1 medium onion, finely chopped
3 garlic cloves, minced
1 teaspoon dried oregano

1/4 cup white wine, optional
1 pound uncooked medium shrimp, peeled and deveined
2 tablespoons minced fresh parsley

Steps:

  • In a large nonstick skillet, heat oil over medium-high heat. Add onion; cook and stir 4-6 minutes or until tender. Add garlic and seasonings; cook 1 minute longer. Stir in tomatoes and, if desired, wine. Bring to a boil. Reduce heat; simmer, uncovered, 5-7 minutes or until sauce is slightly thickened., Add shrimp and parsley; cook 5-6 minutes or until shrimp turn pink, stirring occasionally. Remove from heat; sprinkle with cheese. Let stand, covered, until cheese is softened.

Greek-style shrimp saganaki makes a quick and easy weeknight dinner.

4 tablespoons extra-virgin olive oil
¾ cup finely chopped shallots, from about 3 shallots
4 garlic cloves, roughly chopped
1 (28-oz) can diced tomatoes
1½ teaspoons salt
¼ teaspoon pepper
1 teaspoon ground cumin
½ teaspoon crushed red pepper flakes (use less if you are heat-sensitive)
1 tablespoon honey
1½ pounds extra large shrimp (26/30), peeled and deveined, thawed if frozen
6 ounces feta cheese
¾ teaspoon dried oregano
2 tablespoons roughly chopped fresh mint

Steps:

  • Preheat oven to 400°F; set one oven rack in the middle position and another about 5 inches underneath the broiler.
  • Heat the olive oil in a wide oven-proof skillet (see note) over medium-low heat. Add the shallots and garlic and cook, stirring occasionally, until softened, 5 to 7 minutes. Do not brown.
  • Add the tomatoes with their juices, salt, pepper, cumin, red pepper flakes, and honey. Bring to a boil, then reduce the heat to medium-low and cook, uncovered, stirring occasionally, until the sauce is thickened, 15 to 20 minutes.
  • Off the heat, arrange the shrimp over the tomato sauce in an even layer. Crumble the feta over the shrimp, and then sprinkle with the oregano. Bake for 12 to 15 minutes, until the shrimp are pink and just cooked (the cooking time will depend on the size of the shrimp). Turn on the broiler. Using an oven mitt, carefully transfer the pan to the higher oven rack and broil for 1 to 2 minutes, or until the feta is golden brown in spots. Using an oven mitt, remove the pan from the oven (and immediately place the oven mitt or a dishtowel over the handle of the pan because it's very easy to forget that it is burning hot). Let the shrimp rest for 5 minutes, then sprinkle with mint and serve.
  • Note: If you do not have an oven-proof skillet, simply transfer the tomato sauce to a 9-by-13-inch or equivalent broiler-safe baking dish and proceed from there.

1 tablespoon finely minced fresh dill
1 1/4 pounds medium shrimp, peeled and deveined

2/3 cup crumbled feta cheese (about 3 ounces)

Steps:

  • Preheat the oven to 425 degrees F.
  • Heat the oil in an oven proof skillet over a medium-high heat. Add the onion and cook, stirring, until softened, about 3 minutes, then add the garlic and cook for 1 minute. Add the tomatoes and bring to a boil. Reduce the heat to medium-low and let simmer for about 5 minutes, until the tomato juices thicken.
  • Remove from the heat. Stir in the parsley, dill, and shrimp and season with salt and pepper. Sprinkle the feta over the top. Bake until the shrimp are cooked through and cheese melts, about 12 minutes.

2 lbs large shrimp, uncooked
1 medium sized onion, finely chopped
2 teaspoons extra virgin olive oil
1 cup chopped green onion
2 cloves garlic, crushed
2 cups diced peeled tomatoes
1/2 cup dry white wine or 1/2 cup non-alcoholic wine
1/4 cup chopped flat leaf parsley
1/2 teaspoon dried oregano
salt
pepper
4 ounces fat-free feta cheese

Steps:

  • Preheat oven to 450 degrees.
  • Remove shells from shrimp, leaving last segment and tail intact; remove vein.
  • Rinse and dry.
  • In a pan saute onion in oil until transparent, (adding a few drops of water if necessary), add garlic and green onion and cook 2 minutes more.
  • To the onions add the tomatoes, wine, half the parsley, oregano, and salt and pepper to taste.
  • Reduce heat, cover and simmer for 30 minutes until thickened.
  • Pour half the sauce into a shallow casserole, and arrange the shrimp on top.
  • Pour the rest of the sauce on, and sprinkle crumbled feta over the shrimp.
  • Bake at 450 degrees for 10-12 minutes or until prawns are pink and feta is lightly browned.
  • Garnish with remaining parsley and serve.

1.5 pounds medium shrimp, peeled and deveined
0.5 cup chopped fresh parsley

crusty bread, for serving

Steps:

  • Heat oven to 450° F. Place the tomatoes in a large baking dish and spoon the olive oil and garlic over them.

This TikTok-famous pasta gets a dressing up with loads of shrimp and the addition of thyme and lemon zest. If you're in the mood to dirty more than one pot, consider grilling or sautéing the shrimp and adding them to the finished pasta dish. A lovely and simple side salad completes the meal.

1 pound (about 2 pints) cherry or grape tomatoes
6 cloves garlic (thinly sliced lengthwise)
Small bunch of fresh thyme
1/2 cup extra-virgin olive oil
Kosher salt
One (7-ounce) block Greek sheep feta cheese (NOT cow feta; it can become grainy when melted)
1/4 teaspoon crushed red pepper flakes
Freshly ground black pepper
1 pound medium or large shrimp (shelled and cleaned)
12 ounces of your favorite short pasta (such as gemelli, rigatoni, or rotini)
Fresh chopped parsley (for serving)
Zest of 1 lemon (preferably organic)

Steps:

  • Position a rack in the middle of the oven and crank the heat to 400°F (200°C).
  • Dump the tomatoes and garlic in a 9-by-13-inch (23-by 33-cm) baking dish. Strew the thyme over the tomatoes and drizzle the whole thing with 1/4 cup oil. Sprinkle with salt and stir to coat.
  • Nestle the feta cheese in the middle of the dish and drizzle with the remaining 1/4 cup oil. Sprinkle the entire dish with red pepper flakes and a wee bit of black pepper.
  • Bake until the tomatoes are lightly charred and have burst, 30 to 35 minutes. Remove the dish from the oven and nestle the shrimp among the tomatoes. Return the dish to the oven and continue baking until the shrimp is cooked through, 7 to 10 minutes.
  • While the shrimp is cooking, bring a large pot of salted water to a boil. Cook the pasta until just al dente-about a minute less than specified on the package. Reserve 1 cup of the pasta water and then drain the pasta.
  • Remove the thyme sprigs and discard. Stir the feta-tomato-shrimp mixture until evenly mixed.
  • Pour the pasta into the dish and toss completely. If the dish looks a bit dry, add some of the reserved pasta water.
  • Season with salt and pepper, to taste. Top with the parsley and lemon zest and serve.

1 lb tomatoes (juicy vine-ripe, diced)
4 garlic cloves (grated, divided)
4 sprigs fresh thyme (divided)
1 teaspoon dried oregano (divided)
½ teaspoon red pepper flakes (adjust per taste)
Salt to taste (see note)
½ teaspoon ground black pepper
⅓ cup extra virgin olive oil
4 oz block Feta cheese
4 oz Burrata cheese (cut in halves)
3 tablespoons grated Parmesan cheese
8 oz ziti pasta
1 pound raw shrimp (large or medium, peeled and deveined)
4 oz baby spinach (or arugula)
1 teaspoon lemon zest (optional)

Steps:

  • Preheat oven to 400ºF. Toss together diced tomatoes, ¼ cup olive oil, ⅔ grated garlic, red pepper flakes, salt, pepper, ½ the herbs and spread it in the baking dish.
  • Make a well in the center of tomatoes and place the feta cheese block, burrata cheese halves and sprinkle the parmesan cheese. Drizzle remaining olive oil on the cheese and bake at 400ºF for 30 to 40 minutes until the tomatoes cook and release juices.
  • About 15 minutes after baking time, bring salted water to a rolling boil in a cooking pot. Cook the pasta until al dente stage following the directions on the package. Turn off the heat and add spinach. Drain the pasta with spinach and reserve some pasta water.
  • After complete baking time, remove the baking dish from oven and add remaining herbs, garlic and lemon zest (if using). Using a large and wide spoon, mash the cheeses until smooth and crush the tomatoes very well. Combine it all into a nice sauce.
  • Stir in the shrimp. Bake the sauce for an additional 5 to 6 minutes until shrimp turn opaque. Alternatively, toss shrimp with some olive oil, red pepper flakes, salt, pepper and bake it for 9 to 12 minutes and then use it.
  • Stir in the drained pasta. Add "hot" pasta water to adjust the sauce consistency.

Steps:

  • Preheat the oven to 400 degrees.
  • Heat 2 tablespoons of the olive oil in a 10-or 12-inch heavy ovenproof skillet over medium-low heat. Add the fennel and saute for 8 to 10 minutes, until the fennel is tender. Add the garlic and cook for 1 minute. Add the wine and bring to a boil, scraping up any browned bits. Cook for 2 to 3 minutes, until the liquid is reduced by half. Add the tomatoes with the liquid, tomato paste, oregano, Pernod, salt, and pepper to the skillet. Simmer over medium-low heat, stirring occasionally, for 10 to 15 minutes.
  • Arrange the shrimp, tails up, in one layer over the tomato-mixture in the skillet. Scatter the feta evenly over the shrimp. In a small bowl, combine the bread crumbs, parsley, and lemon zest with the remaining 2 tablespoons of olive oil and sprinkle over the shrimp.
  • Bake for 15 minutes, until the shrimp are cooked and the bread crumbs are golden brown. Squeeze the juice of 1 lemon over the shrimp. Serve hot with the remaining lemon cut into wedges.

2 cups tomatoes, skinned and chopped
2 -3 cloves garlic, crushed
2 tablespoons olive oil
1 bay leaf
1 tablespoon ouzo or 1 tablespoon Pernod (optional)
1 teaspoon dried oregano
salt and pepper, to taste
1 1/2 lbs shrimp, cleaned and deveined (raw weight)
6 ounces feta cheese, crumbled
2 tablespoons capers, drained and chopped

Steps:

  • Preheat oven to 400 degrees.
  • Heat olive oil in a large skillet over medium heat and add tomatoes.
  • Cook, stirring frequently, until tomatoes soften and give up some of their juice.
  • Add crushed garlic, bay leaf, and Ouzo (if using) and cook five minutes more.
  • Remove from heat, discard the bay leaf.
  • Stir in oregano and salt and pepper to taste.
  • Lightly coat four or six individual baking dishes with olive oil, place shrimp in the bottom of each dish, top shrimp with tomato sauce.
  • Divide the feta cheese, over the top of each dish, sprinkle with capers.
  • (you can also use a single baking dish, 8-10 inches square or diameter).
  • Bake for 15-20 minutes until hot and bubbly and shrimp is cooked through, cooking time will vary according to the size of the shrimp, cut into a shrimp to be sure it is cooked through.
