1 Cup of Dried Figs, pitted and chopped in pieces
1/4 Cup of Walnuts, chopped
1/4 Cup of Concord Grape Wine (or Juice)
1/2 Teaspoon of Cinnamon
Pinch of Salt

Steps:

  • Place all ingredients in food processor or Blender Refrigerate until ready to use Enjoy!

In addition to its traditional role on the Seder plate, this charoset is delicious as a condiment for duck or roast beef.

Yield Makes about 2 cups

Number Of Ingredients 6

1 cup ruby port
1 cup black Mission figs, finely chopped
3 tablespoons vegetable oil
2 cups finely chopped Vidalia or other sweet onions
1/3 cup pine nuts, lightly toasted (optional)
1/4 teaspoon freshly ground black pepper

Steps:

  • In small saucepan, combine port and figs. Set over high heat and bring to boil. Reduce heat and simmer, uncovered, until figs are softened and port is slightly reduced, about 15 minutes.
  • Meanwhile, in large heavy-bottomed skillet over moderately high heat, heat oil. Add onions and cook, stirring often, until lightly caramelized, about 20 minutes. Remove from heat and cool slightly.
  • In large bowl, combine fig/port mixture, onions, pine nuts, and pepper. Serve at room temperature.

3 medium Gala or Fuji apples, peeled and finely chopped
1/2 cup finely chopped walnuts, toasted
2 tablespoons sweet red wine or grape juice
2 tablespoons sugar
1 teaspoon ground cinnamon
Matzo crackers, optional

Steps:

  • In a large bowl, toss apples and walnuts with wine. Mix sugar and cinnamon; sprinkle over apple mixture and toss to combine., Refrigerate, covered, 1 hour before serving. If desired, serve with matzo crackers.

1 cup pecans, toasted and finely chopped
1 cup dried figs, finely chopped
2 cups finely diced just-ripe unpeeled pears
1/2 cup peeled, finely diced, crisp and slightly tart apple
1 teaspoon ground cinnamon
3 tablespoons honey
3 tablespoons Passover sweet wine
Zest and juice of half a lemon

Steps:

  • In a glass or ceramic bowl, lightly toss the pecans, figs, pears and apple.
  • Add the cinnamon, honey, wine, lemon zest and juice. Toss lightly to blend well. Cover and refrigerate for at least 1 hour before serving.

Traditionally, Sephardi charoset is made to celebrate the Jewish festival of Passover. The dessert wine, sweet dates and fragrant cinnamon give it a festive feel

Number Of Ingredients 6

100ml-120ml sweet dessert wine, red wine or grape juice
110g raisins
55g medjool dates, or regular dates, finely chopped
55g dried apricots, finely chopped
large pinch of cinnamon, plus extra to taste (optional)
60g whole almonds, toasted

Steps:

  • Heat 100ml wine or grape juice in a pan. Bring to a simmer and add the dried fruit and cinnamon. Simmer gently until the liquid is syrupy and the fruit tender, about 5-6 mins. If the liquid evaporates before the fruit has softened or starts to dry out, add another 20ml of wine or grape juice. Turn off the heat and leave to cool.
  • Tip the toasted almonds into the small bowl of a food processor and pulse until you have larger and smaller pieces, but no whole nuts. Tip them into a mixing bowl, then spoon the cooled fruit mixture into the food processor and pulse until it starts to form a paste, but still has some bigger lumps of fruit remaining.
  • Scrape the fruit into the mixing bowl with the nuts and stir to combine. Add a pinch of salt and taste, adding more cinnamon and salt to taste, if you like. Will keep for several days in an airtight container.
