Steps:
- Gather the ingredients.
- Preheat the oven to 350 F. Lightly coat an 8 x 8 x 2-inch baking pan with cooking spray and then set it aside.
- In a large bowl, sift together the flour, unsweetened cocoa , salt, baking powder, baking soda, and cinnamon until well mixed, then set the bowl aside.
- In a medium bowl, beat together the sugar, brown sugar, non-fat dry milk powder, egg white, applesauce, and vanilla with a spoon until well combined.
- Stir the wet mixture into the dry mixture, mixing just until the ingredients are well moistened. Do not overmix.
- Spread the brownie batter evenly in the prepared baking pan and bake in the oven for 22 to 23 minutes or until a toothpick inserted in the center of your brownies comes out clean.
- Cool on a wire rack.
- If you're not planning on frosting your brownies, you can give them a light dusting with powdered sugar, if you'd like. Enjoy!

GUILT-FREE BROWNIES
To make these brownies lower in fat and calories (but still moist and fudgy), we replaced some of the eggs and butter with prune puree.

Steps:
- Preheat oven to 350 degrees. Line bottom and sides of an 8-inch-square baking pan with foil, leaving a 2-inch overhang. Set aside.
- In a small saucepan, bring an inch of water to a simmer over low heat. Place chocolate and butter in a medium heatproof bowl; set bowl over pan. Stir occasionally until melted. Remove from heat. Immediately whisk in sugar, egg, egg white, prune puree, vanilla, and salt until smooth.
- In a medium bowl, sift together flour and cocoa. Stir into chocolate mixture just until incorporated.
- Spread batter in prepared pan. Bake until top is firm (a toothpick inserted in center will come out with a few moist crumbs), about 30 minutes. Let cool completely in pan. Using foil, lift brownies from pan. Peel off foil. Using a serrated knife, cut into 16 squares.

GUILT-FREE FUDGY BROWNIES
The only thing better than the taste is the fact that they are FAT FREE! They're a snap to make and the results are fantastic. I'm a health nut, always on a quest to create healthier treats, and these brownies taste as good, if not better, than the 'real thing.' Serve warm with fat-free frozen yogurt or top with fat-free whipped topping for a scrumptious chocolate dessert.

LOWER FAT FUDGE BROWNIES
After many tries, I've finally developed a really fudge-y, chewy brownie recipe. Several people in my office are on diets and swear by these. You can use low fat or nonfat yogurt and egg replacers to make it even lower in fat and cholesterol, but the full fat yogurt really adds to the texture of the brownies.

FAT FREE DARK CHOCOLATE BROWNIES
So rich, so gooey, and so good! These cocoa brownies are almost fat free (there's just a little from the walnuts). Cocoa powder has all of the great taste of chocolate but a lot less saturated fat. Substitutions were made to reduce the calories, fat, and cholesterol. Enjoy! (recipe from "Healthy Homestyle Cooking" by Evelyn Tribole)
