My husband grew up with this meal and still loves it! Kid-friendly and can add or subract ingredients without losing much flavor. We make this all the time.

1 lb ground beef
1/4 cup diced onion
1/2 cup chopped green bell pepper
1 teaspoon chili powder
1/4 teaspoon pepper
1 teaspoon salt
1 (14 ounce) can diced tomatoes
1 (14 ounce) can corn
1 beef bouillon cube
1 cup water
1 cup Minute Rice (uncooked)

Steps:

  • Dissolve the beef boullion cube in the 1 cup of water.
  • Brown beef and drain.
  • To the beef, add onion, green pepper, seasonings, tomatoes, corn, and bullion with water.
  • Bring to a boil.
  • Stir in rice and remove from heat.
  • Cover.
  • Let stand 5 mintues, fluff with fork.

3 tablespoons ground cumin
1 tablespoon garlic salt
1 teaspoon chili powder
2 teaspoons black pepper
4 rib eye steaks
2 tablespoons olive oil
1 red pepper, sliced
1 green pepper, sliced
1/2 cup cheddar cheese, shredded
1/4 cup monterey jack cheese, shredded
1 lime, juice of
1 cup salsa
1 cup sour cream
4 tablespoons cilantro, chopped

Steps:

  • Mix first 4 ingredients together. Place steaks in a glass pan and rub spice mixture into both sides of the meat. Cover with plastic wrap and refrigerate for 2 to 8 hours.
  • Just before grilling the steaks, in a skillet sauté peppers in oil for a few minutes. Season with salt and pepper. Set aside. Grill steaks to your liking.
  • Sprinkle with both cheeses. Top with peppers.
  • Squeeze fresh lime juice op top.
  • Serve with salsa, sour cream, and cilantro. Great with tortillas and beans.

8 flour tortillas

Steps:

  • Sprinkle 3/4-inch thick beef steaks with lime juice. Place steaks on grid over medium, ash-covered coals. Grill steaks, uncovered, 6 to 8 minutes formedium-rare to medium doneness, turning occasionally.
  • Top steaks with cheese. Serve with tortillas and salsa.

PAN-FRIED RIB-EYE STEAK

Serve beef rib meat at least medium-rare, if not medium, to cook the fat running through it. This gives the meat lots of flavour - great with a red wine sauce

2 rib-eye steaks, each about 200g and 2cm thick
1tbsp sunflower oil
1 tbsp/25g butter
1 garlic clove, left whole but bashed once
thyme, optional

Steps:

  • Up to 8 hrs before cooking, pat the steaks dry with kitchen paper and season with salt and pepper. Heat the oil over a high flame in a heavy-based frying pan that will comfortably fit both steaks. When the oil is shimmering, turn the heat down to medium-high and add the butter. Once it's sizzling, carefully lay the steaks in the pan, tucking the garlic and herbs in at the sides.
  • Stand over the steaks with a pair of tongs, searing and turning them every 30 seconds to 1 min so they get a nice brown crust. As a rough guide, each steak will take 4 mins in total for rare, 5-6 mins in total for medium and 8-10 mins for well done. If you have a digital cooking thermometer, the temperatures you're looking for in middle of the steak are 50C for rare, 60C for medium and 70C for well done. Leave the steaks to rest for at least 5 mins. While the steaks are resting, you can make a classic red wine sauce to go with them.

1/3 cup hot water
3 tablespoons finely chopped onions
2 tablespoons cider vinegar
2 tablespoons olive oil or 2 tablespoons vegetable oil
2 tablespoons soy sauce
1 teaspoon beef bouillon granules
1 garlic clove, minced
1/2 teaspoon paprika
1/2 teaspoon fresh coarse ground black pepper
2 (12 ounce) rib eye steaks (about 1 inch thick)

Steps:

  • In a bowl, combine the first nine ingredients.
  • Remove 1/2 cup marinade and refrigerate.
  • Pierce steaks several times on both sides with a fork; place in an 11X7 glass dish.
  • Pour remaining marinade over steaks; turn to coat.
  • Cover and refrigerate overnight.
  • Remove steaks, discarding marinade.
  • Grill, uncovered, over medium-hot heat for 4-8 minutes on each side or until the meat reaches desired doneness (for rate, a meat thermometer should read 140 degrees; medium 160, well done 170).
  • Warm reserved marinade and serve with steaks.

  • Remove steaks from marinade; discard marinade. Season evenly with remaining 1/2 teaspoon pepper. Spray ridged grill pan or large nonstick skillet with nonstick cooking spray. Heat over medium heat until hot. Place steaks in pan; cook 12 to 15 minutes for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Season with salt, as desired.
