6 slices bacon, chopped
1 large onion, diced
3 cloves garlic, minced
2 cups chicken broth
pinch of dried oregano
pinch of cayenne pepper
½ teaspoon ground cumin
salt to taste
2 (14.5 ounce) cans black beans, rinsed and drained
14 ½ fluid ounces water
½ teaspoon ground black pepper
⅓ cup minced green onion
2 teaspoons sambal paste (or minced red chiles)
juice of 1 lime
2 tablespoons chopped green onion
3 tablespoons sour cream

Steps:

  • Place bacon in a cold pot. Turn heat to medium, cook and stir until the bacon is cooked but not crisp.
  • Stir in onion; cook and stir for 5 minutes, until the onion turns translucent and golden.
  • Stir in garlic; cook for 2-3 minutes. Add chicken stock, turn heat to medium-high. Stir in oregano, cayenne and salt. Add black beans and water. Return to a simmer.
  • Simmer on medium-low, stirring occasionally, for 20-30 minutes. While it's cooking, mash about half the beans to thicken the soup.
  • Stir in black pepper and cumin. Add salt to taste.
  • Make the relish by stirring together minced green onion, sambal paste, and lime juice.
  • Serve garnished with relish, chopped green onions, and sour cream.

This soup is a favorite pantry meal for my family. Easy, easy, easy to make and nutritious. I got the recipe from the back of a soup can but have improvised this soup many times. Feel free to adjust seasonings as you like.

3 tablespoons olive oil
1 medium onion, chopped
1 tablespoon ground cumin
2 -3 cloves garlic
2 (14 1/2 ounce) cans black beans
2 cups chicken broth or 2 cups vegetable broth
salt and pepper
1 small red onion, chopped fine
1/4 cup cilantro, coarsely chopped or finely chopped (whatever you prefer)

Steps:

  • Saute onion in olive oil.
  • When onion becomes translucent, add cumin.
  • Cook 30 seconds, then add garlic and cook for another 30 to 60 seconds.
  • Add 1 can black beans and 2 cups vegetable broth.
  • Bring to a simmer, stirring occasionally.
  • Turn off heat.
  • Using a hand blender, blend the ingredients in the pot, or transfer to a blender.
  • Add the second can of beans to the pot along with blended ingredients and bring to a simmer.
  • Serve soup with bowls of red onion and cilantro for garnish.
  • I add a bit of cilantro to the pot, too.
  • Can be doubled or frozen.

2 tablespoons olive oil
1 onion, diced
2 stalks celery, chopped
1 carrot, chopped
1 red bell pepper, diced
4 cloves garlic, minced
1 jalapeño pepper, seeded, diced
1 teaspoon salt
1 teaspoon pepper
2 tablespoons cumin
60 oz black beans, 4 cans, drained, rinsed
4 cups vegetable stock
1 bay leaf
avocado, chopped, to serve
queso fresco, crumbled, to serve
fresh cilantro, chopped, to serve
tortilla chip, crumbled, to serve

Steps:

  • Heat olive oil in a large stock-pot or dutch oven over medium-high heat until the oil begins to shimmer.
  • Add onions, celery, carrot, and bell pepper. Cook for 4-5 minutes, stirring occasionally, until vegetables begin to soften.
  • Add garlic, salt, and pepper, and continue to cook for an additional 10 minutes until vegetables are soft and the onions are translucent.
  • Add cumin, black beans, vegetable stock, and the bay leaf. Bring to a boil then reduce to a simmer.
  • Cover the pot and cook over low heat for 30 minutes until the beans are very tender.
  • Remove the bay leaf. Transfer about 4 cups (900 g) of the soup to a blender and puree until smooth, being careful not to splatter hot soup all over yourself and kitchen.
  • Pour blended soup back into the pot and mix to incorporate.
  • Keep over low heat until ready to serve. Garnish with fresh avocado, queso fresco, chopped cilantro, and tortilla chips.
  • Enjoy!

Back in college, a great local cafe stayed opened into the wee hours ladling up their version of this stuff. The first time I slurped some of it down after midnight, I decided to make black bean soup my own tradition. Mine is hearty and smoky, and if it's lying around, I'll also throw in a can of beer for good taste and in keeping with the spirit of a good night on the town. Like the onion soup, you'll want to make this ahead of time so you're not faced with the prep-work when you and your friends just want to kick back and chow down after a long night. Using smoked bacon makes all the difference in the world because those beans are just begging for that rich, smoky flavor.

10 slices bacon, finely chopped
2 medium onions, chopped (about 2 1/2 cups)
6 garlic cloves, pressed
1 (14 1/2-ounce) can reduced-sodium chicken broth
1 1/2 cups canned chopped tomatoes
2 tablespoons ketchup
2 teaspoons Worcestershire sauce
1 tablespoon chili powder
4 (15 1/2-ounce) cans black beans, drained but not rinsed
Kosher salt and freshly ground black pepper
1 bunch cilantro
juice of 1/2 lime
Thinly sliced scallions, for garnish
Sour cream, for garnish

Steps:

  • Put the bacon into a large heavy pot and place it over medium heat. Cook until it starts to give up its fat, about 4 minutes. Stir in the onions and cook, stirring, until they start to turn translucent, about 4 minutes. Stir in the garlic and cook until you can smell it, about 1 minute. Add the broth, tomatoes, ketchup, Worcestershire, and chili powder. Stir in the beans, turn the heat to high and bring to a boil. Adjust the heat so the soup is bubbling gently and cook 10 minutes. Season with salt and pepper.
  • Meanwhile, pick off all the thick stems from the cilantro. Wash it and shake dry. Chop the cilantro coarsely and stir it into the soup when it has been simmering 10 minutes. cook until the soup is thickened, about 5 minutes. Stir in the lime juice. Serve with the garnishes.

Black Bean Ham Soup is a great way to use leftover ham, but the meat can be left out for a delicious vegetarian version.

1 Tablespoon olive oil (extra virgin)
3/4 cup onion (chopped)
2 cloves garlic (chopped)
1.5-2 cups ham (diced (leave out for vegetarian version))
1 lime (zested and juiced)
3 cans black beans (15 oz.)
2 cups chicken stock (use vegetable stock for vegetarian version)
1 can tomatoes and chili peppers (Rotel brand is our favorite (10 ounce))
1 teaspoon hot sauce (adjust according to preference)
1/2 teaspoon cumin
salt and pepper, to taste

Steps:

  • In a large pot, heat oil over medium to medium-high heat.
  • Add onion and saute' until soft, about 3-4 minutes.
  • Add garlic, and saute' additional minute.
  • Add ham and saute' additional minute.
  • Stir in lime zest, beans (including liquid), stock, tomatoes (including juice), hot sauce and cumin. Bring to a boil.
  • Reduce heat to simmer and let simmer for 45 minutes.
  • Partially mash the beans with potato masher to thicken.
  • Add the lime juice and salt and pepper if needed.
  • Garnish with your choice of sour cream, cilantro, diced tomatoes, diced jalapenos, parsley, crushed corn chips.

1 (1-pound) bag of regular 15 Bean Soup mix or Cajun 15 Bean Soup mix
2 tablespoons olive oil
2 to 3 ham hocks or 1 ham bone (meat included)
1 large onion, chopped
3 stalks celery (leaves included), chopped
4 garlic cloves, minced
1 (15 to 30-ounce) can whole tomatoes, crushed
1 tablespoon dried parsley
1 teaspoon dried rosemary
1 teaspoon salt
1 teaspoon ground black pepper
2 chicken bouillon cubes

Steps:

  • Rinse the beans. Place them in a large pot and cover with water over medium-high heat. Bring the beans to a boil, stirring occasionally.
  • Remove the pot from the heat and cover with a lid. Let the beans sit for an hour, then drain and set aside.
  • Pour the olive oil into the pot over medium heat. Saute the ham hocks, onion, and celery until tender. Add the garlic and saute for 2 more minutes.
  • Add the beans. Pour water until it's 2 inches above the beans.
  • Stir in the tomatoes (juice included), parsley, rosemary, salt, pepper, and bouillon cubes.
  • Bring the mixture to a boil, stirring occasionally. Reduce the heat to medium-low and cover the pot. Let it simmer, stirring occasionally, for 2 to 2 ½ hours or until the beans are tender. Add more water if the mixture is getting too thick.
  • At the last 15 minutes of cooking, mix in the flavor packet that comes with the beans.
  • Taste the soup and season with more salt and pepper if needed.
  • Serve on its own or on top of rice. Enjoy!

1-2 tbsp extra virgin olive oil (optional)
2 celery ribs, chopped
2 cloves of garlic, chopped
1 onion, chopped
1 red bell pepper, chopped
2 bay leaves
1 tbsp dried oregano
2 tsp ground cumin
1/2 tsp salt
1/4 tsp ground black pepper
1/8 tsp crushed red pepper flakes (optional)
2 15-ounce cans of black beans (850 g), drained and rinsed
2 cups vegetable stock or water (500 ml)

Steps:

  • Heat the oil in a large pot, add the veggies (celery, garlic, onion and red bell pepper) and cook over medium-high heat for 5 minutes or until golden brown, stirring occasionally. If you don't eat oil, just use some vegetable stock or water instead.
  • Add all the remaining ingredients, stir and bring to a boil. Then simmer for 10 to 15 minutes. Once the soup is ready, remove and discard the bay leaves.
  • To thicken the soup, use an immersion blender and do 3-4 quick pulses. You could also transfer 1 cup (250 ml) of the soup to a regular blender and blend, then transfer back into the pot. This step is totally optional.
  • Serve immediately with your favorite toppings (I added tortilla chips, diced avocado and chopped cilantro) or keep leftovers in an airtight container in the fridge for 5-7 days.

15 Beans Dried Soup Mix: 1 lb bag
Ham Bone
Carrots: 2 medium
Celery: 2 stalks
Garlic: 1 tablespoon
Vegetable Stock: 64 ounces
Thyme: 1 bunch of Fresh
Black and White: to taste
Dry Mustard: 1 teaspoon

Steps:

  • If you're using an Instant Pot or Crock-Pot just add everything and turn it on. If you're using a Dutch Oven add a 2 tablespoons of oil and turn your burner up to medium high. Add your chopped onions, carrots and celery. Cook for 3-5 minutes until the onions are translucent. Add your minced garlic, the beans and the ham bone. Add the vegetable stock and cover.
  • Set your Instant Pot to 40 minutes and walk away. Let the pressure self-release then open. If you're using a crockpot set it for an all day cook at low (9-10 hours). If your using a Dutch oven cook at medium low for 2-3 hours until the beans and veggies are soft.
  • Remove the thyme stems. Throw them away. Remove the ham bone and any fat that is left behind. If there are big chunks of ham meat, break them up (it should shred fairly easy with a fork). Add salt and pepper to taste. For a kick you can add a bit of Tabasco to your bowl. Serve with crackers or to make it 'fancy' add sliced Parmesan cheese and croutons to everyones bowl.
