SPICY SHRIMP FRIED RICE WITH BROCCOLI
Spice up this fried rice with shrimp and broccoli by adding ginger, jalapeno and chili oil.

Steps:
- Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop onto a plate.
- Add the shrimp to the skillet, season with 1/4 teaspoon salt and stir-fry until just cooked through, about 3 minutes. Transfer to a bowl. Add the remaining 1 tablespoon oil to the skillet, then add the broccoli, garlic, ginger, jalapeno, Shaoxing and 1/4 teaspoon salt and stir-fry until crisp-tender, 2 to 3 minutes.
- Add the rice, stirring to break up any clumps, and spread it out in the skillet. Cook until heated through, about 3 minutes. Return the egg, shrimp and any juices to the skillet and cook, stirring to break up the egg and mix it in thoroughly, about 1 minute. Season with additional salt if needed. Stir in the chili oil and serve.

FIRE CRACKERS
Seasoned saltine crackers that are simple to make and add a special touch for your dips and spreads at parties. I have had these on several occasions at bachelorette parties and babies showers but was never given the recipe. My sister had them recently at a birthday party, got the recipe, and passed it on to me. Unfortunately, I don't know who to credit for this, but it's certainly a keeper!!! Was initially concerned about the amount of oil, but hey, it's party food, RIGHT? I have used whole wheat crackers and different kinds of dip/dressing mixes successfully so have fun and get creative!

Steps:
- Line crackers on ends (like dominoes) in an air-tight container.
- In a small bowl, mix oil, dressing mix, peppers, and garlic powder.
- Stir until all ingredients are well mixed.
- Continue to stir to prevent the pepper from settling on the bottom of the bowl.
- Spoon mixture evenly over crackers, like drizzling icing on a cake.
- Close lid tightly and flip the container over every 5 minutes for about 20 minutes. Lightly shake back and forth to make sure all the crackers are coated.
- Store in a ziplock bag. Will keep for about a week -- if they last that long!

FIRECRACKER CASSEROLE
Easy to make and delicious. Alot like enchiladas but without the hassle. Tastes just as good the next day for leftovers, if you have any left!

Steps:
- In a skillet, brown the beef and onion until the beef is no longer pink; drain.
- Add beans, chili powder, cumin and salt.
- Transfer to a greased 13x9 in.
- pan.
- Arrange tortillas over the top.
- Mix soup and tomatoes; pour over the top.
- Sprinkle with cheese.
- Bake, uncovered, at 350* for 25-30 minutes.
- Serve with sour cream on top.
FIRECRACKER BROCCOLI
Adapted from the book "Real Vegetarian Thai." This is a great dish with jasmine rice. Keep some soy sauce handy.

Steps:
- Heat the sesame oil on medium-high in a skillet for about a minute, or just until it starts to smoke.
- Add the broccoli and cook until it's shiny and bright green, stirring frequently (about 1 minute).
- Add the veggie stock and salt and cover.
- Turn to medium and cook about two minutes; the broccoli should be slightly tender but still crunchy.
- Toss with Sweet and Hot Garlic Sauce and remove from heat.
- Serve hot, warm, at room temp, cold -- Enjoy!
