Steps:
- Sprinkle pork with salt and pepper. In a large skillet, heat oil over medium-high heat. Brown pork on both sides; remove from pan., Add preserves, juice, vinegar, Worcestershire sauce, garlic and curry powder to same pan; bring to a boil. Return pork to pan. Reduce heat; simmer, covered, until a thermometer inserted in pork reads 145°, 5-7 minutes. Let stand 5 minutes before serving.

- 1 In plastic resealable bag, combine fig preserves, chili powder, garlic, vinegar, and soy sauce. Season tenderloins to taste and place in bag. Refrigerate one hour or longer, time permitted. 2 Preheat oven 350°F. Place tenderloin on baking sheet covered with foil. Cover tenderloins with some of the marinade, toss out remaining marinade. 3 Cook tenderloins, basting after 20 minutes with marinade in pan and continue cooking another 20 minutes or until thickest part of tenderloin registers 160°F.

- Preheat an oven to 325 degrees F (165 degrees C). Combine the stuffing mix and water in a mixing bowl; set aside. Grease a roasting pan with cooking spray.
- Trim the fat and connective tissue from the pork loin. Cut from one side through the middle horizontally to within 1/2-inch of the other side. Open the two sides and spread them out like an open book. Place the pork loin between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the pork with the smooth side of a meat mallet to a thickness of 1/2-inch.
- Stir the apple, cranberries, pecans, and onion into the stuffing mix. Season the pork loin with salt and pepper to taste, then spread the stuffing mix onto the cut side of the loin. Roll the pork into a firm cylinder, and secure with cooking twine. Place into the prepared roasting pan.
- Bake in the preheated oven until the pork is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Cover the meat with two layers of aluminum foil, and allow to rest in a warm area for 10 minutes. Remove kitchen twine before slicing and serving.

FIG, PINE NUTS AND FETA STUFFED PORK LOIN

- Preheat grill to medium high heat.
- Slice a very thin piece if each steak to cover the hole to hold in the filling, set aside.
- Slice a small entry along the side (opposite side of the fat) of each steak for the filling. Then slice the inside a little larger so to hold more of the filling.
- Rub each with a touch of olive oil.
- Season each steak inside and out with salt, pepper and optional rub, set aside.
- Mix the remaining ingredients together divide into four and fill into the cavity of each steak.
- Cover the hole with the slice of meat.
- Grill over direct heat to mark each side of steak then more to indirect heat standing the steaks with the cut side up. Close lid and grill till thermometer registers at 145 degrees. Remove and let rest covered with foil for 10 minutes and it will raise to 155 degrees which is medium.
FIG-GLAZED PECAN-STUFFED PORK TENDERLOIN
Steps:
- Make the glaze Heat the oil in a 10" skillet over med-low heat. Add the shallot and cook, stirring often, until soft, about 2 min. Remove the skillet from the heat, add figs and port, stir well, and scrape the bottom of the skillet to deglaze. Turn the heat down to low, return the skillet to the heat, cover, and simmer until the figs are very soft, about 5 min. Transfer to a med bowl. Add honey, balsamic vinegar, rosemary, cloves, and a pinch each of salt and pepper, stirring to combine. Let the mixture sit for 1 hour. Purée in a blender or food processor until smooth, adding up to 1-1/2 C water to loosen to a thick sauce consistency. Make the pork Soak 18 toothpicks in water. Heat 1 T oil in a 12" skillet over med heat. Add bacon and cook, stirring often, until crisp, about 6 min. Add onion and cook, stirring occasionally, until browned, about 5 min. Add pecans and garlic and cook, stirring often, until garlic is fragrant, about 1 min; remove from heat. Let cool to room temp, then fold in goat cheese, parsley, egg, and zest. Set aside. Butterfly the tenderloins by slitting each one lengthwise far enough that it can be opened like a book and lie almost flat. Working with one piece at a time, cover the pork with plastic wrap and pound with a meat mallet, starting in the middle and working outward, until about 1/2" thick. With the long sides facing you, divide the pecan mixture among the tenderloins, spreading over bottom half of each. Starting with the bottom side, tightly roll up tenderloin and secure the seams with the toothpicks. Prepare a med 350°F grill fire for direct grilling. (Alternatively, position a rack in the center of the oven and heat the oven to 350°F.) Brush tenderloins with olive oil and season w/ S & P. Grill, turning every few min, until temp is 140F, 15-20min. 1C of glaze to gravy boat. 1C glaze to baste until done. Rest, slice and serve
