FIESTA SALAD WITH CILANTRO-LIME DRESSING



Fiesta salad with cilantro-lime dressing image

A main-course salad with roasted chickpeas and Mexican-inspired flavors.

1/3 cup fresh cilantro leaves and stems (packed)
1/3 cup fresh lime juice (from about 2 large limes)
1/3 cup honey (I used raw)
1 heaping teaspoon minced garlic
2 teaspoons minced fresh ginger root
1/2 teaspoon salt
1/4 cup extra-virgin olive oil
1 batch coconut-lime roasted chickpeas
8 cups green lettuce, chopped
1 mango, peeled and diced
1 bell pepper (red, yellow, or orange), diced
1 cup grape tomatoes, halved
1 avocado, cut into 1-inch chunks

Steps:

  • Put all of the dressing ingredients except the olive oil into a food processor or blender and pulse until the cilantro is chopped. Turn the machine on and slowly drizzle in the olive oil. Set the dressing aside.
  • To assemble the salads, divide the ingredients between four plates. Dress with the cilantro-lime dressing. Enjoy!

1/2 cup chopped shallot
1/4 cup fresh lime juice
1/4 cup chopped fresh cilantro
1 tablespoon minced garlic
1/2 cup vegetable oil
salt and pepper
3 cups thinly sliced red lettuce
3 cups thinly sliced napa cabbage
1 cup chopped cooked chicken breast
2 seeded chopped plum tomatoes
1/2 thinly sliced red bell pepper
1/2 thinly sliced yellow bell pepper
1/2 chopped avocado
1/3 cup crumbled tortilla chips
1/4 cup thawed frozen whole kernel corn
1/4 cup toasted pumpkin seeds or 1/4 cup pepitas
1/4 cup thinly sliced onion
1/2 cup crumbled queso anejo or 1/2 cup feta cheese

Steps:

  • For the vinaigrette, combine the shallots, lime juice, cilantro and garlic in a bowl and mix well. Whisk in the oil gradually. Season with salt and pepper. You may prepare up to 1 day in advance and store, covered, in the refrigerator. Bring to room temperature before serving.
  • For the salad, combine the lettuce, cabbage, chicken, tomatoes, bell peppers, avocado, tortilla chips, corn, pumpkin seeds and onion in a bowl and toss to mix. Drizzle with the vinaigrette and mix well. Sprinkle with the cheese.

10 ounces of mixed green salad, whatever your favorite blend is.
1 cup of Lime Cilantro Rice
1/2 cup Roma tomatoes
1/2 cup black beans, rinsed & drained
1/2 cup of sharp shredded cheese
3/4 cup of Cilantro Lime Dressing
1/2 cup corn
1/2 cup bell peppers, diced
1/4 cup red onions

Steps:

  • Layer the lettuce with rice, tomatoes, black beans & cheese. Top with any other optional items. Douse in dressing. I love this dressing and don't think you can ever have too much! Enjoy!
