This truly is so tasty and impresses everyone who has had it. I chop everything and then it comes together easily. I am not sure where I even got this recipe it has been so long. I have used haddock, cod, flounder and orange roughy and they all were great with this recipe.

Number Of Ingredients 14

1 stalk chopped celery
3 chopped green onions
2 minced garlic cloves
1/2 lb fresh crabmeat
1/4 teaspoon salt
1/4 teaspoon pepper
1 slightly beaten egg
6 fish fillets (4 oz each)
1/4 cup olive oil
1 cup soft breadcrumbs
1/2 cup parmesan cheese
1 chopped plum tomato
2 tablespoons lemon juice
1/2 cup melted butter

Steps:

  • Cook celery, green onions and garlic in hot oil over medium heat until tender.
  • Remove from heat.
  • Add crabmeat and all else except fish and melted butter.
  • Brush fish with melted butter.
  • Spoon 1 heaping tablespoons crab mixture on one half of each fillet.
  • Fold other half over top (can toothpick).
  • Place in 9 x 13 inch pan.
  • Spoon remaining crab mixture over each stuffed fillet and drizzle with remaining melted butter.
  • Cover and bake at 375°F for 20 minutes.
  • Uncover and bake 10 minutes more until fish flakes easily.

3/8 cup olive oil
3 tablespoons butter
3 cloves garlic, chopped
1 white onions, chopped
2 canned chiles, chopped
1/4 cup chile juice, from can
3 tablespoons canned pickled carrots, chopped
2 medium tomatoes, chopped
1/4 cup parsley, chopped
1/4 cup cilantro, chopped
Salt and pepper, to taste
1 to 1-1/4 pounds crabmeat, cleaned

Steps:

  • Heat oil and butter in frying pan. Add garlic and onion, and saute. Add chiles, chile juice, carrots, tomatoes, parsley, and cilantro. Season with salt and pepper and cook over low heat until mixture thickens, about 25 minutes. Add crab meat and correct seasonings. To serve, place crab on a platter. Serve with freshly made tortillas to roll into tacos. The shredded crab may also be served in crab shells, sprinkled with bread crumbs, melted butter, and parsley, then baked in a hot oven for 25 minutes.

12 garlic cloves, peeled
1 tablespoon seafood seasoning
1 teaspoon seasoning blend (recommended: Old Bay)
1/2 teaspoon New Mexico chili powder
Six 8-ounce Pacific red snapper fillets
Serving suggestions: salad, grilled vegetables, rice, or tortillas and salsa

Steps:

  • Place olive oil, garlic, and seasonings in a blender or food processor and puree for 30 seconds or until smooth. Rinse fillets with cold water and remove any pin bones. Rub fillets with the seasoning mixture and place in a baking dish. Let marinate in the refrigerator for 1 hour.
  • Preheat a grill. Place fillets, skin side down, on hot grill and cook for 2 to 3 minutes on each side. Serve with a salad, grilled vegetables, rice, or tortillas and salsa.

2 1/3 pound beef stew meat
4 cups water
"Rich juice": 31 ounces (3 cans) concentrated beef broth
1 1/2 cups dry bread crumbs
3/4 teaspoon freshly ground black pepper
8 threads saffron
5 eggs
1 1/2 cups grated Parmesan or Romano
3/8 cup chopped parsley
3/4 teaspoon dried or 1 teaspoon fresh marjoram
1 1/2 tablespoons chopped fresh mint
3 tablespoons wine vinegar
Salt

Steps:

  • Bring meat and water to a boil and cook 10 minutes; take meat out and cut up small; put back in water with broth, bread crumbs, pepper, and saffron. Simmer 30 minutes over low flame, being careful that it does not stick. Mix in remaining ingredients; cook, stirring frequently, for about 5 minutes. Ladle into pewter serving bowls and serve warm.
  • Original Recipe for Potage from Meat:
  • Take lean meat and let it boil, then cut it up finely, and cook it again for 30 minutes in rich juice, having first added bread crumbs. Add a little pepper and saffron.
  • When it has cooled a little, add beaten eggs, grated cheese, parsley, marjoram, and finely chopped mint with a little vinegar. Blend them all together in a pot, stirring them slowly with a spoon so that they do not form a ball. The same may be done with livers and lungs.

1 pound jumbo lump crabmeat, picked over for cartilage
1 egg
1 tablespoon mayonnaise
1 teaspoon mustard
12 saltine crackers
1 teaspoon crab boil seasoning
1 teaspoon Worchestershire sauce
4 large portobello mushrooms, destemmed
1 teaspoon butter
Sprinkle paprika
Lemon slices, sliced tomatoes, or sliced cucumbers, for garnish

Steps:

  • Place the crab into a medium bowl. In a separate bowl, combine egg, mayonnaise, mustard, crackers, crab boil seasoning, and Worcestershire sauce. Mix well. Gently fold mixture into the crab.
  • Place crab mixture equally on top of each portobello mushroom. Top each center of the stuffing with a 1/4 teaspoon of butter. Refrigerate for 2 hours.
  • Preheat over to 380 degrees F. Bake for 15 minutes, then place under the broiler for 2 minutes. Sprinkle with paprika. Serve with your favorite garnish, perhaps sliced lemon, tomato or cucumber.

CHERRY TOMATOES STUFFED WITH CRAB GUACAMOLE



Cherry Tomatoes Stuffed with Crab Guacamole image

24 large red and yellow cherry tomatoes (1-inch size)
1 small ripe avocado, split, pitted and peeled
Juice of 1/2 lemon
1 tablespoon olive oil
8 drops hot pepper sauce
4 ounces crabmeat
1 tablespoon shallots, finely chopped
1 small clove garlic; peeled and finely chopped
8 sprigs coriander, leaves only, half the leaves chopped
Salt and pepper to taste

Steps:

  • Cut a 1/4-inch cap off each tomato. Reserve the caps. Scoop out the seeds and pulp with a tiny spoon or melon-ball scoop. Season each hollowed tomato with salt and pepper. Set aside.
  • Mash the avocado with a fork in a bowl, add the lemon juice, olive oil, hot pepper sauce, crabmeat, shallots, garlic, and chopped coriander and mix until smooth. Salt and pepper to taste.
  • Fill each cherry tomato 1/4-inch above the rim with the crab guacamole. Add a coriander leaf for decoration on top and cover each tomato with its cap.

1 teaspoon minced onion
2 teaspoons minced green onions
1 teaspoon minced garlic
1 teaspoon minced celery
1 teaspoon minced green bell pepper
2 tablespoons water or 2 tablespoons chicken broth
1 pinch Old Bay Seasoning (for the chicken stock or water)
1 (6 ounce) can crabmeat, drained or 6 ounces fresh crabmeat, picked over
2 tablespoons breadcrumbs (We used Panko breadcrumbs)
1 teaspoon cajun seasoning (We didn't use)
1 1/4 cups beef broth
1 teaspoon cracked black pepper
1 fluid ounce whiskey
1 cup heavy cream
4 (6 ounce) filet mignon steaks
8 slices bacon, cooked almost done
salt and black pepper, to taste
1 tablespoon olive oil
1 garlic clove, minced
1 teaspoon minced shallot
1 cup cremini mushrooms or 1 cup white button mushrooms, sliced
1 fluid ounce whiskey
1 teaspoon Dijon mustard

Steps:

  • MAKE CRAB STUFFING:.
  • Heat 2 tablespoons olive oil in a large skillet.
  • Saute onion, green onion, garlic, celery, and green pepper until tender.
  • Stir in shrimp stock, water seasoned with Old Bay or chicken broth seasoned with Old Bay seasoning, crab meat, bread crumbs or Panko breadcrumbs, and Cajun seasoning, if using (optional).
  • Remove from heat, and set aside.
  • PREPARE PEPPERCORN SAUCE:.
  • In a small saucepan over medium heat, combine beef broth and cracked black pepper.
  • Simmer until reduced to 1 cup, stirring frequently. Add 1 ounce whiskey and 1 cup cream.
  • Continue simmering until reduced to 1 cup.
  • Remove from heat, and set aside. (Make this the day before).
  • PREPARE STEAKS:.
  • Slice a pocket into the side of each steak, and stuff generously with crab stuffing.
  • Wrap almost crispy bacon around side, and secure with soaked(to prevent from burning) toothpicks.
  • Season to taste with salt and pepper; set aside.
  • Heat olive oil in a large cast iron skillet over medium heat.
  • Saute garlic and shallot for 1 minute. Stir in mushrooms, and saute until tender.
  • Remove mushroom mixture, and set aside.
  • Place steaks in skillet, and cook to desired doneness.
  • Remove from skillet, and keep warm.
  • Deglaze skillet with 1 ounce whiskey.
  • Reduce heat, and stir in peppercorn sauce(that has been brought to room temperature) and Dijon mustard.
  • Add mushroom mixture, and reduce sauce until thickened.
  • Remove toothpicks and bacon from steaks, and arrange steaks on a plate.
  • Top with sauce and serve with parslied egg noodles or some rice dish and vegetables.
  • Serve with wine, of course.

1 package (8 ounces) imitation crabmeat
2 tablespoons cream cheese, softened

  • Preheat oven to 400°. 2 lbs sole fillets
8 ounces imitation crabmeat, cut up small
8 ounces buttery flavored crackers, such as Town House, crushed
seasoned bread crumbs
1/4 cup fresh parsley, chopped
1 garlic clove, crushed
3/4 cup butter, melted and divided

Steps:

  • Put crushed crackers in a bowl and mix in bread crumbs. (about 1/4 cup; more or less if you like).
  • Add chopped parsley and garlic.
  • Add 1/2 cup melted butter and stir to mix.
  • Add artificial crab meat and mix again.
  • Wash fish and pat dry.
  • Roll each fillet with a handful of stuffing and place in buttered 9x13 casserole dish.
  • Put remaining stuffing on top and around rolled fillets.
  • Drizzle with remaining 1/4 cup melted butter.
  • Cover with foil or lid and bake for about 1 hour at 350 degrees.
  • Uncover fish and cook another 10 to 15 minutes.

  • Preheat oven to 350F degrees.

I love this dish I got it off of the T.V years ago and I make it often. I normally use a whitefish of some sort. Tilapia or Flounder are my favorites. I usually serve with rice and steamed vegetable. It's filled with flavor and is pretty easy to make. I could eat the stuffing all by it's self. A lot of times I double the stuffing but it's up to you what you think.

6 tablespoons butter, divided
1 celery rib, finely chopped
1 small onion, finely chopped
1/4 cup chopped parsley
1 (4 1/2 ounce) can crabmeat, drained & flaked
1/2 cup dry Italian breadcrumbs
1 tablespoon lemon juice
1/8 tablespoon crushed red pepper flakes
6 fish fillets (about 2 pounds total)
paprika, to taste

Steps:

  • Preheat the oven to 400°F; coat a 9x13-inch baking dish w/ non stick cooking spray.
  • In a large skillet melt 4 T butter over medium-high heat. Add celery, onion & parsley. Sauté until tender. Remove from heat and stir in crabmeat, bread crumbs, lemon juice and red pepper flakes.
  • Spoon crabmeat mixture evenly over the filets. Starting from the small end, roll up each fillet, jelly roll- style. Place the rolls seam side down in baking dish. Melt the remaining butter and drizzle over fillets. Sprinkle with paprika.
  • Bake for 20 -25 minutes, or until fish flakes easily with a fork.
