1 small onion, chopped
1 clove garlic, minced
1 lb. cooked boneless skinless chicken breasts, shredded
1 cup TACO BELL® Thick & Chunky Salsa, divided
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 Tbsp. chopped fresh cilantro
1 tsp. ground cumin
1 cup KRAFT Shredded Cheddar & Monterey Jack Cheeses, divided
8 flour tortillas (6 inch)

Steps:

  • Heat oven to 350°F.
  • Cook and stir onions and garlic in large skillet spayed with cooking spray on medium heat 2 min. Add chicken, 1/4 cup salsa, cream cheese, cilantro and cumin; mix well. Cook 5 min. or until heated through, stirring occasionally. Add 1/2 cup shredded cheese; mix well.
  • Spoon about 1/3 cup chicken mixture down center of each tortilla; roll up. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray; top with remaining salsa and shredded cheese.
  • Bake 15 to 20 min. or until heated through.

I can't take the credit for this recipe but it's really good and quick and easy to make.....it was discovered in a cookbook I bought from our school to help out with a classmate of my daughter who has CF (the classmate not my daughter) the cookbook is called:Country Cookin,For a Cure great fundraiser they done here and has lots of great recipes!

2 (10 ounce) cans mild enchilada sauce (I use one of the green sauce and one red sauce)
2 cups chopped cooked chicken, you can buy the already chicken in the cans to save time
1/2 cup sour cream
2 (4 ounce) cans chopped green chilies, undrained
1/3 cup chopped green onion
1/4 teaspoon salt
2 cups shredded monterey jack cheese
10 flour tortillas (6-7")

Steps:

  • Preheat oven to 350 degrees.
  • Pour 1 can of enchilada sauce in a 9by13 inch baking dish.
  • In a large bowl,combine chicken,sour cream,chilies,onions and salt.
  • Stir in one cup of cheese.
  • Spoon about 1/3 cup of chicken mixture down the center of each tortilla.
  • Roll up tortillas and place seam side down in prepared baking dish.
  • Pour remaining can of enchilada sauce over top;sprinkle with remaining one cup of cheese.
  • Bake uncovered 30 minutes or until cheese is melted and enchiladas are heated through.
  • Serves 6-6 I have doubled this recipe before- experiment around with the enchilada sauce-- I prefer one can of green sauce and 1 red sauce-- but you can use whatever you like-- also you can add more cheese on the top-- these really are yummy!
  • hope ya like them-- also you can use the hot enchilada sauce instead of the mild, we just use the mild because of my kids-- they love this recipe-- not to spicy for them.

These are excellent enchiladas. Yes, there really is spinach in them! They are very rich and very filling, you will be stuffed. My husband and I got them from my sister-in-law. My husband raved about them and then told me there was spinach in them and wanted me to try them. I told him he was crazy. Well I tried them and they are so good, and I don't even like spinach and he doesn't either. You have to try these!!! You will love them!

16 ounces sour cream
8 ounces cream cheese (you can use 1/3 less fat, it still taste great)
10 ounces frozen chopped spinach, thawed and patted dry (you will use lots of paper towels to get all the water off of them)
4 boneless chicken breasts (or you could use 1 whole chicken, deboned)
1 1/4 ounces taco seasoning (or 1-2 tablesppons of homemade taco seasoing which is what I use)
flour tortilla
2 (10 ounce) cans enchilada sauce
shredded cheese (fiesta blend or your choice)

Steps:

  • Boil chicken or bake in oven until fully cooked. Then shred.
  • Drain spinach and use paper towels to towel dry.
  • Mix sour cream, cream cheese, taco seasoning, spinach and chicken.
  • Lay tortillas flat and fill with mixture. Fold and roll. Put all enchiladas in 9 X 13 pan. Cover with enchilada sauce.
  • Bake at 350 for 20-30 minutes. Pull out of oven, top with cheese. Put pan back in oven until cheese is melted.
  • Enjoy! ** Remember these are very filling!

I've been making this recipe on an off for years. First found it on the back of a tortilla packet. I've tweaked it a few times now. If you want you can add a small can of chicken, or a cooked chicken breast shredded up. I've done this and it goes well. I use Texas Red Enchilada Sauce Recipe #42094.

1/2 cup sliced spring onion
4 garlic cloves, minced
1 tablespoon butter or 1 tablespoon margarine
10 ounces frozen chopped spinach, thawed and drained
1 cup cottage cheese or 1 cup ricotta cheese
1 cup sour cream
1 1/2 cups shredded monterey jack cheese
10 corn or 10 flour tortillas
1 (10 ounce) can mild enchilada sauce (or make your own, yum!)

Steps:

  • Pre heat oven to 375°F In a medium size sauce pan cook onions and garlic in butter for 2 minutes, add spinach.
  • Cook for 3-4 minutes stirring occasionally.
  • Remove from heat.
  • Stir in cottage cheese, sour cream, 1c of shredded cheese.
  • The tortillas need to be gently warmed so that they will not crack when you roll them up.
  • Spoon about 1/4 cup filling down center of each tortilla and roll up.
  • Place seam side down in 13"x9" baking dish.
  • Top with enchilada sauce and remaining cheese Bake for 15-20 minutes until bubbly.
  • I suggest serving with shredded lettuce, chopped tomatoes, sliced black olives and additional sour cream and chopped spring onions!

A friend of mine ordered corn enchiladas while we were out to lunch last weekend. I wasn't in the mood for it at the time but later that day I though it seemed like the perfect way to use some of the Hatch chile I have in the freezer. I had some left over spinach so I decided to throw that in as well.

1 tablespoon olive oil
1 large yellow onion, diced
1/2 teaspoon salt
1 teaspoon black pepper
1 (16 ounce) package frozen sweet corn
1/2 cup roasted hatch new mexico green chili pepper, diced (leave the seeds in if you want extra heat)
1 bunch spinach
1 (8 ounce) package light cream cheese, softened
1 (8 ounce) package light sour cream (reserve half for topping after baked)
1 -2 tablespoon fresh cilantro, finely chopped (this is about a handful unchopped)
1 teaspoon ground cumin
1 teaspoon garlic powder
1/2 teaspoon salt
12 corn tortillas
1 (16 ounce) jar green tomatillo sauce
12 ounces monterey jack cheese, shredded

Steps:

  • Saute onion in large skillet until soft. Add salt and pepper to onion while sauteing. In a large bowl, defrost corn in microwave and drain well. Return to large bowl.
  • Add diced Hatch chile to corn.
  • Add spinach to sauteing onions and cook down, about 5 minutes.
  • Add softened cream cheese, 4 oz of sour cream, chopped cilantro, cumin, garlic powder, salt, and onion / spinach mixture to corn and Hatch chile and mix well.
  • Lightly grease 9x13 baking dish with olive oil.
  • Fill each tortilla with 2 or 3 large spoonfuls of corn / spinach mixture. Roll tortillas and line in baking dish. (It may help to warm tortillas in kitchen clothes for 30 seconds in the microwave to ease rolling. Also, I was able to fit 8 across and 4 down in my baking dish.).
  • Add tomatillo sauce to cover rolled enchiladas and cover with cheese.
  • Bake at 350 for about 30 minutes or until brown on top.
