FIRECRACKER SHRIMP AND RICE

You're a mere twenty minutes and one skillet away from this all-in-one spicy-sweet shrimp dinner.

Number Of Ingredients 14

1/3 cup light brown sugar
3 tablespoons fresh orange juice
2 tablespoons hot sauce, such as Frank's
2 tablespoons rice vinegar
1/4 teaspoon crushed red pepper flakes, plus more for garnish
Kosher salt
1 1/4 pounds peeled and deveined small shrimp, tails removed
3 tablespoons cornstarch
1/4 cup vegetable oil
1 1/2 teaspoons grated fresh ginger
3 cloves garlic, grated
3 cups cooked basmati rice
1 bunch scallions, cut into 1/2-inch pieces
Sriracha and fresh cilantro leaves, for garnish

Steps:

  • Whisk together the brown sugar, orange juice, hot sauce, rice vinegar, red pepper flakes and 1/2 teaspoon salt in a medium bowl; set aside.
  • Dry the shrimp well with paper towels and add to a large bowl. Sprinkle the cornstarch over the shrimp and toss to coat.
  • Heat the oil in a large nonstick skillet over medium-high heat until shimmering. Fry the shrimp in the hot oil until pink, about 1 minute per side. Add the ginger and garlic. Cook, stirring, until fragrant, about 1 minute. Add the sauce mixture, rice and scallions and cook until warmed through, about 3 minutes.
  • Top with more red pepper flakes, a drizzle of sriracha and cilantro leaves.

This meal is not for the feint of heart, or the timid of tongues; Sriracha and red Fresno chile bring a heat that combusts with the sweet orange and choice crustaceans. Pop! (echo) Pop! Info 8 oz. Shrimp
¾ cup Jasmine Rice
4 oz. Mandarin Oranges in Juice
Info 3 fl. oz. Teriyaki Glaze
2 oz. Water Chestnuts
1 Red Fresno Chile
2 Green Onions
3 tsp. Sriracha

Steps:

  • Before You Cook If using any fresh produce, thoroughly rinse and pat dry Ingredient(s) used more than once: green onions Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Cook the Rice Bring a small pot with rice and 11/2 cups water to a boil over medium-high heat.Cover, reduce heat to low, and simmer until rice is tender, 18-20 minutes.Remove from burner.While rice cooks, prepare ingredients. 2 Prepare the Ingredients Trim and cut white portions of green onions into 1" lengths. Thinly slice green portions.Slice Fresno chile into thin rounds. Discard seeds if you prefer less spice. Be sure to wash hands and cutting board after prepping.Drain mandarin oranges and reserve juice.Pat shrimp dry. 3 Sear the Shrimp Place a medium non-stick pan over medium-high heat and add 2 tsp. olive oil. Add shrimp to hot pan and cook until browned, 1-2 minutes per side.Transfer shrimp to a plate. Shrimp will finish cooking in a later step.Reserve pan; no need to wipe clean. 4 Make the Sauce Return pan used to sear shrimp to medium-high heat and add 2 tsp. olive oil. Add white portions of green onions and water chestnuts. Stir often until lightly browned, 1-2 minutes.Add Fresno chile (to taste) and cook until fragrant, 30-60 seconds.Add reserved mandarin orange juice, teriyaki glaze, and Sriracha. (Add one Sriracha packet for "one pepper" spice, two for two, etc.) Bring to a boil. Return shrimp to pan and cook until shrimp reach a minimum internal temperature of 145 degrees, 1-2 minutes per side. 5 Finish the Dish Remove from burner.Gently stir in green portions of green onions and oranges.Plate dish as pictured on front of card. 1/4 teaspoon salt
1/4 teaspoon black pepper
1/4-1/2 teaspoon cayenne pepper
1 tablespoon olive oil
2 cloves garlic, minced
1 scallion, finely sliced
1 cup whipping cream
2 tablespoons chopped fresh parsley
3 tablespoons lemon juice
hot cooked rice or pasta

Steps:

  • Sprinkle shrimp with creole seasoning, salt, pepper and cayenne.
  • Cook shrimp in olive oil in a hot skillet just until pink and curled, about 3 minutes.
  • Add the garlic and green onions and cook until fragrant.
  • Stir in the whipping cream and cook until dish is warmed, stirring frequently.
  • Mix in parsley and lemon juice just before serving.
  • Serve over pasta or hot cooked rice, if desired.

24 jumbo shrimp, peeled and deveined
1 cup cornstarch
1 tablespoon garlic powder
1 ¼ teaspoons salt
1 teaspoon ground black pepper
½ cup canola oil
1 cup tupelo honey
1 tablespoon grated orange zest
2 tablespoons fresh lemon juice
¼ teaspoon cayenne pepper, or to taste

Steps:

  • Wash shrimp well and submerge in cold water in a bowl; set shrimp aside.
  • Place cornstarch, garlic powder, salt, and black pepper in a large plastic bowl with a tight-fitting lid, close the lid, and shake several times to mix. Place half the wet shrimp into the container, cover, and shake to coat shrimp with cornstarch mixture. Remove shrimp to a platter and repeat with remaining shrimp.
  • Heat canola oil in a large skillet over medium heat until the oil is hot and shimmering but not smoking. Tap excess cornstarch from the shrimp and pan-fry in batches until shrimp are opaque inside and brown and crisp outside, 2 to 3 minutes per side. Drain cooked shrimp on paper towels while you fry the remaining shrimp.
  • Clean skillet and pour in honey; bring to a boil over medium heat and stir in orange zest, lemon juice, and cayenne pepper. Serve hot shrimp on a serving platter drizzled with honey sauce to taste.

2 teaspoons sherry wine
1 teaspoon cornstarch
1/2 lb shrimp, cleaned
oil (for cooking)
1/2 cup drained canned mandarin orange segments
1/4 teaspoon sugar
1/4 teaspoon salt
boiled rice

Steps:

  • Mix sherry and cornstarch together.
  • Marinate shrimp in mixture 5 minutes.
  • Heat oil in wok or skillet, enough to cover bottom.
  • Stir-fry shrimp just until color changes.
  • Add mandarin orange segments, sugar, and salt.
  • Stir-fry until just until heated through, no more than 1 minute.
  • Serve with rice.
