1 ripe avocado
3 tablespoons lemon juice
1/4 teaspoon salt, plus more for seasoning
1 teaspoon Dijon mustard
Pinch white pepper
1/2 pound lump crabmeat
2 tablespoons chopped chives

Steps:

  • Pit and peel the avocado and cut it into 1/2-inch chunks. In a small bowl toss the avocado chunks gently with 1 tablespoon of the lemon juice and season with salt to taste. In a medium bowl, whisk together remaining lemon juice, 1 teaspoon Dijon mustard, pinch of white pepper, and 1/4 teaspoon salt. Add crabmeat and toss.
  • Stand an empty 15-ounce can with both top and bottom removed on a serving plate. Scoop a quarter of the avocado into the can. Place 1/4 of the crabmeat on top and press down gently into the mold. Gently pull the can off the avocado and crab mixture. Garnish with a half teaspoon of chives. Repeat with the remaining 3 servings and serve.

10 eggs
1 teaspoon kosher salt
fresh ground black pepper
2 teaspoons minced garlic
3 tablespoons minced shallots
1 tablespoon olive oil
2 tomatoes, peeled,seeded,and diced (1 1/2 cups)
1/3 cup thinly sliced basil (chiffonade)
2 teaspoons fresh thyme leaves
1/2 lb fresh lump crabmeat, picked over to remove cartilage

Steps:

  • In a bowl, whisk the eggs until frothy and season with half the salt and pepper.
  • In a nonstick 10-inch skillet, cook the garlic and shallots in the olive oil for 1 minute over moderate heat.
  • Add the tomatoes, basil, and thyme, raise the heat, and continue cooking until most of the water from the tomatoes has evaporated.
  • Stir in the crabmeat, season with the remaining salt and pepper, and cook 1 minute to heat through.
  • Stir the eggs into the skillet.
  • Over high heat, continue stirring with a wooden spoon while simultaneously shaking the pan back and forth over the flame.
  • The eggs will begin to form small curds.
  • Continue stirring and shaking until the eggs are set but still somewhat soft on top.
  • Loosen the frittata from the skillet with a rubber spatula and slide it onto a large dinner plate.
  • Cover the frittata with another dinner plate and invert the plates.
  • Slide the frittata back into the skillet and continue cooking over high heat to brown the other side, about 2 minutes.
  • The cooked frittata should be golden brown on both sides.
  • Carefully transfer the frittata to a large dinner plate, cut into wedges, and serve hot or at room temperature.

Yet another way to make use of those big blue crabs we are catching. 1 crab gave us 1 cup of beautiful meat for this.I can't do what I suggest in the last step as I don't have a griller (broiler) so I finished it with the lid on for a couple of minutes to set the top. That worked fine and would be good for camping. Just cook the onion and potato slower and longer if you can't access a microwave.

5 eggs
1/3 cup cream
1/2 teaspoon grated lemon rind
5 drops Tabasco sauce (or to taste)
salt and pepper, to taste
3 tablespoons grated sharp cheddar cheese
1 large potato, cut into tiny dice
1 small onion, diced
1 tablespoon oil
1/4 cup diced red capsicum (bell pepper)
1 cup crabmeat, fresh frozen, canned

Steps:

  • Mix the eggs, cream, lemon rind, tabasco, salt and pepper together. Set aside.
  • Microwave onion and potato about 3 minutes (to speed up cooking).
  • Heat oil in frying pan over medium heat and brown potato and onion and cook them through.
  • Add the capsicum and cook a few minutes more.
  • Pour over the egg mix and scatter the crab across the top.
  • Cook gently for about 5 minutes or until almost set through, then place under a griller (broiler) to brown the top. Serve at once.

1 large Yukon gold potato
Kosher salt
6 large eggs
1/2 cup half-and-half
1 teaspoon grated lemon zest
1/2 teaspoon smoked paprika
1 teaspoon olive oil
1 cup jumbo lump crabmeat
1/2 cup baby arugula, chopped

Steps:

  • Put the potato in a pot with enough water to cover. Season the water generously with salt and place over high heat. Bring to a boil and simmer for 10 minutes. Drain well and let cool slightly. Cut into quarters and slice into thin pieces.
  • Preheat the oven to 375 degrees F.
  • In a medium bowl, whisk together the eggs, half-and-half, lemon zest, paprika and 1 teaspoon salt.
  • Grease an 8-inch square baking dish with the olive oil. In the baking dish, combine the crab, arugula and sliced potatoes, making sure the potatoes are all lying flat. Pour the egg mixture over the top.
  • Bake until the center is just set and the top is brown, about 30 minutes. Allow to cool for 10 minutes before cutting into 1-inch squares.

2 tablespoons chopped fresh tarragon
1 teaspoon Calabrian chile paste
1 teaspoon lemon zest (from 1 lemon)

2 tablespoons olive oil
6 ounces marinated artichoke hearts, chopped
One 5-ounce container baby spinach, roughly chopped
1 cup jumbo lump crab meat (about 8 ounces)

Steps:

  • Heat the broiler to high and place a rack in the center of the oven.
  • Whisk together the eggs, mascarpone, basil, tarragon, chile paste, lemon zest and 1/2 teaspoon salt in a medium bowl. Set aside.
  • Heat a medium (10-inch) nonstick ovenproof saute pan over medium heat. Add the oil and heat another minute. Add the artichoke hearts and cook, stirring often, until warmed through, about 2 minutes. Add the spinach and remaining 1/2 teaspoon salt. Cook, stirring occasionally, until the spinach is wilted, about 2 minutes longer. Add the crab and stir to combine. Add the egg mixture and allow to sit for 1 minute. Using a rubber spatula, stir the cooked egg mixture up from the bottom and sides, allowing the raw mixture to begin to cook. Continue to do this until the mixture is beginning to look like a soft scramble, about 4 minutes. Spread the mixture evenly on top and place under the broiler until the mixture is completely set and the top is golden brown, 3 to 4 minutes. Allow to cool for 5 minutes before slicing and serving warm.

1/2 cup celery, chopped
1/2 cup onion, chopped
1/2 cup green peppers, chopped
1/4 cup milk

2 tablespoons chopped fresh flat-leaf parsley
1/2 teaspoon seafood seasoning, such as Old Bay

Steps:

  • Preheat the oven to 400 degrees F.

6 ounces flaked crabmeat (, backfin recommended)
2 tablespoons shredded parmesan cheese
salt
freshly ground black pepper
6 eggs
2 tablespoons water
1 ounce butter
2 tablespoons heavy whipping cream

Steps:

  • Mix the flaked crabmeat with the cheese and season with salt and pepper.
  • Lightly beat the eggs in a bowl with the water and salt and pepper.
  • Melt the butter in a small skillet and when the froth subsides, pour in the eggs.
  • Place the crab and cheese on top of the eggs just when the eggs are beginning to set.
  • Pour on the cream while the eggs are still liquid and transfer under a hot broiler for a few minutes until the top is golden brown.

1 anchovy fillet

1 14-ounce can hearts of palm, drained and cut into 1/2-inch pieces

Steps:

  • Working in batches, cook the pancetta in a large nonstick skillet over medium heat, turning occasionally, until crisp, about 6 minutes. Drain on paper towels; set aside.
  • Meanwhile, make the dressing: Combine the mayonnaise, sour cream, parsley, tarragon, chives, anchovy, garlic, lemon juice and 1/4 teaspoon salt in a blender; puree until smooth.

Steps:

  • Bring a saucepan of salted water to a boil. Add the haricots verts and cook until crisp-tender, 3 to 5 minutes. Drain and run under cold water to stop the cooking.
  • Puree the yogurt, mayonnaise, lemon juice, chives, basil and anchovies in a blender until smooth. Season with salt and pepper.
  • Toss the crabmeat, half of the avocado and about 1 tablespoon of the yogurt dressing in a small bowl. Toss the romaine, croutons, haricots verts and the remaining avocado with the remaining dressing in a large bowl.

450g crabmeat , (a mix of ²⁄³ white and ¹⁄³ brown)
¹⁄² 200ml tub crème fraîche
juice 1 lemon
12 cherry tomatoes
1 large ripe avocado
110g bag rocket , washed and dried
3 tbsp olive oil

Steps:

  • Put the crabmeat in a glass or metal bowl. Check for any shards of shell. Tip the brown crabmeat into a small bowl. Stir in the crème fraîche and ½ the lemon juice until smooth. Lightly season, then set aside.
  • Cut the tomatoes in half, or into quarters if large. Cut the avocado in half lengthways and remove the stone. Peel off the skin, then cut into thin slices. Put the rocket, tomatoes and avocado into a large bowl. Squeeze over the remaining lemon juice and the olive oil. Season, then toss until the salad is coated with the dressing.
  • Arrange the salad onto serving plates. Scatter over the white crabmeat, drizzle with crème fraîche dressing and serve straight away.

1 tablespoon olive oil
2 large avocados, chopped
1 (15 ounce) can black beans, rinsed and drained
5 ounces Rotel tomatoes & chilies (half of a 10 ounce can)
10 large eggs
1/3 cup sour cream
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1/4 teaspoon cumin
1 cup shredded cheddar cheese
salsa
fresh cilantro
avocado, slices
fresh tomato, slices

Steps:

  • Saute onion in hot oil in a 12-inch oven-proof skillet over medium-high heat for about 4 minutes, till tender.
  • Remove from heat.
  • Stir in 1/2 can of Rotel tomatoes and the black beans, sprinkle with avocado.
  • Whisk together in bowl eggs, sour cream, salt, pepper and cumin and pour over the avocado/bean mixture in the skillet.
  • Bake at 350 for 20-25 minutes.
  • Sprinkle top with cheddar cheese and bake 5 more minutes or until set.

1 small red onion , sliced into thin rings
juice 2 limes , plus wedges to serve
pinch of caster sugar
170g can white crabmeat in brine, drained
2 spring onions , finely sliced
1 red chilli , deseeded and chopped
1 really ripe avocado , peeled, stoned and chopped
1 small garlic clove , crushed
2 corn tortillas
handful mixed salad leaves

Steps:

  • Put the onion in a bowl and cover with half the lime juice and a good pinch each of sugar and salt. Leave to soften while you get everything else ready.
  • Mix together the crabmeat, spring onions and half the chilli. Season with black pepper and set aside. Mash the avocado with the remaining lime juice, garlic and some seasoning. You can leave it quite chunky or mash it until smooth. Stir in the rest of the chilli.
  • Bend each tortilla in half and toast in a toaster for 1 min. Put on 2 plates and top with the salad leaves, then mashed avocado. Finish with the crabmeat and drained pickled onion. Serve with lime wedges for squeezing over.

1/2 cup crumbled Cotija or feta cheese
1/3 cup coarsely chopped toasted pumpkin seeds (pepitas)
1/4 cup coarsely chopped fresh cilantro
1 tablespoon fresh lime juice
1 large avocado, halved, pitted, peeled, diced
1 cup grated Monterey Jack cheese

Steps:

  • Heat enough vegetable oil in heavy large skillet over medium-high heat to reach depth of 1 inch. Working in batches, add tortillas and fry until crisp, about 45 seconds per side. Transfer to paper towels to drain. (Fried tortillas can be made 1 day ahead. Cool tortillas completely and store in resealable plastic bag at room temperature.)
  • Heat olive oil in heavy large skillet over medium heat. Add poblano chilies, bell peppers, onion, garlic, and jalapeño; sauté until just beginning to soften, about 12 minutes. Transfer to large bowl; cool.
  • Mix crab, tomatoes, Cotija cheese, pumpkin seeds, cilantro, and lime juice into vegetable mixture. Season with salt and pepper. (Crab mixture can be made 4 hours ahead. Cover and chill.)

8 rashers smoked streaky bacon
3 tbsp olive oil
6 eggs , beaten
1 large avocado , halved, stoned, peeled and cut into chunky slices
1 small red chilli , finely chopped
1 heaped tsp Dijon mustard
2 tsp red wine vinegar
200g bag mixed salad leaves (we used watercress, rocket & spinach)
12 baby plum tomatoes , halved

Steps:

  • Heat a 24cm non-stick ovenproof pan and fry the bacon rashers in batches on a high heat until cooked through and crisp. Chop 4 roughly and break the other 4 into large pieces. Set aside on kitchen paper and clean the pan.
  • Heat the grill to high. Warm 1 tbsp oil in the pan. Season the eggs, add the chopped bacon and pour into the pan. Cook on a low heat for around 8 mins or until almost set. Arrange the avocado slices and bacon shards on top. Grill briefly for about 4 mins until set.
  • Mix the remaining oil, the chilli, mustard, vinegar and seasoning in a large bowl. Toss in the salad leaves and tomatoes. Serve alongside the frittata, cut into wedges.

  • Heat a 10" non-stick skillet over medium heat. Add the butter, and swirl until it melts then foams. Once the foam subsides, pour the whisked eggs into the pan. Swirl the pan to cover the bottom with an even layer of eggs.
  • Saute the eggs over medium heat until the edges are firm and the center is just barely cooked through, 3-4 minutes. Deflate any large bubbles with the tines of a fork.
  • Sprinkle half the parmesan cheese over one half of the omelet. Top the cheese with the lump crab meat, then sprinkle with green onions. Layer the avocado over the green onions, then top with the remaining parmesan cheese.
