Yield Makes about 1/4 cup

Number Of Ingredients 3

1 lemon
1/4 cup finely chopped fresh parsley
3 garlic cloves, finely chopped

Steps:

  • Using vegetable peeler, remove peel in long strips from lemon. Mince lemon peel. Transfer to small bowl. Mix in parsley and garlic. (Can be made 6 hours ahead. Cover and refrigerate.)

1 bunch fresh cilantro (NO wilty leaves!)
1 medium shallot, minced
2 garlic cloves, peeled and minced
1 lemon, zest of, finely minced
1/2 lemon, juice of
1 pinch salt
1/8-1/4 fluid ounce good quality extra virgin olive oil (about 1-1 1/2 tablespoons)

Steps:

  • Chop the fresh cilantro coarsely.
  • Place the cilantro along with the other ingredients in a non-reactive bowl and marinate at least 1 hour.
  • Once marinating is complete, taste and adjust seasoning if necessary.
