- Heat water for cooking fettuccine to boiling. Meanwhile, in 12-inch skillet, cook sausage over medium-high heat 5 to 7 minutes, stirring occasionally, until no longer pink; drain if necessary.
- Stir tomatoes, tomato sauce and olives into sausage. Reduce heat to low. Cover; cook 10 to 15 minutes, stirring occasionally, to blend flavors.
- Cook and drain fettuccine as directed on package. Serve sauce over fettuccine. Sprinkle with cheese.

Steps:
- Bring a large saucepan of water to a boil. (If desired, add a little salt to the boiling water to season it.).
- Add the pasta and cook till just tender. Drain well.
- Cook sausages in a dry pan over medium heat, turning regularly, for at least 10 minutes, or until browned and cooked through. Drain on absorbent paper and cut sausages into 1 cm slices.
- Heat oil in a saucepot and add the mushrooms and garlic. Cook, stirring constantly, for at least 2 minutes or until the mushrooms have softened.
- Add the sliced sausage, olives, lemon rind, lemon juice, parsley and cream.
- Allow it to simmer, stirring occasionally, for about 10 minutes or until reduced by one-third.
- Add pasta and cook, stirring occasionally, for about 3 minutes or until the pasta is heated through.

ITALIAN SAUSAGE PUTTANESCA
I love the savory taste combo of kalamata olives and capers--can't get enough of it. If you aren't up for the heat, use mild Italian sausage or cut the fat with Turkey Italian sausage. If you want it a bit spicier--add a bit of crushed red chile flakes. I think the overall flavor is fairly mild and will probably add more capers and kalamata olives next time I make it.

Steps:
- Cook pasta according to package directions.
- Drain well.
- Meanwhile, remove casings from sasage and saute with onion, pepper and garlic over medium-high heat, stirring and crumbling sausage until sausage is done and vegetables softened (about 7 or 8 minutes).
- Remove from heat and drain off fat.
- Add tomatoes, olives, tomato paste, capers and anchovy paste to pan and bring to a boil. (I like to give the tomatoes a couple of pulses in the food processor to break them up a little).
- Reduce heat and simmer for 5 minutes.
- Remove from heat.
- Add pasta and stir to combine.
- Spray 8-inch square casserole dish with non-stick spray.
- Spoon mixture into casserole and sprinkle evenly with Parmesan cheese.
- Bake at 400°F for about 15 minutes until cheese melts and begins to brown.

- Warm the oil in a large skillet over medium-high heat. Add the sausage and rosemary; cook, breaking up the meat with a fork, until browned and cooked through, 5 to 7 minutes. Add the garlic, cook 1 minute. Add the tomatoes and stir occasionally until they have broken down and turned into a sauce, 10 to 15 minutes. Stir in the olives for the last 5 minutes of cooking. Add salt to taste, cover and keep warm.
