Open-Faced Turkey Melts make a quick and easy way to use up your Thanksgiving turkey leftovers!

8 ounces chopped cooked turkey breast
1/4 cup celery (sliced)
3 tablespoons Hellman's Light mayonnaise
2 tablespoons dried cranberries
1 tablespoon red onion (chopped)
4 slices thin sliced multi-grain bread
4 ounces light Havarti cheese (sliced)
Reynolds Wrap non-stick foil

Steps:

  • Heat broiler over high, with rack in the second position about 6 inches from the flame. Line a half-sheet pan with Reynolds non-stick foil.
  • In a medium bowl combine the turkey with celery, mayonnaise, cranberries and red onion, and stir until combined.
  • Arrange the toasted bread on a baking sheet and divide the turkey salad evenly among slices, then top each with 1 ounce of cheese.
  • Broil about 6 inches from the flame until the cheese is golden and bubbling, about 2 to 3 minutes, keeping a close eye on it to avoid burning.

4 tablespoons butter or 4 tablespoons margarine, divided
4 tablespoons barbecue sauce
8 slices sourdough bread
8 slices monterey jack cheese
8 slices Canadian bacon
8 slices cooked turkey
dill pickle slices

Steps:

  • In a large skillet, saute onions in 1 tablespoon of butter until tender; remove and set aside.
  • Spread barbecue sauce on four slices of bread.
  • Layer each with one slice of cheese, 2 slices of Canadian bacon and turkey, pickles, onions, and top of with another slice of cheese.
  • Cover with remaining slices of bread.
  • In the same skillet over medium-low heat, melt remaining butter as needed.
  • Cook sandwiches on both sides until golden brown and cheese is melted.

4 slices sourdough bread
1/4 cup canned chopped green chiles
1/4 pound thinly sliced deli turkey
1/4 cup shredded Colby-Monterey Jack cheese

Steps:

  • Spread mayonnaise over two slices of bread. Layer with green chiles, turkey and cheese. Top with remaining bread. Spread outsides of sandwiches with butter., In a large skillet, toast sandwiches over medium heat until golden brown and cheese is melted, 1-2 minutes on each side.

3 tablespoons vegetable oil
1 large onion, thinly sliced
1/2 teaspoon kosher salt
Freshly ground black pepper
4 (4-ounce) turkey patties
8 slices multi-grain bread
8 slices Monterey Jack or American cheese
2 to 3 tablespoons unsalted butter, softened
Serving suggestion: Cranberry Sauce

Steps:

  • Heat 1 tablespoon of the oil in a large cast iron skillet over medium heat. Add the onion, season with some salt and pepper, and cook until golden, about 7 minutes. Put in a bowl and set aside. Wipe out the skillet and add another tablespoon of oil. Season the turkey patties with salt and pepper, and cook in the remaining oil until well browned, about 3 minutes per side. Remove from the skillet. Wipe out the pan.
  • Divide the onions among 4 bread slices, and top with a slice of cheese, a patty, another slice of cheese, and a slice of bread. Spread the top and bottom of the sandwiches with some butter. Heat the cast iron skillet over medium heat. Cook the sandwiches, in batches if needed, turning once, until lightly browned and the cheese melts, about 2 minutes per side. Halve the sandwiches and serve with cranberry sauce, if desired.

My grandmother and mother passed this recipe on to me. It changes just a little every year, because we've never written it down before. But it is always incredibly juicy and succulent!

2 tablespoons dried parsley
2 tablespoons ground dried rosemary
2 tablespoons rubbed dried sage
2 tablespoons dried thyme leaves
1 tablespoon lemon pepper
1 tablespoon salt
1 (15 pound) whole turkey, neck and giblets removed
2 stalks celery, chopped
1 orange, cut into wedges
1 onion, chopped
1 carrot, chopped
1 (14.5 ounce) can chicken broth
1 (750 milliliter) bottle champagne

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Line a turkey roaster with long sheets of aluminum foil that will be long enough to wrap over the turkey.
  • Stir together the parsley, rosemary, sage, thyme, lemon pepper, and salt in a small bowl. Rub the herb mixture into the cavity of the turkey, then stuff with the celery, orange, onion, and carrot. Truss if desired, and place the turkey into the roasting pan. Pour the chicken broth and champagne over the turkey, making sure to get some champagne in the cavity. Bring the aluminum foil over the top of the turkey, and seal. Try to keep the foil from touching the skin of the turkey breast or legs.
  • Bake the turkey in the preheated oven for 2 1/2 to 3 hours until no longer pink at the bone and the juices run clear. Uncover the turkey, and continue baking until the skin turns golden brown, 30 minutes to 1 hour longer. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the turkey from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area 10 to 15 minutes before slicing.
