CHEESE-STUFFED MEATBALLS
I am eating this as I write - it's a recipe I got from the Williams-Sonoma catalog. They came out just delicious and the extra meatballs will be my lunch and dinner this week. One caveat - seal the cheese in the meatballs securely, or it will melt out when simmering in the sauce. It was a bit tedious to make, but not difficult. There are quite a few steps. The sauce was a bit of a pain for me to make (didn't have a tomato press), so I used premade. But I think this is the way I'll make my meatballs from now on!

- In a large bowl, combine the milk and bread crumbs.
- Whip eggs in separate bowl. Then add to larger bowl along with the meats, parsley, garlic and pepper.
- Mix ingredients briefly with hands.
- Form into 2 inch balls.
- Seal cheese cube into center of each meatball.
- In a large skillet set on medium-high, heat oil to almost-smoking, browing meatballs for about a minute or so.
- Transfer meatballs to tray (lined with paper towels).
- Discard oil and place tomato sauce in skillet, heating to medium-high until it starts to simmer.
- Add meatballs, cover and reduce heat to medium-low.
- Cover, simmer for 30 minutes.
- Uncover and cook for 10 minutes more.
- Serve over pasta with grated cheese, or place in Italian bread buns to make grinders.

FETA CHEESE STUFFED MEATBALLS
Came up with this on a rainy day, wanted something for dinner. Pair with salad, pasta, sauce of your choice, and bread. Enjoy! Will fill you up for sure. Meatballs can be used in stew, spaghetti, frozen for later, or a sandwich.

- Preheat oven to 425 degrees F (220 degrees C). Lightly spray a baking sheet with cooking spray.
- Mix ground beef, ground pork, bread crumbs, onion soup mix, egg, pepper, Italian seasoning, and garlic together in a bowl. Form a 2 to 3-inch meatball around 1 1/2 teaspoons feta cheese. Place stuffed meatballs on the prepared baking sheet.
- Bake in the preheated oven for 10 minutes. Turn meatballs and continue baking until browned and cooked through, 10 to 20 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from oven and transfer meatballs to a separate pan and tent with aluminum foil for 3 to 5 minutes.

EASY GREEK MEATBALLS
Juicy Greek meatballs made with beef, lamb and feta cheese is a delicious, easy recipe perfect for lunch, dinner or as an appetizer served with yogurt.

- Combine all the ingredients and mix until the ingredients are just combined, taking care not to over mix (this can cause the meatballs to be very dense).
- To mix the meatballs: With wet hands (this prevents the meat from sticking to your hands), form meatballs of approximately 3cm/1in and place on a chopping board.
- To fry the meatballs: pre-heat a non-stick frying pan and add a tablespoon of olive oil. Fry the meatballs in batches until golden brown on both sides and cooked through.
- To bake the meatballs: Pre-heat the oven to 220ºC. Line 2 baking sheets with baking/parchment paper and add the meatballs, keeping some space between them. Drizzle the meatballs with 1-2 tbsp olive oil and place in the oven. Allow to bake, turning over halfway, until golden brown and cooked through (approximately 20-30 minutes).
- Remove the meatballs from the heat, drizzle with lemon juice (optional) and serve.

LAMB AND CORIANDER FETA-STUFFED MEATBALLS WITH YOGHURT SAUCE

- For the meatballs, blend all the ingredients, except the feta and olive oil, in a food processor until thoroughly blended. With wet hands, form teaspoon-sized balls of mixture. Poke a cube of feta in the middle of each ball, making sure the meat mixture covers the cheese.
- Heat the olive oil in a frying pan to medium and gently fry the meatballs, making sure not to crowd the pan. They will take about 10 minutes or less to be nicely browned and cooked through. Drain on paper towels.
- For the dipping sauce, whisk all the ingredients together and put in a small serving bowl. Drizzle with extra pomegranate molasses and a sprinkle of paprika.
- Serve warm meatballs with the dipping sauce - don't forget the toothpicks for easy eating.

GREEK PASTA WITH MEATBALLS AND FETA CHEESE
This recipe is loosley based on one that I got from the Cooking Light archives. I chose to partially bake the meatballs in the oven, then finish off the baking in the marinara sauce.

- Cook orzo according to package directions; drain. Keep warm.
- Combine breadcrumbs , oregano, salt, cinnamon, black pepper, lamb and garlic in a medium bowl; stir in 1 1/2 tablespoons parsley. Add egg white, stirring mixture until just combined. Shape mixture into 12 (1-inch) meatballs; cover and chill meatballs 5 minutes. (Can be made ahead of time).
- Preheat oven to 375.
- Bake the meatballs on a roaster pan for 20 minutes. Drain the fat, if necessary. Place the meatballs in a new baking dish and spoon the marinara sauce over meatballs; sprinkle with cheese. Bake at 375° for 20 minutes or until meatballs are done. Sprinkle with remaining 1 1/2 teaspoons parsley.
- Serve over orzo.
LAMB & FETA MEATBALLS
Delicious Greek twist on an old favourite!

- Heat the oil in a large pan and add the onion and garlic. Cover and sweat the onions over a medium heat for 4 minutes, until softened. Transfer half the onions to a large mixing bowl.
- Add the minced lamb, 100 g of the feta and egg to the onions in the bowl. Season well, then mix together. Shape into 20 meatballs.
- Add the peppers and meatballs to the onions in the pan and cook for 4-5 minutes, until the meatballs are lightly browned all over. Stir in the chopped tomatoes and sugar. Season and bring to the boil. Partially cover with a lid and simmer gently for 10 minutes, stirring occasionally.
- Meanwhile cook the spaghetti in a large pan of boiling salted water according to pack instructions. Drain well and return to the pan to keep warm.
- Stir the basil into the tomato sauce. Divide the spaghetti between 4 pasta bowls and top with the meatballs and sauce. Sprinkle each with the reserved crumbled feta.
