CRANBERRY ORANGE CHICKEN - CROCK POT

OUT OF THIS WORLD! Tender and delicious! Flavor Galore! This is one of my favorite dishes. I have found that bone-in chicken gives more flavor. I use the following method for fall-off-the-bone chicken. After placing the lid on crock pot place a large double folded kitchen towel over top of lid letting it fall over sides of crock pot. This allows no steam to escape. The sauce in this dish makes good 'gravy' over cooked rice. Makes a pretty dish to serve guests.

3 chicken breasts (bone-in)
1 1/2 teaspoons salt
1 onion, chopped
1 celery rib, chopped
1 (15 ounce) whole berry cranberry sauce
3 ounces orange juice
1 teaspoon dry mustard
1/2 teaspoon cinnamon
2 teaspoons lemon juice
2 tablespoons honey
2 tablespoons brown sugar
3 tablespoons chili sauce or 3 tablespoons barbecue sauce
1 orange, sliced
1 tablespoon cornstarch
3 tablespoons cold water

Steps:

  • Rub salt onto chicken breasts and place in bottom of crock pot.
  • In a medium bowl place onion, celery, cranberry sauce, orange juice, dry mustard, cinnamon, lemon juice, honey, brown sugar and chili sauce. Stir and pour over chicken breasts.
  • Place lid on crock pot and top with kitchen towel using instructions in description above. (My crock pot is only 3 months old and I still do this.) Turn crock pot on high and allow to cook 1 hour. Turn on low for 3 or 4 hours. NOTE: I have tried leaving crock pot on high the entire time and this dish was done in 3 1/2 hours.
  • Lift lid and quickly place orange slices over chicken without stirring. Cook an additional hour.
  • Combine cornstarch and cold water. Add last 10 minutes of cooking time for thickening purposes.
  • Serve over cooked rice and enjoy!

1 teaspoon garlic powder
1 teaspoon poultry seasoning
1/2 teaspoon salt
1/8 to 1/4 teaspoon pepper
3-1/2 pounds bone-in chicken breast halves, skin removed
1 can (14 ounces) jellied cranberry sauce
1/2 cup chili sauce
1/4 cup Thai chili sauce
1/3 cup orange marmalade
4 teaspoons cornstarch
2 tablespoons cold water

Steps:

  • Combine the garlic powder, poultry seasoning, salt and pepper; rub over chicken. Transfer to a 5- to 6-qt. slow cooker. , In a small bowl, combine the cranberry sauce, chili sauces and marmalade; pour over chicken. Cover and cook on low until a thermometer reads 170°, 5-6 hours., Remove chicken to a serving platter; keep warm. Skim fat from cooking juices; transfer juices to a small saucepan. Bring to a boil. Combine cornstarch and water until smooth; gradually stir into cooking juices. Return to a boil; cook and stir until thickened, 2 minutes. Serve with chicken.

After not finding anything in terms of crock pot orange chicken on Zaar, I found this recipe at About.com, then made a couple of changes to suit my family's appetite and tastes. This produces a very strong, tangy sauce, which may be to some people's tastes and not quite to others. Give it a whirl and see if it's for you!

8 boneless skinless chicken breasts (defrosted)
1/3 cup all-purpose flour
2/3 cup orange marmalade
1/2 cup mustard
1/2 cup ketchup
2 tablespoons rice wine vinegar (I used regular wine vinegar)
2 tablespoons soy sauce
2 tablespoons brown sugar
1 tablespoon finely grated fresh ginger (I used ground ginger from a jar)
3 chopped scallions (I used chives)

Steps:

  • Cut chicken breasts into bite-size pieces. Place in the slow cooker.
  • Sprinkle flour over chicken and toss well to coat.
  • In a medium bowl, whisk together remaining ingredients. Pour over chicken. Cook on high 4 hours or low 6-8 hours.
  • Serve with rice.

Inspired by recipe #346249, but made my own by making fresh cranberry sauce. If using frozen cranberries, they do not need to be thawed; they can go right in the pot from the freezer. The sauce is delicious over rice or mashed potatoes. I like to use Reynolds Slow Cooker Bags to line my pot, and fold the top over before putting on the lid; this traps the steam inside, and makes cleanup much easier.

12 ounces fresh cranberries or 12 ounces frozen cranberries
1/2 cup orange juice
1/2 teaspoon mustard powder
1/2 teaspoon ground ginger
2 tablespoons sugar
2 tablespoons diced crystallized ginger (optional)
1 cup diced onion (1 medium)
1/2 teaspoon mustard powder
1/2 teaspoon cinnamon
2 teaspoons lemon juice
2 tablespoons honey
3 tablespoons Heinz Chili Sauce (use your favorite bottled sauce) or 3 tablespoons barbecue sauce (use your favorite bottled sauce)
1 lb boneless skinless chicken thighs
kosher salt
ground black pepper
1 orange, sliced and seeds removed
1 tablespoon cornstarch
3 tablespoons cold water

Steps:

  • In a small saucepan over medium-high heat, combine cranberries, orange juice, 1/2 tsp mustard powder, ground ginger, sugar and crystallized ginger, if using. Cook until most of the berries have popped and sauce is thick, about 10-15 minutes.
  • Remove from heat and stir in diced onion, 1/2 tsp mustard powder, cinnamon, lemon juice, honey and chili sauce.
  • Sprinkle chicken with salt and pepper. Place in slow cooker. Pour sauce over chicken. Cover and cook on low 6 hours or high 3 hours.
  • Add orange slices but do not stir. Cook on low another hour, or on high another 30 minutes.
  • Stir cornstarch into water. Drizzle into sauce in slow cooker. Cook another 10 minutes on high or until thick.

I was looking for something yummy and easy to make for a dinner party. I found this recipe in a Taste of Home cookbook. My guests devoured it! In place on fresh cranberries you can use frozen or dried as well.

1 cup fresh cranberries
3/4 cup onion, chopped
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
6 -8 chicken breasts or 6 -8 chicken thighs
1 cup orange juice
1 teaspoon orange peel, grated
3 tablespoons butter, melted
3 tablespoons flour
2 -3 tablespoons brown sugar

Steps:

  • In slow cooker, combine first five ingredients, and top with chicken.
  • Pour orange juice over chicken and top with orange peel. (if using dried cranberries add 1/4cup orange juice).
  • Cover and cook on low for 5-6 hours or until chicken is done according to a meat thermometer.
  • Remove chicken from cooker and cut into chunks. Set aside and keep warm.
  • Combine flour and butter until smooth, and add to slow cooker. Cook on high until thickened, about 20 minute
  • Add chicken and brown sugar to slow cooker and heat through.
  • Serve over cooked noodles.

EDITED TO ADD: The 6 hour cooking time is based on my very old crockpot, but I have noticed my newer crockpot cooks hotter, so 4 hours on low may be plenty.
