One time I accidentally bought hot Italian sausage, but wanted to find a way to use it anyway. I tossed it in the slow cooker with mushrooms, tomatoes and wine, which helped to mellow out the heat. Now I buy the hot stuff on purpose! -Judy Batson, Tampa, Florida

2 teaspoons canola oil
8 hot Italian sausage links
1/2 pound sliced fresh mushrooms
1 small sweet onion, chopped
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes with mild green chiles, undrained
1/2 cup beef stock
1/2 cup dry white wine or additional stock
1 package (12 ounces) fettuccine or tagliatelle
Grated Parmesan cheese, optional

Steps:

  • In a large skillet, heat oil over medium heat; brown sausages on all sides. Transfer to a 3-qt. slow cooker, reserving drippings in pan., In same skillet, saute mushrooms and onion in drippings over medium heat until tender, 4-5 minutes. Stir in garlic; cook and stir 1 minute. Stir in tomatoes, stock and wine; pour over sausages. Cook, covered, on low 6-8 hours (a thermometer inserted in sausages should read at least 160°)., To serve, cook fettuccine according to package directions; drain. Remove sausages from slow cooker; cut into thick slices., Skim fat from mushroom mixture. Add fettuccine and sausage; toss to combine. Serve in bowls. If desired, top with cheese.

Unsalted butter, for the baking dish
One 24-ounce jar marinara sauce
3 cups beef broth
1/4 cup tomato paste
4 cloves garlic, grated
Kosher salt and freshly ground black pepper
1 pound uncooked rigatoni
1 pound Italian sausage, casings removed
3/4 cup ricotta
2 cups shredded mozzarella

Steps:

  • Preheat the oven to 425 degrees F. Generously grease the bottom and sides of a 9-by-13-inch casserole dish with the butter.
  • Stir together the marinara, beef broth, tomato paste, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl.
  • Spread half the pasta in an even layer in the bottom of the prepared dish. Break the sausage into pieces and scatter half on the pasta. Dollop with half of the ricotta. Pour half of the marinara mixture over the top. Repeat with a second layer of pasta, sausage, ricotta and the marinara mixture.
  • Cover with aluminum foil and bake until the pasta is al dente, about 50 minutes.
  • Uncover and sprinkle the mozzarella on top. Bake uncovered until the mozzarella is melted and bubbly, about 10 minutes.

3 lbs sweet Italian sausage, cut into 2 inch lengths
2 medium onions, chopped
8 large garlic cloves, minced
2 tablespoons tomato paste
1/2 cup red wine
1 (28 ounce) can crushed tomatoes
1 (28 ounce) can diced tomatoes
1 (15 ounce) can petite diced tomatoes
1 tablespoon dried oregano
1 teaspoon salt

Steps:

  • Heat olive oil on medium-high heat in a large dutch oven.
  • Add half of italian sausage and saute until golden brown.
  • Remove cooked sausage and repeat with remaining sausage.
  • Remove all sausage and set aside.
  • Add chopped onions and minced garlic to pot. Turn heat to medium low and saute 5 minutes.
  • Add tomato paste and saute until onions develop nice golden color. Stir frequently and WATCH CAREFULLY to make sure the tomato paste doesn't burn.
  • Once the onions are golden, add the wine and stir, incorporating all of the brown bits from the bottom of the pan. Let simmer for 5 minutes.
  • Add all remaining ingredients and browned sausage to pot and stir well.
  • Turn heat to medium low and simmer 45 minutes.

3 tablespoons butter
1 medium onion, diced (about 1 1/2 cups)
1 medium carrot, diced
4 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried crushed red pepper flakes
2 (28-ounce) cans diced tomatoes
1 dried bay leaf
2 teaspoons sugar
Kosher salt
1 pound bucatini pasta or thick spaghetti
12 ounces ricotta cheese, room temperature
1/2 cup julienne fresh basil leaves, for garnish
Grilled Sweet Italian Sausage, recipe follows
8 links sweet Italian sausage

Steps:

  • Heat butter in a large saucepan over medium-high heat. Once melted, add the onion and carrot and saute until golden, about 7 minutes. Add the garlic, oregano, and red pepper flakes and cook 1 more minute. Add the tomatoes with their juice, bay leaf, sugar, and 2 teaspoons salt and bring to simmer. Reduce heat to medium-low and continue to cook, stirring occasionally, about 30 more minutes.
  • Prepare pasta while sauce simmers. Bring a large pot of generously salted water to a boil. Add the pasta and cook according to the package directions until al dente, about 12 minutes. Drain.
  • Remove sauce from heat, remove bay leaf, and carefully blend, in batches, to break up large pieces. Mix sauce with pasta. Serve individual portions topped with a heaping tablespoon of ricotta and garnish with basil.
  • Cut each link evenly in half lengthwise. Heat a grill pan over medium-high heat until hot. Place the sausage cut side down and cook, turning on all sides for even browning, until cooked through, about 10 minutes. Serve as an accompaniment with the bucatini marinara.

2 tablespoons olive oil
3 shallots, chopped
2 large garlic cloves, chopped
1 pound sweet Italian sausages, casings removed
1 cup whipping cream
2 14.5-ounce cans diced tomatoes in juice with Italian seasonings
1 tablespoon dried sage
1/2 teaspoon dried crushed red pepper
3/4 pound fettuccine
1/2 cup grated Parmesan cheese

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add shallots and garlic and sauté until beginning to soften, about 3 minutes. Add sausages and sauté until no longer pink, breaking up with back of fork, about 5 minutes. Add cream; simmer 5 minutes. Add tomatoes with juices, sage and crushed red pepper. Simmer until sauce thickens, stirring occasionally, about 15 minutes.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain pasta, reserving 1/2 cup cooking liquid.
  • Return pasta to same pot; add sauce. Toss over medium heat until sauce coats pasta, adding reserved cooking liquid by 1/4 cupfuls if mixture is dry. Season with salt and pepper. Transfer to bowl; sprinkle with cheese and serve.

I'm posting this in response to someone had 3 chicken breasts and wanted a quick and easy recipe that would feed 5. This will feed five, but they will be fighting over the leftovers (if there are any!).

2 cloves garlic, minced
1 small onion, chopped
2 teaspoons rosemary
1 teaspoon basil

2 (14 ounce) cans delmonte chunky style stewed tomatoes
8 ounces pasta (my favorite is pasta ruffles)
1/8 cup parmesan cheese

Steps:

  • In large, heavy skillet, heat the oil over medium heat until it is hot but not smoking.
  • Add the garlic and onions; sauté until golden-- about 3 to 4 minutes.
  • Add spices and chicken chunks; cook through--about 10 minutes.
  • Add stewed Italian style tomatoes to chicken/Marinara sauce.
  • Simmer while cooking pasta according to package directions.
  • Toss Marinara sauce gently with cooked pasta; serve immediately, sprinkled with Parmesan cheese.

Yes, I know there are other tomato sausage pasta recipes here, but this one is a bit different and by far my favourite! The semi sundried tomatoes and sage add a lot of flavour; any pasta can be used. This is based on a recipe from "Super Food Ideas" - we love it at my house, hope you do too!

1 tablespoon olive oil
4 -6 spicy sausage (such as chorizo)
2 -4 cloves garlic, crushed
1 (400 g) can crushed tomatoes
3/4 cup semi sun-dried tomato, roughly chopped
60 ml dry white wine
300 ml cream (can use lite)
6 spring onions, chopped
2 tablespoons chopped sage leaves or 2 teaspoons dried sage
400 g fettuccine or 400 g pasta, of choice

Steps:

  • Heat olive oil in frying pan, cook sausages for 8-10 minutes or until cooked through.
  • Remove from pan and chop roughly, cover to keep warm.
  • Return pan to medium heat and add garlic, crushed and sundried tomatoes, white wine and cream and bring to the boil.
  • Reduce heat to low and simmer, uncovered for 10 minutes or until sauce thickens slightly.
  • Meanwhile, cook pasta according to package directions, drain.
  • Stir cooked sausage, spring onions and sage through sauce, season to taste.
  • Divide pasta among serving bowls and spoon over sauce.

4 cups uncooked spiral pasta
1/2 pound fresh mushrooms, sliced
1 large onion, chopped

1 jar (26 ounces) meatless spaghetti sauce
1 tablespoon dried basil

2 teaspoons olive oil
1 pound mild Italian sausage
1 cup chopped onion
½ cup white wine
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes with garlic
1 (6 ounce) can tomato paste
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat oil in a large, deep skillet. Place sausage and onion in the skillet and cook over medium high heat until evenly brown. Drain excess fat. 1 lb Italian sausage, removed from casings
1 lb savoy cabbage, cooked and chopped into bite-size pieces

Steps:

  • Heat oil and garlic in a large sauté pan over medium heat.
  • Add crumbled sausage, and sauté until meat is cooked.

  • Stir in Marinara Sauce, and cook for 5 minutes, until flavors have blended.

  • Stir for one minute over high heat, then place sauced pasta on serving platter and pour remaining sauce on top.
