Creamy Homemade Tomato Soup Recipe image

I finally found the perfect homemade tomato soup. Creamy but not overly so. Tomato-y but not acidic. It is comforting and perfect, with a surprising secret ingredient.

4 tbsp butter
1/2 cup diced onion
2 tbsp all-purpose flour
2 cups milk (preferably whole)
1/4 tsp baking soda
3 1/2 cups diced tomatoes (include the juice if using canned; if using fresh and you have a good blender, no need to peel them)
2 tsp granulated sugar
salt (to taste (I use about 2 tsp kosher salt, but it really depends if the butter and tomatoes had salt))

Steps:

  • Heat the butter in a large pot over medium heat. Add onion and cook until softened and translucent (not browned), about 6 minutes. Stir in flour, cook one minute, then gradually whisk in milk. Add baking soda, tomatoes and sugar. Simmer 10 minutes, then blend (either with an immersion blender, or in small batches in a regular blender - careful, hot liquids will explode out if you overfill!). Add salt by pinches, tasting as you go until soup tastes vibrant and well-seasoned.

  • Gather the ingredients.

  • Portion the hot soup into 4 bowls or mugs. Dollop each with 1 tablespoon butter and season with salt and/or sugar to taste.

One of the best potato soups, I think the sour cream makes the difference, I like to add in the cayenne pepper for just a bit of heat, and I most always double the complete recipe and use 4 russet potatoes and 4 red potatoes. If desired you can add in some cooked cubed potatoes just before serving and sprinkle with more Parmesan cheese, I most always do! you will love this!

4 large potatoes, peeled and diced
2 medium celery ribs, diced
1 medium onion, diced
1 tablespoon fresh minced garlic (optional)
1 1/2 cups low sodium chicken broth
4 chicken bouillon cubes (I use OXO brand, can use the small packages in place of cubes)
1/3 cup grated parmesan cheese
1 cup full-fat milk (or use 2 cups half-and-half cream)
1 1/2 cups sour cream
1 tablespoon flour
salt & freshly ground black pepper (i use seasoned salt)
1 pinch cayenne pepper
grated parmesan cheese
green onion

Steps:

  • Place the potatoes in a pot with chicken broth, onions, garlic and celery; bring to a boil and simmer until veggies are tender (about 20 minutes).
  • Remove from the stove and cool slightly (or you can refrigerate to puree later) using an electric mixer or a food processor blend until a smooth (leaving a few chunks of potatoes is fine!).
  • Add in 1 cup milk or half and half, Parmesan cheese and bouillon cubes or packets, then place back on the stove to heat slowly.
  • In a medium bowl whisk the 1-1/2 cups sour cream with the flour until blended.
  • Pour 1/3 of the heated potato/milk mixture into the sour cream; mix then pour it back into the remainder of the soup; stir to combine, then heat on top of the stove.
  • Season with salt and pepper and cayenne pepper (if using) then ladle into bowls.
  • Sprinkle with grated Parmesan cheese and chopped green onions.
  • Delicious!

2 cups water
2 chicken bouillon cubes
3 cups cubed peeled potatoes
1/2 cup chopped onion
1/2 cup thinly sliced celery
3/4 teaspoon salt
1/2 teaspoon pepper
2 cups milk, divided
2 tablespoons all-purpose flour
1 cup sour cream
2 tablespoons chopped fresh parsley
1 tablespoon chopped chives

Steps:

  • In a 3-qt. saucepan over medium heat, combine water, bouillon, potatoes, onion, celery, salt and pepper; bring to a boil. Reduce heat cover and simmer for 15-20 minutes or until potatoes are tender. Add 1-3/4 cups milk. Combine flour with remaining milk; stir to form a smooth paste. Add to soup, stirring constantly. Bring to a boil; boil and stir for 2 minutes or until thickened and bubbly. Add a small amount of hot liquid to sour cream; stir to mix. Gradually add to soup, stirring constantly; heat through but do not boil. Add parsley and chives just before serving.

5 cups milk
1 teaspoon sugar
1/8 teaspoon ground ginger

Steps:

  • Spread 1/2 tablespoon sour cream over the bottom of each small bowl.
  • Set in a warm place and fill with milk.
  • Cover with cheesecloth.
  • When milk has soured, chill thoroughly and serve very cold.
  • Sprinkle generously with sugar and a little ginger.

1/4 cup dried chick peas
1/4 cup cracked wheat
1 cup dried red lentils
4 cups boiling water
1 bunch Swiss chard, or other greens such as dandelion or amaranth
1/2 cup fresh lemon juice
2 teaspoons salt
1/2 teaspoon Near East or Aleppo pepper
1/2 teaspoon pureed garlic
3 tablespoons finely chopped fresh mint

Steps:

  • Place chick peas in a bowl, cover with water by at least 2 inches, and soak overnight.
  • Drain the chick peas and place in a large saucepan. Rinse the cracked wheat under cold running water, and add to saucepan, along with 2 1/2 cups of cold water. Bring to a boil, then simmer, uncovered, for 30 minutes.
  • Rinse the lentils under cold running water, and add to chick peas and cracked wheat. Pour in the 4 cups of boiling water, and simmer another 30 minutes.
  • Meanwhile, wash the chard, cut off the thick stems and finely chop them. Add chopped stems to saucepan and simmer for 5 minutes. Finely chop the leaves, add them to the saucepan, and simmer an additional 25 minutes. Add the lemon juice, salt, pepper, pureed garlic and mint, stir well and simmer 5 minutes. Remove soup from the heat, and adjust the seasonings. If soup is too thick, add more boiling water. Serve warm or cold.
