- Poke the spaghetti squash using a strong knife and bake in the microwave for 15-20 minutes, depending on size (until temder). Using a fork, separate the squash pulp into strands.
- In a large saucepan brown the meat with onion, celery, and garlic until vegetables are tender. Drain fat.
- Stir in tomato sauce, water, curry powder, ginger, salt, cumin, and pepper. Bring to boiling; reduce heat. Cover; simmer for 1 hour or until lamb is tender.
- Combine yogurt and flour; add to meat mixture. Cook and stir until bubbly; cook and stir 1 minute more.
- To serve, spoon lamb mixture over squash.

White sauce and lamb, served over linguini. Something that came from my Grandfather's family.

- Heat the olive oil in a large skillet and cook and stir the ground lamb, garlic, and onion powder until the lamb is no longer pink, breaking the meat apart as it cooks. Stir in lemon juice, cinnamon, and oregano; continue to cook, stirring occasionally, until all the liquid in the skillet evaporates and the lamb and garlic are very well browned, about 20 minutes.
- Pour in the water and potatoes, bring the mixture to a boil, and reduce heat to medium-low. Simmer until the potatoes are very tender and beginning to break apart, about 20 minutes. Mash potatoes with a spoon against the side of the skillet to help them thicken the sauce. Season to taste with salt and pepper. Simmer until the gravy is thickened and the flavors have blended, about 10 more minutes (1 hour total). Stir occasionally during cooking.
- Bring a large pot of lightly salted water to a rolling boil; cook the linguine in the boiling water until cooked through, but still firm to the bite, about 11 minutes. Drain. Transfer the cooked pasta to plates and top with lamb gravy.

LAMB AND SQUASH
This recipe calls for lamb, but I have used ground beef and sausage before. I never really stick to this recipe, and add different things depending on what sounds good at the time.

- In a medium saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium high heat, place the ground lamb, onion, garlic, thyme, basil and ground mustard. Cook until the lamb is evenly brown and the onion is soft. Stir the rice into the mixture.
- Stuff the acorn squash halves with the ground lamb mixture. Season with salt and pepper.
- Place stuffed squash on a medium baking sheet. Bake in the preheated oven 30 minutes, or until the squash is tender.

SPAGHETTI SQUASH MOUSSAKA
I love cooking with spaghetti squash and with the wonderful flavor of lamb this recipe is a real hit with my family!

- 1. Cook squash: With the tines of a cooking fork or paring knife, pierce squash in several places. Place whole squash in a baking dish (about 9" square). Bake at 375 degrees until tender when pierced; about 45 minutes.
- 2. Meanwhile, cook lamb and beef in large frying pan over medium high heat stirring often, until meat is browned. Add onion and garlic, cook, stirring often, about 5 min. until onion is soft. Drain off fat. Stir in tomato sauce, tarragon, basil, oregano and pepper into meat. Season to taste with salt. Reduce heat and simmer, uncovered about 15 min., stir often.
- 3. Cut cooked squash in half lengthwise, then scoop out and discard seeds. With a fork, shred out half the squash into a shallow 3 quart baking dish (13x9). Spread squash with half of the meat mixture, and over that half of the parmesan cheese and half of the jack cheese. Repeat layers.
- 4. Bake casserole, uncovered, in a 350 degree oven until heated through, 25 - 30 minutes. Let stand 5 - 10 minutes before serving.
SPAGHETTI SQUASH CRUST PIZZA
Steps:
- To quickly cook the spaghetti squash pierce it all over with a knife and microwave 5 minutes. Then continue to cook in 2 minute increments until the skin gives when pressed.
- Cut it open, remove the seeds and scrape the squash out with a fork.
- Place the cooked spaghetti squash in a clean cheesecloth or dish cloth and squeeze all the water out REALLY well.
- Preheat the oven to 375F. Line 2 sheet pans with parchment paper and spray with oil.
- In a medium bowl, mix the spaghetti squash with the egg, mozzarella, Parmesan, oregano and garlic powder.
- Make 4 7-inch rounds on the prepared pan patting down so they are very thin, the thinner the crisper they will be.
- Spray the crust lightly with olive oil spray and bake for 15 minutes, until golden then carefully flip with a spatula. Bake 5 to 7 minutes more, until crisp.

- Preheat your oven to 350°F. Line a baking sheet with parchment paper. Cut the spaghetti squash lengthwise and remove the seeds. Place the squash cut-side down on the baking sheet and roast it until it's fork tender, about 1 hour.

- Preheat the oven to 350ºF. Heat a high sided skillet or frying pan over a medium heat. Add a splash of olive oil to the pan and gently sweat the onions and garlic until they are translucent and soft, but not coloured. Once cooked, spoon the onion and garlic out into a small bowl and set aside to cool. If adding bacon to the meatballs, cook the bacon in the skillet first and set aside, then sauté the onions and garlic in half the bacon fat. Reserve the pan for making the sauce.
- Cut the squash in half and scoop out the seeds with a spoon. Drizzle with the olive oil and salt and pepper and place on a tray cut side down and roast for 30 minutes while the meatballs cook. Once the squash is cooked, use a fork to scoop the strands from the skin. Season with some more salt and pepper if necessary and a knob of butter.
- Meanwhile make the sauce, use the skillet that you cooked the onions and garlic in, gently sauté the onions and garlic until they’re fragrant and soft, about 5 minutes. Season with salt and pepper and continue to cook until the onions are just starting to turn golden, about another 8 minutes. Add the wine and scrape up any golden bits from the bottom of the pan. Let the wine come to a boil and reduce for about 1 minute.
