Cheesy fiesta potatoes are spiced Mexican potatoes served with a simple 2-ingredient nacho sauce and your choice of toppings. Make this Taco Bell copycat recipe to enjoy perfect crispy potatoes at home.

2 large Russet potatoes (peeled and diced (1 inch dice))
1 Tbsp baking soda
1 Tbsp kosher salt
2 Tbsp unsalted butter (melted)
2 Tbsp vegetable oil
1 tsp cumin
½ tsp garlic powder
8 oz Velveeta cheese
2-3 Tbsp pickling brine from a jar of jalapenos (plus additional to adjust consistency)
additional toppings: reduced fat sour cream, chopped green onion

Steps:

  • Heat oven to 450°F.
  • Put the potatoes in a pot and cover with water to an inch over the potatoes. Add the baking soda and salt.
  • Cover pot and bring to a boil. Uncover, reduce heat, and simmer 4-5 minutes (potatoes should not be cooked all the way). Drain potatoes well.
  • In a mixing boil, combine the butter, oil, cumin, and garlic powder. Add the par-boiled potatoes and gently toss to coat (a rubber spatula helps to not break up the potatoes).
  • Spread the potatoes in a single layer on a rimmed bake dish. Bake at 450°F for 10 minutes, gently give the potatoes a turn with a spatula, and bake an additional 10-15 minutes or until potatoes are cooked through and toasty crispy.
  • While potatoes are cooking, prepare the nacho sauce. Put the Velveeta and jalapeno brine in a saucepan and heat on low heat until melty smooth.
  • Serve the potatoes topped with nacho sauce, sour cream, and green onion.

4 large red potatoes, cut into 1-inch pieces
1/2 teaspoon salt (for boiling potatoes)
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
3 tablespoons canola oil
1/2 cup monterey jack cheese or 1/2 cup monterey jack pepper cheese
1/4 cup sour cream
1/2 cup prepared salsa
1 green onion, greens sliced thinly (optional for garnish)

Steps:

  • Boil potatoes in salted water until a knife can easily poke through them. Drain into a colander and let them steam off for about 5 minutes.
  • Heat oil in a large frying pan over medium to medium high heat and add potatoes.
  • Add seasonings to potatoes and cook until they are golden brown and the skins are crispy. About 10 minutes.
  • Plate potatoes and top with remaining ingredients.
  • Enjoy!

3/4 cup milk

2 cans (5 oz each) chunk breast of chicken, drained

Steps:

  • Heat oven to 400° F. Stir Sauce Mix, boiling water and milk with whisk in 2-quart casserole. Stir in Potatoes and remaining ingredients.

1/2 teaspoon garlic powder
1/4 teaspoon ground cumin
2 lbs large white potatoes, peeled and cut into 1 inch cubes
2 tablespoons butter
2 tablespoons olive oil
salt and pepper, to taste
1 1/4 cups cubed Velveeta cheese
1/4 cup of your favorite salsa
Tabasco sauce, to taste
1/2 cup sour cream, divided
1 green onion, chopped (green part only)

Steps:

  • Preheat oven to 475 degrees F.
  • In a Ziplock bag, mix the garlic powder and cumin together; add the cubed potatoes, seal the Ziplock, and toss it all together until potatoes are coated evenly.
  • In a large, heavy skillet over medium heat melt the oil and butter together.
  • Add the seasoned potatoes and cook, stirring frequently, until they're a nice, golden brown, about 10 minutes; cover and cook an additional 10 minutes or until potatoes are tender then season to taste with salt and pepper.
  • Transfer the sautéed potatoes to a non-stick baking sheet and bake at 475 degrees F for 10 minutes, stirring occasionally, until potatoes are nice and crisp.
  • When potatoes are almost done baking, place the cubed Velveeta, salsa, and Tabasco into a microwave-safe bowl (I use a large Pyrex measuring bowl) and microwave for 1 minute; stir and microwave another minute; stir again and microwave for 1 more minute, then stir until smooth.
  • For each serving, place some potatoes in a bowl, then pour over 1/4 of the melted Velveeta cheese sauce, top with some sour cream, then sprinkle with chopped green onion.

1 (32 ounce) frozen o'brien style hash browns
1 1/3 cups French's French fried onions, divided
1 cup shredded cheddar cheese, and 1 c jack cheese mixed then divided
1 (10 3/4 ounce) can cream of celery soup
1 (7 ounce) can mild green chilies, undrained (use less if you like it milder)
1 cup sour cream
2 eggs, beaten
1 tablespoon hot sauce (optional)

Steps:

  • Preheat oven to 400.
  • Layer potatoes, 2/3 c French Fried Onions and 1 cup of the mixed cheeses in 3 quart casserole.
  • Combine soup, chilies, sour cream, eggs and Frank's RedHot sauce in medium bowl. Pour over potatoes and onions in casserole.
  • Bake uncovered 45 minutes or until potatoes are cooked and mixture is set.
  • Remove from oven and sprinkle with remaining 1 c cheeses and 2/3 c onions.
  • Return to oven and bake 3 minutes more or until onions are golden brown.
  • Let stand 5 minutes before serving.

  • Main Taco Filling Selection: The most convenient big batch protein is Pork Carnitas because it freezes great and only requires a quick pan fry to freshen up, and stays good for several hours (tips are in Carnitas recipe notes). The Shredded Chicken and Beef are almost as good (pork is slightly juicier) and stored similarly. The next simplest is Fish Tacos because it's very quick to cook, then just put them in a serving dish and break into chunks with fork. If you want to use one of the chicken recipes to make ahead, use boneless thigh fillets, cook, then keep whole, cover and cool, reserve every drop of leached juice. Before serving, chop/slice, cover and microwave reheat.
  • Taco Fixings: I like to have at least one fresh thing to stuff in tacos (pickled cabbage is my choice in this Fiesta), + a sauce (the Restaurant Style Salsa,) + avocado in some form (guac or slices or in Pico de Gallo) + coriander/cilantro. Chopped white onion is very common in Mexico, and Tex Mex fans such as myself will almost always have sour cream and shredded cheese too!
  • Other Sides: Tortillas + things to stuff in tortillas usually makes for a satisfying meal in itself, but to round things out I usually provide a salad or vegetables of some form. Plain grilled corn is very on theme!

  • Peel and cube potatoes. One the water is boiling, add baking soda and potatoes and cook until fork-tender, around 10 minutes.
  • While the potatoes are boiling, gently heat olive oil in a small saucepan. Add crushed cumin seeds and peppercorns, cook over low heat for around 30 seconds. Add the garlic powder, 1 teaspoon ground cayenne pepper (set aside 1/2 teaspoon for later), and hot paprika, and cook for an additional 30 seconds, stirring constantly, and remove from heat.
  • Once the potatoes are cooked, drain and add to a large mixing bowl — but do not rinse! Add cornstarch and spiced oil, and toss until evenly coated. There should be a sticky, starchy coating on the outside of each potato cube.
