs flank steaks

Steps:

  • Whisk the bourbon, soy sauce, sweet vermouth, brown sugar, ginger, scallion, and garlic together in a bowl to dissolve the sugar.
  • Pour into a large self-locking plastic bag and add the steak.
  • Close the bag and refrigerate for at least 4 hours and up to 8 hours.
  • Remove from the refrigerator 1 hour before grilling.
  • Build a hot fire for direct grilling in an outdoor grill.
  • For a charcoal grill, let the coals burn until they are covered with white ash.
  • For a gas grill, preheat the grill on high.
  • Lightly oil the cooking grate.
  • Remove the steak from the marinade.
  • Place on the grill and cover the grill.
  • Grill until the underside is well browned, about 3 minutes.
  • Turn and grill until an instant read thermometer inserted in the thickest part of the steak reads 130° for med-rare steak, about 3 minutes.
  • Transfer to a carving board and let stand for 5 minutes.
  • Holding a sharp carving knife on a slight diagonal, thinly carve the steak across the grain.
  • Serve hot, with carving juices.

This is a favorite of mine that I found in the Eating For Life Cookbook. This cookbook is a helpful tool when participating in the Body For Life program. Keep in mind that the Body For Life program equates a protein portion to the size of your palm, so the portion size maybe small for someone not participating in this program. I absolutely love this recipe because it doesn't taste like it would be healthy, but it is.

1/3 cup light soy sauce (I use the low sodium one)
1 tablespoon balsamic vinegar
1 tablespoon olive oil
4 minced garlic cloves
1 teaspoon ground ginger
1/2 teaspoon ground black pepper
1 (1 1/2 lb) flank steaks

Steps:

  • Combine first 6 ingredients in a small bowl.
  • Pierce both sides of the flank steak with a fork.
  • Place steak and mixed ingredients into a large size Ziploc bag.
  • Refrigerate 4 hours minimum, but overnight for the best flavor.
  • Preheat broiler or grill. (I have never grilled this steak, but I am sure it would be excellent grilled.)
  • Place broiler pan in oven for one minute.
  • Place the marinaded steak on the heated broiler pan.
  • Broil in oven on top rack for about 6 minutes per side for medium-well doneness.
  • Let steak cool for a few minutes and then slice across the grain into very thin slices( 1/8" approx.).

1/4 cup Dijon mustard
4 teaspoons Worcestershire sauce
1/2 teaspoon kosher salt

1 1/2 lbs flank steaks, trimmed of fat and sinew

Steps:

  • Combine bourbon, mustard, Worcestershire, salt, and pepper in a shallow nonreactive dish and mix well.
  • Place steak in a shallow dish and rub marinade all over, coating it well.
  • Allow to marinate at room temperature for 30 minutes.

I don't know where I picked this up. I've been doing it since I first started cooking, and it's just a great flavor for steaks. I'd suggest at least a nights worth of soaking if you have the time to. The main flavor in this marinade is the Italian mixed with the Worcestershire.

2 1/2 cups Italian dressing
3 tablespoons Worcestershire sauce
minced onion (or onion powder) (optional)
garlic powder (optional)
seasoning salt (optional)
pepper (optional)

Steps:

  • This recipe is best if you beat the steaks and stab it a few times with a fork so the juice can soak into the meat.
  • Mix Italian dressing and Worcestershire sauce. This is the main thing--if you would like to add more or less of either, just make sure the Worcestershire isn't overpowering the Italian dressing.
  • Add minced onion, garlic powder, seasoned salt and pepper to tastes. I usually use at least a shake or two from each bottle, a little lighter on the salt and pepper then the other two, but its not a science in the recipe, just go with your tastes.
  • Marinate!
