GREEK SALAD

Greek salad image

The key to this beautiful authentic Greek salad is bold flavours from super-fresh ingredients

Provided by Jamie Oliver

Categories     Quick fixes     Jamie Does...     Vegetables     Alfresco     Greek     Feta     Tomato

Time 15m

Yield 4

Number Of Ingredients 13

1 medium ripe tomato
200 g ripe cherry tomatoes
1 beef tomato
1 medium red onion, peeled
1 cucumber
1 green pepper
1 handful fresh dill
1 handful fresh mint leaves
1 large handful black olives, stoned
1 tablespoon red wine vinegar
3 tablespoons good-quality Greek extra virgin olive oil
200 g block feta cheese
1 teaspoon dried oregano

Steps:

  • I think it's quite nice to have different shapes and sizes in a salad, so cut your medium tomato into wedges, halve the cherry tomatoes and slice the beef tomato into large rounds. Put all the tomatoes into a large salad bowl. Slice the onion very finely so it's wafer thin and add to the tomatoes. Scratch a fork down the sides of the cucumber so it leaves deep grooves in the skin, then cut it into thick slices. Deseed your pepper, slice it into rings and add them to the salad along with the cucumber.
  • Roughly chop the dill and most of the mint leaves, reserving the smaller ones for garnish. Add the chopped herbs to the bowl of salad, then squeeze your handful of olives over so they season the vegetables, then drop them in.
  • Add a pinch of sea salt, the vinegar and the extra virgin olive oil. Quickly toss everything together with your hands. The minute all those flavours start working with the veg is when the magic starts to happen. Have a taste, and adjust the flavours if need be.
  • To serve, pop the block of feta right on the top of the salad. Sprinkle the oregano over the top along with the reserved mint leaves, drizzle with extra virgin olive oil and take it straight to the table. It's confident and scruffy with a bit of attitude. Delicious.
  • PS I've been known to pop leftover Greek salad into a liquidizer with a splash of extra virgin olive oil and a few ice cubes, then blitz it up to a smooth consistency so it's basically a Greek gazpacho. It's not a classic thing to do, but it is very delicious, not to mention a great way of using up leftovers!

GREEK SALAD RECIPE

Greek Salad Recipe image

This Greek Salad Recipe with Feta is a winner! Fresh cucumbers and tomatoes tossed in a simple vinaigrette, sprinkled with crumbled feta. It's so easy and is the perfect last minute side dish for dinner or summer barbecues.

Provided by Karen

Categories     Salad

Time 20m

Number Of Ingredients 14

1/4 large red onion (sliced thin)
4 large tomatoes (chopped)
1 medium English Cucumber (chopped)
1 cup kalamata olives
1/4 cup fresh mint (chopped)
1/4 cup fresh dill (chopped)
1-2 cups feta cheese (crumbled or chopped)
3 & 1/2 tablespoons red wine vinegar
2 small cloves garlic (minced)
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon sugar
1 teaspoon dried oregano
1/3 cup olive oil

Steps:

  • Make the vinaigrette: In a large bowl, combine red wine vinegar, garlic, salt, pepper, sugar, and oregano. Whisking constantly, slowly drizzle the olive oil over the mixture so that it emulsifies. Set aside.
  • Slice the onions very thin, and place in a small bowl. Cover with cold water and set aside for 10 minutes or so. This will take some of the bite out of the onion. (If you are a hard core raw onion lover, skip this step!)
  • Chop the tomatoes into bite size pieces. Place in a colander over the sink to drain.
  • Chop the cucumbers and add to the bowl with the vinaigrette. Add the kalamata olives, fresh mint, and fresh dill.
  • Pat the onions dry with a paper towel and add to the bowl. Add the tomatoes. Toss it all together gently.
  • Top with crumbled or chopped feta (next time I'm chopping a block into chunks!) Add as much as you like. Taste it to see if it needs more salt, pepper, or oregano. Toss gently and serve immediately.

1 yellow bell pepper, cut into 1/2-inch strips
One 15-ounce can chickpeas, drained and rinsed

GREEK SALAD WITH OREGANO MARINATED CHICKEN

Greek Salad with Oregano Marinated Chicken image

Provided by Dave Lieberman

Categories     main-dish

Time 1h15m

Yield 4 to 6 servings

Number Of Ingredients 19

1 lemon, juiced
2 tablespoons extra-virgin olive oil
1 teaspoon dried oregano
A couple good pinches salt
10 grinds black pepper
4 (6 to 7-ounce) boneless skinless chicken breasts
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 lemon, juiced
2 cloves garlic, smashed with the side of your chef's knife
1 teaspoon dried oregano
3 pinches salt
10 to 15 grinds black pepper
2 to 3 hearts romaine lettuce
1 English cucumber, peeled, cut in 1/2 lengthwise, then cut into 1/2-inch chunks
3 vine-ripened tomatoes (about 3/4-pound), cored and cut into 1/2-inch chunks
1/2 red onion, very thinly sliced
1/2 cup pitted kalamata olives, coarsely chopped
1/4 cup crumbled feta cheese

Steps:

  • To marinate the chicken: In a non-reactive dish, combine the lemon juice, olive oil, oregano, salt, and pepper and mix together. Add the chicken breasts to the dish and rub both sides in the mixture. Cover the dish with plastic wrap and let marinate in the refrigerator for at least 30 minutes and up to 4 hours.
  • To make the dressing: Combine all the ingredients in a resealable container and shake vigorously. Refrigerate until ready to serve, and then bring to room temperature before tossing salad.
  • Assemble the salad: cut off any dark tips and the bitter white bottoms from the romaine leaves. Cut the lettuce into 1-inch strips and place in a bowl that is large enough to hold all the salad ingredients comfortably. Scatter cucumbers, tomatoes, red onion, olives, and feta over the top. You can prepare the salad up to a few hours in advance. Cover it with a moist paper towel and refrigerate until 30 minutes before serving.
  • To cook the chicken: Heat a nonstick skillet or grill pan over high heat. Add the chicken breasts and cook, turning once, until well browned, about 4 to 5 minutes on each side or until cooked through. Let the chicken rest on a cutting board for a few minutes before slicing it into thin strips.
  • Give the dressing a good shake and pour it into a nice little serving bowl, using the lid to strain out the garlic.
  • Toss salad just before serving and fan chicken out on top.

HERB MARINATED FETA

Herb marinated feta image

Greek feta marinated in herb infused olive oil with lemon and chili pepper

Provided by Mia Kouppa

Categories     Appetizer     meze     Side Dish

Time 50m

Number Of Ingredients 9

1/4 pound Greek feta
1 cup (250 mL) olive oil
1 sprig fresh rosemary
2 sprigs fresh thyme
4 chives
1 sprig fresh oregano
1/4 tsp peppercorns
peel of half a lemon
1 dried hot pepper (or 1/4 teaspoon dry chili flakes)

Steps:

  • In a small sauce pot combine the olive oil, the fresh herbs, the lemon peel and the peppercorns. Crush your dried hot pepper so that some of the seeds are exposed and add the hot pepper and seeds to the olive oil mixture as well.
  • Heat over medium heat until the oil starts to sizzle. Remove from the heat and pour all of the contents of your pot into a glass measuring cup or a bowl to cool.
  • Meanwhile, cut your feta into cubes, approximately the size of playing dice.
  • Choose a jar which is large enough to hold all of the feta and the olive oil and herb mixture.
  • Once the olive oil has cooled, add half your cubed feta to the jar and add in the herbs, peppercorns, lemon peel and hot pepper. Add the rest of the feta and then pour in the olive oil. Your feta should all be covered by oil. If it is not, simply top up your jar with some extra olive oil.
  • Cover your jar or bowl well and place in the refrigerator. Your marinated feta is best either a few hours later, or the next day.
  • Enjoy!

KITTENCAL'S CREAMY GREEK FETA SALAD DRESSING

Kittencal's Creamy Greek Feta Salad Dressing image

Plan ahead the dressing needs a few hours chilling time before serving, you may want to adjust some ingredients after you make this, I would suggest to start with the stated amounts and add in more after mixing, you may use 3 tablespoons freshly grated parmesan cheese in place of the feta cheese --- if you are not a lover of garlic then I suggest to pass this by! --- servings are only esitmated.

  • Slice the feta block into little squares, about 1 inch long and 1/2 inch thick. Gently pat the feta dry with a paper towel before coating in the flour/breadcrumb mixture.
  • Gather and assemble three shallow bowls: fill one bowl with the flour, one with an egg, slightly beaten, and one with the breadcrumbs.
  • Take the feta squares and dip each in the flour. Coat all sides. Transfer the square to the egg bowl, all excess egg to drip back into the bowl. Finally dip the square in the breadcrumbs. Coat all sides and press the crumbs gently into the feta. Place the cheese on a small plate and continue this process until all of your cheese is ready to fry.
  • Fill a small frying pan with olive oil, so that the oil is about 3/4 -1 inch deep. Place the pan over a medium high heat and heat until the oil sizzles when you flick a few water drops into the oil. When the oil is hot enough gently place the breaded feta in the oil. Fry for one minute or until golden brown, gently flip the feta over and fry for another minutes. Only fry a few squares of cheese at a time so that the pan doesn't overcrowd. If you overcrowd the pan your cheese may not crisp up and flipping may be difficult. After each side is golden brown, remove the cheese and place them on a plate lined with a paper towel to absorb the excess oil. Set aside to cool slightly while you prepare the salad.

  • Put a layer of feta chunks in the bottom of a pint sized mason jar. Top them with a sprinkle of the herbs and a scritch of fresh ground pepper, and repeat until you get to the top of the jar. Cover with olive oil and store in refrigerator overnight, or on the counter for a couple of hours. Take feta out of the refrigerator a few hours before you start cooking to continue to marinate at room temperature. If your olive oil solidified in the refrigerator, that's okay, it will liquify again as it warms up.

  • Place sliced chicken breasts in a bowl or resealable plastic bag with 1/4 cup of the dressing. Place in the refrigerator and marinate for 30 minutes or up to 24 hours. Store remaining dressing in refrigerator until ready to use.
  • Heat an outdoor grill to medium/high heat. Add the chicken in a single layer so they are not overlapping each other. Discard the marinate.
  • Cook chicken for 5-7 minutes per side, or until a thermometer inserted into the thickest part of the chicken registers 165 degrees F. Let rest 5 minutes before slicing.
