FRESH FETTUCCINE WITH FIGS, PROSCIUTTO AND GOAT CHEESE



Fresh Fettuccine with Figs, Prosciutto and Goat Cheese image

Vegetable oil cooking spray
Four 1/4-inch-thick slices prosciutto
1 recipe Fresh Pasta, recipe follows
All-purpose flour, for dusting
Kosher salt
1 tablespoon extra-virgin olive oil
1 1/2 cups (about 7 ounces) dried Mission figs, stemmed and quartered
1/2 cup low-sodium chicken broth
1/2 cup fresh orange juice
1 tablespoon fresh thyme leaves
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup (4 ounces) goat cheese, at room temperature, crumbled
1/2 cup (4 ounces) mascarpone cheese, at room temperature
Zest of 1 large lemon
2 cups cake flour
1 cup all-purpose flour, plus extra for dusting
4 large egg yolks, at room temperature
1/8 teaspoon kosher salt
1/4 cup extra-virgin olive oil

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a heavy baking sheet with vegetable oil cooking spray.
  • Arrange the prosciutto in a single layer on the prepared baking sheet. Bake for about 10 minutes until crispy. Drain on paper towels. When cool enough to handle, crumble the prosciutto into 1/2-inch pieces.
  • Cut the pasta dough in quarters and press flat. Run each piece of pasta dough several times through a pasta-rolling machine, adjusting the setting each time until the pasta is about 1/16-inch thick. Add the fettuccine attachment and run the pasta sheets through. Dust the fettuccine lightly with flour to avoid sticking.
  • Bring a large pot of salted water to a boil over high heat. Add the olive oil and pasta. Cook until tender but still firm to the bite, stirring occasionally, 4 to 5 minutes. Place the pasta in a large serving bowl.
  • For the sauce: In a medium saucepan, combine the figs, broth, orange juice, thyme, salt and pepper. Bring to a boil over medium heat. Reduce the heat and simmer for 5 minutes. Remove the pan from the heat. Stir in the goat cheese, mascarpone cheese and lemon zest until the sauce is creamy.
  • Pour the sauce over the cooked pasta and toss until all the ingredients are coated. Top with the crumbled prosciutto and serve.
  • Place the cake flour, all-purpose flour, egg yolks and salt in a food processor. Pulse to combine. With the machine running, gradually add the oil then 1/3 to 1/2 cup water until the mixture forms a dough (the dough should stick together if pinched between your fingers). If necessary, add additional water, 1 teaspoon at a time if the dough is too dry.
  • Place the dough on a lightly floured surface. Gather the dough into a ball and knead until the dough is smooth, 5 to 8 minutes. Cover with plastic wrap and refrigerate for 30 minutes.
  • Cut the dough into quarters and press flat. Run each piece of pasta dough several times through a pasta-rolling machine, adjusting the setting each time, until the pasta is about 1/8 to 1/16-inch thick. Cut the pasta into the desired shape and use as needed.

2 (6-ounce) creamy goat cheese disks, such as Coach Farm
Kosher salt and freshly ground black pepper
Minced fresh dill
Julienned fresh basil leaves
Crushed red pepper flakes
Good olive oil
Bread or crackers, for serving

Steps:

  • Find a small, wide-mouth canning jar or small glass vase (3 1/2 inches in diameter by 4 inches high), just large enough to hold the two goat cheeses on top of each other with a little room to spare. Cut each cheese in half horizontally, making 2 rounds from each. (A piece of dental floss makes this easier.)
  • Place half of the first disk flat in the jar, sprinkle with salt and pepper, then with 1/2 teaspoon dill, 1 teaspoon basil, and a few red pepper flakes, and drizzle with 1/2 tablespoon olive oil. Place another disk of cheese on top and repeat the seasonings, herbs, and oil. Continue with the remaining cheese disks, piling one on top of the other with oil and seasonings in between. When all the disks are stacked and seasoned, drizzle 1 tablespoon of olive oil on top. Cover and set aside at room temperature for one hour or refrigerate for up to 24 hours. Serve at room temperature with bread or crackers for people to help themselves.

8 black figs, stems trimmed, halved
¼ cup honey
1 teaspoon freshly ground black pepper, for garnish

Steps:

  • Preheat the oven to 350°F (180°C). Line 2 baking sheets with parchment paper.
  • Make the herbed butter: Add the butter, sage, rosemary, and salt to a small pot set over medium heat and stir until the butter is fully melted, about 2-3 minutes. Remove the pot from the heat and set aside until ready to use.
  • Separate the crescent roll dough along the perforated edges, creating 16 triangles. Place a fig half at the base of each dough triangle, brush with honey, and roll to enclose. Set seam-side down on a prepared baking sheet. Brush the tops of wrapped figs with the herb butter.
  • Bake, rotating and swapping the baking sheets top to bottom halfway through, until golden brown and puffed, 15-18 minutes.
  • Drizzle with the remaining honey and top with freshly ground black pepper.

4 stalks fresh rosemary, about 6 inches long
4 large fresh figs, any variety, stems trimmed, halved lengthwise
1/8 cup liquid honey
1 tablespoon lemon juice, freshly squeezed
2 ounces goat cheese, crumbled

Steps:

  • Strip the leaves from the bottom of the rosemary stems, leaving about 1 1/2 inches of leaves at the tip.
  • Place the stems in a bowl and add cold water to cover; soak for at least 30 minutes.
  • Skewer fig halves crosswise on each rosemary stem.
  • Arrange the skewers on a plate with the cut sides of the figs facing up.
  • In a small bowl, mix together honey and lemon juice.
  • Brush the honey/lemon mixture over the cut side of the figs.
  • Preheat the broiler to high.
  • Broil the figs cut side up until they are lightly browned and softened, about 1 to 2 minutes.
  • Top with cheese and place back under broiler for 1 minute.
  • Serve on the skewers while still hot.

This was a great way for me to use up the trimmings from my herb garden. The bites kept very well, completely submerged in the evoo for two weeks, so far. Lovely to have on hand, and the olive oil takes on a nice flavor, making it a useful plus for salad dressing, once all the goat cheese is gone.

8 ounces goat cheese
2 ounces room temperature cream cheese
2 tablespoons basil chiffonade
2 tablespoons minced fresh Italian parsley
2 tablespoons minced sun-dried tomatoes packed in oil
1 1/2 teaspoons minced fresh thyme
1 1/2 teaspoons minced fresh oregano
1/2 teaspoon salt
1/2 teaspoon cracked black pepper
extra virgin olive oil, to cover

Steps:

  • Mash together with a fork the goat cheese, cream cheese, herbs, tomatoes, salt and pepper.
  • Chill this mixture in the refrigerator for a while to make it easier to work with.
  • Roll small scoops of the goat cheese mix in your hands to make smooth balls.
  • Put the balls in a clean jar, and completely cover with the evoo. Store in the refrigerator for at least 1 day, to give the flavors time to develop.
  • Serve on a cheese platter, or with baguette, crackers, crudites.
  • The oil makes a wonderful addition to a salad dressing!

The high heat cooks the fruit quickly, resulting in an outer charred fruit and warm center that has texture and bite but is not mushy. This is an excellent way to plank most fruits and vegetables. Keep a spray bottle of water handy to lightly douse flare-ups. Suggested plank: 2 maple or oak grilling planks, soaked in water for at least 1 hour

  • 1. Pour the fruit liqueur into a shallow dish. Sprinkle the pepper on a saucer. Dip the cut sides of the figs first into the fruit liqueur, then into the pepper, and place, cut side up, on a baking sheet to marinate for 20 minutes.
  • 2. Cut each slice of pancetta lengthwise into 1/2-inch strips. Loosely wrap each fig half with a strip of pancetta. Fry the rest of the pancetta until crisp and crumbly and set aside.
  • 3. Prepare a hot fire in your grill.
  • 4. Place the planks on the grill grate and close the lid. When the planks start to smoke and pop, after 3 to 5 minutes, open the lid and turn the planks over using grill tongs. Quickly place the fig halves on the planks, cut side up. Sprinkle the goat cheese and fried pancetta on the figs. Cover and plank-roast for 12 to 15 minutes, or until the figs have softened and are scorched around the edges and the goat cheese has a burnished appearance and a brownish-red color. Drizzle with the honey and serve.
  • Oven-Planking: Preheat the oven to 450°F. Place the planked pancetta-wrapped figs, sprinkled with goat cheese and fried pancetta, in the middle of the oven. Plank-roast for 12 to 15 minutes, or until the figs are scorched around the edges. Drizzle with honey and serve.
