1 lb. lean ground beef
1 Tbsp. HEINZ Worcestershire Sauce
12 small flour tortillas (4 inch)
1/2 cup KRAFT Thousand Island Dressing
1/4 tsp. smoked paprika
2 cups loosely packed shredded lettuce
1/4 cup finely chopped CLAUSSEN Kosher Dill Burger Slices

Steps:

  • Brown beef in large skillet; drain. Return beef to skillet; stir in Worcestershire sauce. Cook, stirring frequently, 1 min.
  • Meanwhile, heat tortillas as directed on package. While tortillas are heating, mix dressing and paprika until blended.
  • Place lettuce on tortillas; top with beef, dressing mixture and pickles.

Try something different tonight and barbeque your basic taco toppings: tomatoes, onions, chilies and tortillas. It's fun, different and best of all it tastes fantastic!

Number Of Ingredients 16

1 lb ground elk, burger
2 tomatoes (cut in half)
1 onion (red or white sliced)
6 green onions
1/2 cup mild green chili (diced)
6 flour tortillas
1 cup shredded cabbage
4 radishes (sliced)
1 teaspoon garlic powder
1/4 teaspoon ground cayenne pepper
1/4 teaspoon ground chipotle chile pepper
1 tablespoon ground cumin
1 garlic clove
olive oil
salt
6 ounces beer (Recommend Dos Equis or Modelo)

Steps:

  • Add 1 tablespoon of olive oil and garlic clove in a skillet over medium heat. Add ground elk and cook for five minutes or until meat begins to brown. Add salt, garlic powder, cayenne pepper, chipotle pepper and cumin to the elk meat. Continue to stir until thoroughly cooked. Turn heat to low and add ½ bottle of the beer to your elk meat. Continue to cook on low while you BBQ your vegetables.
  • Pre-heat barbecue to high temperature.
  • Coat green onions, tomatoes, sliced onion with olive oil and salt. Place vegetables direct on grill. Turn vegetables as needed until they become slightly charred. While cooking your vegetables, place flour or corn tortillas direct on grill and cook about 1 minute on each side until warm. Remove vegetables and tortillas from grill when ready.
  • Place tortilla on plate, add a heaping spoonful of elk burger, add a few red onions, green onion and cooked tomato. I like to then add a few mild green chilies, some shredded cabbage and sliced radish for the additional crunch. Enjoy... I know we did!

  • Roast the chiles, peel the skins off, remove the seeds, salt them and set aside. You can either keep them in fairly large pieces if they are well-roasted, or chop them roughly. Your call.
  • Make four burger patties. I prefer one-third pound burgers, but you can make them any size you want. Pro tip: Press the weighed out ground meat into a large circle mold for more even patties. Press a dimple about the diameter of a walnut in the center of each patty - this prevents them from balling up when cooked. Salt your patties well.
  • Get your grill hot. Scrape down the grates well, and grill your burgers with the grill cover open. Leave them on the grates for at least 3 or 4 minutes so you get grill marks and a good crust. Flip and cook to order. Typically a medium burger will need another 3 minutes.
  • When you flip your burgers, lay the chiles over them, then cover with a slice of cheese. Close the grill cover to melt the cheese.
