SMOKY VEGETARIAN SPLIT PEA SOUP
Healthy, hearty, and packed with smoky flavor...this vegetarian split pea soup is pure comfort in a bowl!

Steps:
- Coat the bottom of a large pot with oil and place it over medium heat.
- Give the oil a minute to heat up, then add the onion, carrot and celery.
- Sweat the vegetables for about 10 minutes, until they soften up a bit.
- Add the garlic and cumin, and cook them with the vegetables until the garlic becomes very fragrant, about 1 minute.
- Stir in the broth and peas. Raise the heat and bring the liquid to a boil.
- Lower the heat and allow the soup to simmer until the peas are very soft and falling apart, about 1 hour to 1 hour and 15 minutes. Keep a bowl of hot water near the stove and add it as the broth dries up.
- When the soup has finished simmering, remove it from the heat and stir in the vinegar and liquid smoke. Season the soup with salt and pepper to taste.
- Ladle into bowls and serve.
- Press the "sauté" button on your Instant Pot then add the oil.
- Give the oil a minute to heat up, then add the onion, carrot and celery.
- Sweat the vegetables for about 5 minutes, until they begin to soften up.
- Add the garlic and cumin, and cook them with the vegetables until the garlic becomes very fragrant, about 1 minute. Hit the "cancel" button.
- Stir in the broth and peas.
- Place the lid on your Instant Pot and set the valve to the "sealing" position. Press the "pressure cook" or "manual" button and set the pressure to high. Set the soup to cook for 15 minutes.
- When the soup has finished cooking, carefully move the valve to the "venting" position. Let the pressure release completely.
- Remove the lid from the Instant Pot. Stir in the vinegar and liquid smoke. Season the soup with salt and pepper to taste.
- Ladle into bowls and serve.

I love it when comfort food and 'healthy' come together in one dish. Like in this full bodied nutritious vegetarian split pea soup. It's loaded with vegetables, well seasoned and satisfying. Smooth or chunky. Your choice. If you are too lazy to chop vegetables (like me), use a food processor for a great shortcut.

- CHOP VEGETABLES: Option #1: Dice carrots, celery and onion into 1/2 inch/1.3cm pieces - and mince the garlicOption #2 (shortcut): Cut vegetables into 2 inch/5 cm pieces and pulse them in the processor (this is a big shortcut so my preference!). I process onions in one batch, then carrots, garlic and celery in another. I leave a few larger chunks of carrots and celery to have some vegetables that hold their shape in the finished soup. If you plan to blend the soup into a purée, however, there's no need.
- COOK ON STOVE TOP: (see Note 1 and 2 for other cooking methods)Sauté veggies: Heat oil on medium heat in a large pot. Add onions and sauté 3 minutes. Add celery and carrots and garlic and sauté 4-5 minutes. Shortcut: skip this step (and skip the oil) and just add everything to the pot and cook. Sautéing adds flavor though.Add broth and seasonings, then cook: Add peas, broth, water, dill and seasonings to pot. Bring to boil. Reduce heat, cover and simmer on medium low (3/10) for 1 1/2-2 hours, until vegetables and peas are soft. If too watery, continue to cook for 15-20 minutes with lid off or partially covering the pot. But note that soup will thicken on standing or in fridge. Remove bay leaf and adjust seasonings to your taste.
- SERVE: If you like chunkier soup, serve as is. If you prefer creamier soup, blend soup in processor (in batches), blender or with stick immersion blender. Alternatively, do half and half - blend half the soup to creamy, then combine with the unblended chunky half. Serve with croutons, biscuits, a warm crusty loaf bread or cornbread.

- Place first 5 ingredients in a large pot.
- Bring to a boil, reduce heat to low, and simmer, partially covered for about 20 minutes, stirring occasionally to prevent split peas from sticking to bottom of pot.
- Add onions, garlic, celery, carrots and potato. (You can saute these first or add them in directly if you want a fat free soup).
- Partially cover and allow to simmer for about 40 minutes, stirring occasionally.(You may need to add extra water).
- Season to taste with pepper and vinegar.
- Serve with a drizzle of sesame oil, diced tomato and minced parsley.

You may have seen green split pea soup before, but I love the color the yellow split peas give my version. Turmeric also gives it a golden hue and lends an earthy flavor. For added creaminess, I like to dollop a little smoky sour cream on top.

- Heat the oil in a Dutch oven over medium-high heat. Add the onion, garlic, carrots, celery and turmeric and cook until the vegetables are tender, about 5 minutes. Add the peas, vegetable broth, thyme and 1/2 teaspoon each salt and pepper.
- Bring to a boil; cover, reduce the heat to low and simmer until the peas are tender and the soup is thickened, 40 to 45 minutes. Stir in 1 to 2 cups water at the end of cooking if the soup is too thick.
- Meanwhile, stir together the sour cream, paprika and 1/4 teaspoon each salt and pepper. Spoon the soup into serving bowls and top with the sour cream. Garnish with thyme, if desired.
FINNISH GOLDEN SPLIT PEA SOUP(VEGETARIAN)

You can use golden split peas or green split peas, it tastes good either way. I put together this soup from several different recipes.

- Combine vegetable stock,split peas,salt, and bay leaf in large pot.
- Bring to a boil, reduce heat to medium low and simmer 20 minute
- Mince the onions and garlic, chop the carrots, potatoes and celery.
- Saute the veggies in 1 tablespoon olive oil about 5 minutes, then add to the pot.
- Simmer an additional 40-50 minutes, until peas are very soft and almost disintegrating.
- Purée the soup in a blender or food processor until it is quite smooth or you can leave partially chunky, according to your taste. The soup will be thick and yummy.
- Add the mustard, allspice, thyme, cumin and pepper and reheat gently. Adjust seasonings to taste.

VEGETARIAN SLOW COOKER SPLIT PEA SOUP
Got this recipe online a couple years ago. I've tweaked it a little bit and will probably continue to experiment by throwing other vegetables in. It's a great soup for a cold day when I know I won't have time to cook dinner. I usually make a batch and freeze what we don't eat. It tastes the same when reheated after the freezer, but the texture does change slightly. Lasts a few days in the fridge as well.

- Rinse and remove unwanted pieces from the peas. Cover with cold water and let soak overnight.
- Afterwards, drain and rinse the peas. Peel the onion and stud it with the cloves. Put everything into the pot with the peas. (Use fresh water for the 8 cups, not the soaking water.).
- Bring to a boil; cover, lower heat, and let simmer until they are very soft, about 2 hours, stirring often.
- Remove meat from soup. Trim it from the bones, cutting into small pieces. Return it to the soup.
- Salt to taste and serve. (I must add, however, that the listed amount of salt could be too much for some people, let alone adding more at this point. However, I've included the amounts listed by the author because she says that Finnish food is very salty. Use your own judgement.).
GOLDEN SPLIT PEA SOUP
This is from my Low-Fat Moosewood cookbook. Your house will smell like an Indian restaurant! The soup is a beautiful dark gold color. Don't use green or brown lentils, it just won't be the same. This makes a lot, but you can freeze it. Even my one year old loves this! Serve topped with plain yogurt and chopped cilantro. Pass pita bread.

- In a soup pot, sauté the onions in the oil for about 8 minutes, until golden, stirring frequently.
- Add the cumin, turmeric, coriander and ginger and cook for another minute.
- Add the split peas, water, sweet potatoes, apples, cinnamon, and chili powder, cover and bring to a boil.
- Lower the heat and simmer for 40 minutes, or until the split peas are tender.
- In a bowl, combine the tomatoes, lime juice and soy sauce.
- When the split peas are tender, add the tomato mixture.

- Form a spice bag by wrapping allspice in cheesecloth and tying with a string, or placing allspice in a stainless steal tea ball.
- In a soup kettle saucepan, combine water, peas, ham or pork hocks and allspice; bring to a boil, cover and simmer 1 hour.
- Add potatoes, carrots, onion, salt and pepper, return to boiling.
- Reduce heat, cover and simmer 30 minutes.
- Remove spice bag.
- If using pork hocks, remove and cool slightly.
- When cool enough to handle, remove meat from bones and coarsely chop.
- Return meat to soup, discard bones.
