TOMATO RISOTTO
Once you master the risotto technique, you can make flavorful versions throughout the year. This summery version is based on red, ripe tomatoes from the garden, but if you want to up the tomato quotient, surround the finished dish with slices of multicolored heirloom varieties. Best as a first course or vegetarian main course, it could also pair with a main course - grilled fish, for instance.

Steps:
- Put 3 tablespoons olive oil in a heavy-bottomed saucepan over medium-high heat, then add the onion, and season generously with salt. Add pepper to taste, and cook until softened, about 5 minutes.
- Add the rice and cook the onions, stirring, until the onions are barely brown, about 2 minutes. Add red-pepper flakes, garlic, white wine and diced tomatoes, and cook until most of the liquid has evaporated, about 5 minutes more.
- Add 2 cups boiling water and adjust the heat to a brisk simmer. Cook for 5 to 6 minutes, stirring well with a wooden spoon every minute or so.
- When the liquid is absorbed, add remaining 1 cup water and continue to cook for another 5 minutes, until the rice is cooked, but the grains are still firm. Taste and adjust the seasoning, adding another splash of water if necessary to loosen the mixture. Turn off the heat, stir in the pecorino and 2 more tablespoons olive oil.
- Transfer to a low, wide serving bowl. Surround the rice with tomato slices and season them with salt and pepper. Sprinkle with parsley and basil. Pass more grated cheese at the table.
CREME FRAICHE RISOTTO WITH HEIRLOOM TOMATOES AND BASIL

- Place a large saucepan or small pot, (around 9″ in diameter) over medium heat.
- Add the olive oil and minced shallot to the pan and sauté until the shallot is tender.
- Add the aborio rice to the pan and sauté until the rice turns slightly translucent. Then, begin to add the water in 1/2 cup increments. Stir vigorously for 30-45 seconds every few minutes, adding an additional 1/2 cup water only when the rice has completely absorbed it's liquid.
- While the risotto cooks, prepare the tomato topping by mixing together the tomatoes and slivered basil together in a bowl. Set the mixture aside until the risotto has finished.
- Continue adding water in 1/2 cup increments and stirring the risotto until it's tender, about 20 minutes. You may need more or less water than is called for in this recipe due to varying circumstances like the rate of evaporation. You'll know the risotto is done when it's doubled in size and the rice is tender, but with a small speck of white remaining in the center of the grain when you bite into it, (al' dente just like pasta).
- When the risotto is finished take it off the heat and stir in the creme fraiche. Add additional sea salt to taste. This step is important because it will be very bland if you don't add additional sea salt!
- Plate the risotto by spooning some into a pasta bowl, top with a generous amount of the tomato mixture, drizzle with olive oil, and sprinkle with a finishing sea salt (see the notes about finishing salt).
- Serve immediately.

- Heat shallow saucepot over medium heat.
- Melt 2 Tb of butter in pot.
- Toast Arborio rice for two to three minutes.
- Re-glaze with white wine.
- Reduce wine until it's completely gone/.
- Add chicken stock, two cups at a time, waiting until stock is totally absorbed before adding the next two cups.
- After last two cups of stock are addeds, add cream and cheese and continue to cook until mixture begins to thicken.
- Be sure you are stitting often with spatula to avoid sticking.
- When mixture is thick, add tomatoes, asparagus, leeks, basil, tarragon, and pepper.
- If risotto seems to thickened, thin out with a little more stock.
- Cook for one to two more minutes, making sure not to break up the tomatoes.
- Finish with last tablespoon of butter.

- In a 2-qt saucepan over medium heat, melt 1 tbsp butter. Add onions and cook until soft - about 4 to 5 minutes. Add garlic and cook 2 minutes. Add rice and stir to coat for 1 minute. Stirring constantly, add 1/2 cup of simmering chicken broth. As rice absorbs the liquid, continue to add broth, 1/4 cup at a time, until you've added 3 cups, about 15 minutes. Reduce heat to low and cook rice for an additional 20 to 30 minutes until tender, stirring occasionally. If rice starts to dry out, stir in more broth.
- When rice is done, remove pan from heat. Let stand for 5 minutes. Stir in remaining butter and cheese. Fold in all but 3 tablespoons tomatoes. Season with sat and pepper to taste. Divide risotto evenly among 6 bowls. Garnish each bowl with remaining tomatoes and basil.

This is a favorite around our place. Best when you can use fresh sun-ripened tomatoes with lots of flavor and nice red color. Requires lots of hands-on time, but definitely worth it. This comes from a cookbook called "Risotto" which contains all vegetarian recipes.

- Heat the stock in a saucepan until almost boiling, then reduce heat until barely simmering to keep it hot.
- Heat the butter and oil in a deep skillet or heavy bottomed saucepan over medium heat.
- Add the shallots and cook for 1-2 minutes, until soft but not browned.
- Add the garlic.
- Add the rice and stir with a wooden spoon until the grains are well coated and glistening, about 1 minute.
- Pour in the wine and stir until it has been completely absorbed.
- Add 1 ladle of hot stock and simmer, stirring until it has been absorbed.
- Repeat.
- After 10 minutes, add the tomatoes. Continue to add the stock at intervals stirring as before, until the liquid has been absorbed and the tomatoes and rice are tender, but still firm.
- Reserve the last ladle of stock.
- Add the reserved stock, parmesan, basil, salt and pepper.
- Mix well.
- Remove from heat, cover and let rest for 2 minutes.
- Sprinkle with additional parmesan when serving.

- Preheat the oven to 180 deg C.
- Then melt the butter with the oil in a heavy-based pan and fry the shallot until soft (but not coloured) i.e. for about 5-10 minutes should be great.
- Next, as you turn the heat up slightly, add the rice and stir to coat it thoroughly with the buttery juices.
- Add the puree and the tomatoes and stir well.
- Add a ladle of stock and allow that to bubble!
- Then add the rest of the stock and bring up to a simmer.
- Stir once, transfer to a warm ovenproof dish and put it (uncovered) in the middle of the oven.
- After 10 minutes, remove it and stir once.
- Return to the oven for 10 minutes.
- When the risotto is ready, take it out, stir in the cheese and basil.
- Season and leave to stand for a few minutes before serving.

- Combine tomatoes, with 1 Tbsp olive oil, red wine vinegar and a pinch of salt and pepper, allow to pickle for 20 minutes.
- Add 1 Tbsp of olive oil to a frypan on medium heat and caramelize the corn kernels for 2-3 minutes or until golden. Remove corn and in the same pan cook the slices of zucchini for a minute on each side or until golden.
- In a blender, blitz the ricotta with half the mint for 30 seconds or until light and airy.
- To serve spread some ricotta down on a board, layer with corn, tomatoes, and zucchini and finish with fresh mint, radish and toasted pecans. Drizzle with olive oil and season with salt and pepper before serving.
SUN-DRIED TOMATO RISOTTO
To rehydrate the tomatoes, place in a bowl and cover with warm water. Leave the tomatoes in the water until they have plumped up, about 20 minutes. Strain the tomatoes and save the water to add to the risotto with the chicken stock for added flavor. Points 7.

- Heat the stock in a saucepan and keep hot over low heat.
- Heat the olive oil over medium heat in a separate medium-sized pot.
- Add the onion and cook until it turns translucent, about 5 minutes.
- Add the garlic and cook 1 minute more.
- Add the rice to the onion mixture, stir and turn the heat to low.
- Add about 1 cup of the hot stock to the rice mixture, and stir slowly until the stock is absorbed.
- Continue to add the stock 1 cup at a time, stirring slowly, letting the rice absorb the stock before adding more.
- The risotto is cooked when it is creamy on the outside and slightly firm (al dente) in the center, about 20 to 25 minutes in all.
- Stir in half of the Parmesan cheese and half of the sun-dried tomatoes.
- Season with salt and pepper to taste.
- If the risotto is too thick, add a little more stock until it becomes creamy.
- Divide the risotto into serving dishes and sprinkle with the remaining cheese and sun-dried tomatoes.

- Bring a pot of water to boil. Cut a shallow "X" in the bottom of each tomato and place the tomatoes in the water. Cook 30 seconds, remove and rinse under cold water. - Add the rice to the onion and stir it gently for 2 or 3 minutes. Pour in the wine and stir immediately as it is absorbed.
