Sweet caramelized onions add great flavor to these rosemary-rubbed steaks. Serve them with baked potatoes and a Caesar salad. Or complement the entree with cooked carrot sticks and apple pie a la mode.

1 large onion, halved and sliced
2 tablespoons butter
1/3 cup white wine or chicken broth
1 garlic clove, minced
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
2 beef tenderloin steaks (1-1/2 to 2 inches thick and 8 ounces each)

Steps:

  • In a large skillet, cook onion in butter over medium heat for 15-20 minutes or until onion is golden brown, stirring frequently. Stir in wine and garlic. Bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until liquid has evaporated., Meanwhile, combine the rosemary, salt and pepper; rub over steaks. Broil 4 in. from the heat for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve with caramelized onions.

1 tablespoon soy sauce
1 teaspoon cornstarch
1/3 cup plus 2 tablespoons cold water
1 1/2 pound beef loin sirloin steak, cut crosswise into 3- by 1/4- by 1/4-inch strips
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup olive oil or vegetable oil
4 bell peppers in assorted colors, cut into 1/4-inch-thick strips
1 large onion, halved lengthwise and cut crosswise into 1/4-inch-thick slices
3 garlic cloves, sliced
Accompaniment: cooked white rice

Steps:

  • Stir together soy sauce, cornstarch, and 1/3 cup water in a cup.
  • Pat steak dry and sprinkle with salt and pepper. Heat 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. Stir-fry half of steak until browned but still pink inside, about 4 minutes. Transfer to a bowl with a slotted spoon and repeat with remaining steak, adding 1 tablespoon oil to skillet.
  • Add remaining tablespoon oil to skillet and stir-fry bell peppers, onion, and garlic, until onion is golden, 6 to 7 minutes. Stir in remaining 2 tablespoons water and cook, covered, 3 minutes. Return steak to skillet, then stir in cornstarch mixture. Bring to a boil and cook, stirring, 2 minutes.

½ cup Worcestershire sauce
2 tablespoons yellow mustard
1 pound top sirloin steak, cut into thin strips
1 cup uncooked long-grain white rice
2 cups water
1 tablespoon olive oil
½ cup chopped sweet onion
2 cloves garlic, peeled and chopped
1 teaspoon pepper

Steps:

  • In a medium container, mix Worcestershire sauce and mustard. Place steak strips in the mixture. Cover, and marinate in the refrigerator at least 30 minutes.
  • Place rice and water in a medium saucepan, and bring to a boil. Reduce heat, cover, and cook 20 minutes.
  • Heat olive oil in a medium saucepan over medium heat. Stir in the onion and garlic, and cook until tender. Season with pepper. Place steak into the saucepan and cook 5 to 7 minutes on each side, to desired doneness. Discard remaining marinade. Serve over the cooked rice.

Dad's minute steak with golden onions image

5 tbsp red wine
2 tbsp soy sauce
1 tbsp Dijon mustard
1 tsp light muscovado sugar
450g minute or sandwich steak , cut into strips
1 tbsp olive oil
1 large onion , thinly sliced
4 thick slices of bread (choose Dad's favourite, either white or brown)
50g garlic butter
watercress , to serve

Steps:

  • Mix the wine, soy sauce, mustard and sugar in a big bowl. Toss in the steak strips, season well with pepper and leave to sit and soak while you get everything else ready.
  • Pour the oil into a large frying pan and heat it up over a medium heat for a minute or so. Tip in the onion slices, turn the heat up to very high and cook for 3-4 minutes, stirring often to get the onions really golden brown. Take the onions out and keep them warm.
  • Lift the steak strips out of the marinade with a slotted spoon and stir fry them in the onion pan over a very high heat for 30 seconds (do it in two batches if it's easier). Pour in the marinade from the bowl and boil for a few seconds until it sticks to the meat but is still juicy. Season with salt and pepper and keep warm.
  • Toast the bread and then spread with the garlic butter and cut each slice in half. Overlap two pieces of toast on each plate, top with a spoonful of onions, then the steak and more onions. Put a little pile of watercress on each plate and serve straightaway.

Quick Skillet Steak with Onions and Mushrooms image

This easy weeknight steak dinner with onions and mushrooms takes about 15 minutes to make and is always a hit with my whole family.

1/2 lb thin sliced beef round or sirloin steaks
1/2 large onion (sliced into rings)
1/2 tsp olive oil
8 oz sliced mushrooms
4 olive oil spray
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt and fresh cracked pepper to taste

Steps:

  • Slice beef into thin strips. Season with salt, garlic powder and fresh pepper to taste.
  • Heat a large skillet over high heat. When the skillet is very hot, spray with cooking spray and add half of the beef.
  • Cook 1 minute, then turn steak and cook an additional 30 seconds.
  • Set aside in a large dish.
  • Spray the skillet again and when it gets hot add the remaining steak, cooking one minute, then turning and cooking 30 seconds more.
  • Add remaining steak to the dish.
  • Return skillet to heat and spray once again with cooking spray; add onions and season with salt and pepper.
  • Cook one minute, then turn and cook onions an additional 30 seconds or until onions are golden.
  • Lower heat to medium and add 1/2 tsp olive oil to the skillet, add mushrooms, salt and pepper and lightly spray the top of the mushrooms with oil.
  • Cook 1 1/2 minutes, then turn mushrooms and cook another minute and a half.
  • Add to dish with steak and onions and stir to combine.
  • Serve over rice.

2 tablespoons olive oil
2 large onions, sliced
1 boneless sirloin steak (about 2 pounds)

1/2 cup bourbon

Steps:

  • In a large skillet, melt 2 tablespoons of the butter with 1 tablespoon of the olive oil over medium heat. Add the onions and cook, stirring occasionally, until golden, about 15 minutes. Transfer the onions to a bowl and set aside.
  • Generously season both sides of the steak with salt and pepper. Add the remaining 1 tablespoon of the oil to the skillet and fry the steak over medium heat, turning once, until browned, about 6 minutes per side for medium. Transfer the steak to a serving platter and cover to keep warm.
  • Add the bourbon to the skillet and, over medium heat, scrape up any bits that cling to the pan. Allow the liquor to simmer until reduced by half, about 1 minute. Add the onions and the remaining 2 tablespoons of butter and stir until the butter is melted. Reduce the heat and gently simmer until the onions are heated through, about 2 minutes. Season, to taste, with salt and pepper and stir in any juices that have run off from the steak.
  • To serve, cut the steak into 1/4-inch-thick slices and top with the onions.

1 teaspoon ground coriander
Salt and freshly ground black pepper
4 strip steaks, about 8 ounces each
3 tablespoons olive oil
2 onions, sliced
2 cloves garlic, grated
1 tablespoon tomato paste
1/2 teaspoon crushed red pepper flakes
1/2 cup beef broth
1 tablespoon hot sauce
1 tablespoon Worcestershire sauce

Steps:

  • Mix together the paprika, chili powder, coriander, 1 teaspoon black pepper and 1 teaspoon salt in a small bowl. Sprinkle the steaks on both sides with the spice mixture. Refrigerate for 1 hour.
  • Heat the olive oil in a large skillet over medium-low heat. Add the onions and sprinkle with salt and pepper. Cook, stirring occasionally, until soft and slightly golden, 10 to 15 minutes. Add the garlic, tomato paste and pepper flakes, and cook for 2 minutes. Stir in the beef broth, hot sauce and Worcestershire. Cook until thickened, about 5 minutes. Keep warm.
  • Prepare a grill or grill pan for medium-high heat.
  • Grill the steaks for 3 to 4 minutes per side for medium rare. Let rest for 5 minutes. Serve topped with the onion sauce.

Steps:

  • Trim excess fat from meat. Cut meat into thin strips. Combine flour with salt, pepper, paprika, and mustard. Toss meat with seasoned flour. Melt ⅓ of the butter in a large heavy skillet. Add garlic; sauté until golden. Remove; set aside. Melt ⅓ more butter in the same skillet. Sauté the onions for 5 to 6 minutes. Remove; set aside. Heat remaining butter in the same large skillet. Sauté meat strips until browned; add the beef stock, onions, and garlic. Stir to dissolve browned bits in the bottom of the skillet. Simmer, uncovered, 10 to 15 minutes, until meat is tender and the mixture is thickened, stirring occasionally. Add tomato ketchup or paste, Worcestershire sauce and sour cream. Heat gently. Serve over egg noodles or rice. Sprinkle top with chives or parsley and a healthy dose of fresh ground black pepper, if desired. Notes: Always stir sour cream into a hot sauce or soup just before serving. Heat it gently and only until the mixture is warmed through. Allowing the mixture to boil may cause curdling. Milk products won't separate as easily in flour-based mixtures. This dish comes together rather quickly, and is so good! Beef strips simmered in a richly flavored sauce. 2 red, orange, or yellow bell peppers (stems, ribs, and seeds removed), thinly sliced lengthwise (3 cups)

2 cups minced fresh cilantro

1/2 cup plus 3 tablespoons olive oil, divided
1 beef flat iron steak or top sirloin steak (1-1/2 pounds)
1-1/2 cups all-purpose flour
3 tablespoons taco seasoning
Oil for deep-fat frying
12 slices Italian bread (1/2 inch thick)
Optional: Fresh arugula and sliced tomato

  • Cut onion into 1/4-in. slices; separate into rings. Place in a large bowl or shallow dish. Add buttermilk; turn to coat.   • Heat 2 T of oil in a large, heavy skillet over med-hi heat. Add the meat and sear for approximately 1 minute on each side or until just browned. Remove from the skillet with a slotted spoon and keep warm.
  • Add the remaining 1 T oil to the skillet and heat. Add the mushrooms, carrot, and onion and sauté until the mushrooms give up their juice, about 8 minutes.

1 green onion, chopped

1 egg
½ cup milk

½ cup beef broth
2 tablespoons all-purpose flour

Steps:

  • Combine bread crumbs, Parmesan cheese, and green onion in a container. Beat egg in a bowl until fluffy; add milk and whisk together. Dip steaks in egg batter and then in bread crumb mixture until coated and place on a plate.

  • In a large bowl or marinating dish whisk together marinade ingredients (chili sauce - ginger); add steaks, turn to coat. Let stand at room temperature for 15 minutes, turning occasionally.
  • In an oven-proof skillet (I used my heavy cast iron skillet), heat 1/2 tablespoon of the vegetable oil over medium high heat.
  • Scrape marinade off of steaks (reserving it in the bowl) and salt and pepper steaks. Add steaks to skillet and cook until browned (3-5 minutes). Turn steaks and transfer skillet to oven. Roast until cooked to desired doneness (5-10 minutes). Transfer steaks to a cutting board - let rest 10 minutes.
  • Meanwhile, in another skillet heat remaining oil (1 tablespoon) over medium high heat. Add onions and bell peppers and cook stirring until crisp-tender (3-5 minutes). Stir in green onions and remaining marinade. Bring to a boil and stir in cilantro.
  • Cut steaks in half cross-wise and divide among 4 plates, spooning vegetables over top of steaks.
