This is my standard chicken salad with a twist(a few extra herbs and veggies and a little cream cheese) It started out that I had a little dip left and added it to my chicken salad, but it was good, so I wanted to keep track of what I did. Add the mayo and sour cream in equal proportions to make the salad as creamy as you like. We like the Light Mayonaisse(not reduced fat or fat free, they taste different) and light sour cream just as well as regular, but if you prefer use regular. Add salt and pepper, season salt, or Tony's to taste for saltiness. It was the fresh basil, bell pepper, cream cheese, and fresh garlc that were the new flavors in this chicken salad. It is better the next day after the flavors meld.

2 1/2 lbs boneless skinless chicken breasts
0.333 (20 1/16 ounce) can crushed pineapple, drained
1/2 bell pepper, chopped finely
4 -5 stalks celery, chopped finely
1 bunch green onion, sliced
1 cup grapes, halved
1 cup pecans, toasted with salt and sugar, chopped
1/3-1/2 garlic clove, pressed
1/4 cup fresh sweet basil leaves, chopped
1 teaspoon Lawry's Seasoned Salt, to taste or
1 teaspoon Tony Chachere's Seasoning, to taste
1 (8 ounce) package low-fat cream cheese
1/3 cup light mayonnaise
1/3 cup light sour cream

Steps:

  • Either boil chicken with 1/2 an onion and a little celery in salted and peppered water for 20-30 minutes until tender. If you do this, be sure and freeze your yummy broth for later use.
  • Or you may drizzle chicken with olive oil, salt and pepper well, and bake at 350 for 25 to 30 minutes or until juices run clear.
  • Chop or shred chicken. Do it the way you like.
  • Combine mayonaisse, sour cream(start with 1/3 cup of each),cream cheese, pineapple, season salt or Tony's(use Tony's if you like a kick), basil, and garlic.
  • To toast pecans, put in a cast iron skillet with a little butter, sprinkle with salt and sugar, and heat just a few minutes, stirring until til they very slightly brown. Do not overcook. Remove and chop.
  • Combine this with chicken, pecans, and vegetables.
  • Adjust seasonings and creaminess with equal parts sour cream and mayonaisse to taste.
  • Fold in grapes. Add more grapes and pecans if you like.

2 c roasted chicken pieces chopped (buy roasted chichen at the store)
2-3 stalk(s) green onion chopped
1 stalk(s) celery diced small
1/4 small green bell pepper diced
1 medium apple peeled and diced
1 c grapes sliced in half
1 c plain yogurt (more or less)
1/4 c mayonnaise (more or less)
1 tsp mustard
1 tsp horseradish sauce
1 tsp creamy peppercorn penzey's
1/2 tsp sea salt
1 dash(es) garlic seasoning lawrey's

Steps:

  • 1. Gently mix 1-6 ingredients!
  • 2. Mix rest of the ingredients and add to chicken mixture.
  • 3. Chill for a bit or eat immediately. Spread on your choice bread or crackers. Or, eat as a salad served with your favorite chips!

1/2 c green onions, minced
2 celery ribs, chopped
1/2 c toasted pecans, chopped
2/3 c light mayonnaise
2-3 Tbsp prepared horseradish
2 tsp fresh lemon juice
1/2 tsp lemon zest
1/4 tsp salt
1/2 tsp pepper

Steps:

  • 1. Cook chicken and chop.
  • 2. Stir together all ingredients in a large bowl. Cover and chill at least 2 hours before serving.
  • 3. Use as a sandwich or add a scoop to leaf lettuce. Serve along with tomatoes or your choice of veggies.
