DOWNTON ABBEY EARL GREY SHORTBREAD COOKIES
Crisp and buttery shortbread cookies with a hint of Earl Grey, with just 5-ingredients and an easy lemon glaze, they're perfect for parties, tea time, or scarfing down all by yourself!

Steps:
- Blend the butter and earl grey tea leaves together and allow to sit at room temperature for at least 2 hours, longer is fine. If you are running short on time, this step can be skipped and the tea can be added with the powdered sugar. Just note that the flavor may not be as strong.
- Once the butter has finished setting. Preheat oven to 350° F and line a baking sheet with parchment paper and set aside.
- Cream the butter and tea mixture and powdered sugar in a large bowl or stand mixer.
- Add in the flour and salt. Continue to mix until a soft dough forms. The mix will be dry and crumbly at first but will come together.
- Roll dough out on a lightly floured surface until it's 1/4-inch thick.
- Cut out cookies using a 2-inch round cookie cutter.
- Bake on a parchment lined baking sheet for 12 to 15 minutes or until the edges are golden brown in color.
- Once cooled, whisk together the glaze ingredients and dip or drizzle the cookies as desired and place on wax paper to set.

- Preheat oven to 325 degrees F (165 degrees C). Place a sheet of parchment paper or plastic wrap on a work surface and dust with flour. Line a baking sheet with parchment paper.
- Beat butter in a bowl using an electric mixer until fluffy, about 3 minutes. Add 3/4 cup sugar and continue beating until mixture is lighter in color, about 2 minutes more.
- Mix flour, green tea powder, and salt together in a separate bowl; gradually add to creamed butter mixture, beating on low speed until dough sticks together. Roll dough to 1/4-inch thickness on the floured parchment paper; cut into 2-inch cookies or bars. Roll remaining dough and cut into more cookies until all the dough is used. Refrigerate for 10 minutes.
- Carefully transfer cookies to the prepared baking sheet. Sprinkle sugar over each cookie.
- Bake in the preheated oven until firm and barely starting to turn golden, about 15 minutes. Cool completely.

SHORTBREAD COOKIES

- Preheat the oven to 350 degrees F.
- In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and 1 cup of sugar until they are just combined. Add the vanilla. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.
- Roll the dough 1/2-inch thick and cut with a 3 by 1-inch finger-shaped cutter. Place the cookies on an ungreased baking sheet and sprinkle with sugar. Bake for 20 to 25 minutes, until the edges begin to brown. Allow to cool to room temperature.
- When the cookies are cool, place them on a baking sheet lined with parchment paper. Put 3 ounces of the chocolate in a glass bowl and microwave on high power for 30 seconds. (Don't trust your microwave timer; time it with your watch.) Stir with a wooden spoon. Continue to heat and stir in 30-second increments until the chocolate is just melted. Add the remaining chocolate and allow it to sit at room temperature, stirring often, until it's completely smooth. Stir vigorously until the chocolate is smooth and slightly cooled; stirring makes it glossier.
- Drizzle 1/2 of each cookie with just enough chocolate to coat it.
FANCY SHORTBREAD COOKIES! PERFECT WITH TEA
Steps:
- Simply open a box of shortbread cookies. Brush off loose crumbs off cookies. Place cookies aside. Melt chocolate in small bowl in microwave according to instructions. (Usually one minute at a time and stir chocolate.)
- Place a large sheet of wax paper aside on counter top. Using a butter knife put a thin layer of peanut butter on top of all the shortbread cookies. Once all the cookies are covered with peanut butter then you just dip the cookies in chocolate. You may have to flip cookies a few times in chocolate to get them well coated. After covering with chocolate, place them on the wax paper to harden. If you want you can put some chopped nuts or shaved chocolate on top of cookies. This will make them look good and also give some flavor. Allow cookies to harden on wax paper.
- Once cookies are hardened (approx. 5-10 minutes) you can serve them or even put them in wrap and give them to friends as a gift. They are great with tea or coffee.
