Tacos and pasta come together in this zesty dish my family demands. It's cheesy, a tad spicy, and you can ring that dinner bell in no time. -Amber Willard, Slinger, WI

Number Of Ingredients 8

3-1/2 cups uncooked egg noodles
1 pound lean ground beef (90% lean)
1 small onion, chopped
1 can (10-3/4 ounces) condensed nacho cheese soup, undiluted
1 cup mild salsa
1/2 cup water
1 teaspoon taco seasoning
1 cup shredded Monterey Jack cheese

Steps:

  • Cook egg noodles according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat 6-8 minutes or until meat is no longer pink, breaking into crumbles; drain. Stir in condensed soup, salsa, water and taco seasoning., Drain noodles; stir into skillet and heat through. Sprinkle with cheese. Remove from heat. Let stand, covered, 1-2 minutes or until cheese is melted. Freeze option: Freeze cooled noodle mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

Cheesy fiesta beef nacho Hamburger Helper™ makes a perfect base for a huge platter of nachos for your next big sports viewing event. Serve with your favorite chips, and watch the disappearing act!

1 lb lean (at least 80%) ground beef
1 box Ultimate Hamburger Helper™ cheesy fiesta beef nacho
Milk and hot water called for on Hamburger Helper box
1/2 cup canned black beans, drained
1/2 chopped seeded tomato
1 small avocado, pitted, peeled and cubed
1/4 cup sliced green onions (4 medium)
Sour cream, if desired
Tortilla chips, as desired

Steps:

  • Make Ultimate Hamburger Helper as directed on box.
  • Spoon half of meat mixture onto large serving platter. Sprinkle with half each of the black beans, tomato, avocado and green onions. Repeat layers. Top with dollops of sour cream. Arrange tortilla chips around edge of platter.

1 pound ground beef
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes with mild green chiles
1 can (10 ounces) enchilada sauce
1 teaspoon ground cumin
4 tablespoons chopped fresh cilantro or parsley, divided
1-1/2 cups biscuit/baking mix
1-1/2 cups shredded Colby-Monterey Jack cheese, divided
4 bacon strips, cooked and crumbled
2/3 cup 2% milk
1 large egg, lightly beaten
Sour cream, optional

Steps:

  • Preheat oven to 400°. In a 10-in. cast-iron or other ovenproof skillet, cook beef over medium heat until no longer pink, breaking into crumbles, 5-7 minutes; drain. Stir in beans, tomatoes, enchilada sauce and cumin; bring to a boil. Reduce heat; simmer, uncovered, 20 minutes to allow flavors to blend, stirring occasionally. Stir in 2 tablespoons cilantro., In a bowl, combine baking mix, 1/2 cup cheese, bacon and remaining cilantro. Add milk and beaten egg; stir just until a soft dough is formed. Spoon over beef mixture., Bake, uncovered, until golden brown, 13-15 minutes. Sprinkle with remaining cheese; bake until cheese is melted, 2-3 minutes longer. Let stand 10 minutes before serving. If desired, serve with sour cream.
