4 chicken breast halves, boned and skinned
2 tablespoons all-purpose flour
2 tablespoons butter
1 cup chicken stock
3 tablespoons fresh lemon juice
3 tablespoons chopped fresh basil
1 tablespoon lemon zest

Steps:

  • Place chicken breasts on a cutting board. Flatten slightly using the smooth side of a meat mallet. Dust both sides lightly with flour.
  • Melt butter in a large skillet over medium-high heat until bubbling. Saute chicken breasts until lightly browned, about 3 minutes per side. Add chicken stock, lemon juice, basil, and lemon zest. Cover and simmer until chicken is no longer pink in the center, about 10 minutes.
  • Transfer chicken to a warm platter. Cover loosely to keep warm. Boil remaining liquid over high heat, uncovered, until reduced to 1/2 cup. Spoon sauce over chicken.

4 chicken breast halves with skin and bones (8 to 10 ounces each), fat trimmed or 1 whole chicken (about 2 pounds) cut up
Salt and freshly ground black pepper
4 large basil leaves
4 cloves garlic, bruised with the side of a knife
4 thin lemon slices
1 tablespoon extra virgin olive oil

Steps:

  • Preheat the oven to 400 degrees F. Place the chicken in a baking dish; sprinkle both sides with salt and pepper and arrange skin side up. Loosen the skin from each chicken breast and slip a basil leaf between the skin and the meat. Add the garlic to the baking dish. Place a slice of lemon on top of each piece of chicken. Drizzle with oil. Bake, basting occasionally with pan juices and turning the chicken and the baking dish occasionally so the chicken browns evenly, 35 to 40 minutes. If using a whole chicken, the baking time will be about 50 minutes. To serve, place a browned lemon slice and garlic clove on top of each portion of chicken.

2 (2 1/2 to 3 pound) broiling chickens, halved
Lemon sauce, recipe follows
1/4 cup chopped flat-leaf parsley
2 cups fresh lemon juice
1 cup olive oil
1 tablespoon red wine vinegar
1 1/2 teaspoons minced garlic
1/2 teaspoon dried oregano
Salt and pepper, to taste

Steps:

  • Whisk together juice, oil, vinegar, garlic, oregano, and salt and pepper. Cover and refrigerate until ready to use. Whisk or shake vigorously before using.
  • CHICKEN: Preheat broiler at least 15 minutes prior to using. Broil chicken halves, turning once, for about 30 minutes or until skin is golden-brown and juices run clear when bird is pierced with a fork. Remove chicken from broiler, leaving broiler on. Using a very sharp knife, cut each 1/2 into about 6 pieces (leg, thigh, wing, 3 small breast pieces). Place chicken on a baking sheet (that will fit in the broiler) with sides. Pour lemon sauce over the chicken and toss to coat well. If necessary, divide sauce in 1/2 and do this in 2 batches. Return chicken to broiler and broil for 3 minutes. Turn each piece and broil for an additional minute. Remove from broiler and portion the chicken onto each of 6 warm serving plates. Pour sauce into a heavy saucepan. Stir in parsley and place over high heat for 1 minute. Pour an equal amount of sauce over each chicken and serve with lots of crusty bread to absorb the sauce.

1/4 cup plus 1 tablespoon all-purpose flour
4 skinless, boneless chicken breasts (6 to 8 ounces each)
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
1/2 shallot, finely chopped
1/2 cup torn fresh basil, plus 2 teaspoons finely chopped stems
3/4 cup low-sodium chicken broth
Grated zest and juice of 1 lemon
3 tablespoons cold unsalted butter
1 1/2 pounds zucchini noodles
Red pepper flakes, for topping

Steps:

  • Spread 1/4 cup flour on a large plate. Season the chicken with salt and pepper, then dredge in the flour and shake off the excess. Heat a large nonstick skillet over medium-high heat. Add the olive oil and heat until shimmering, then add the chicken and cook until golden and almost cooked through, 5 to 6 minutes per side.
  • Push the chicken to the edges of the skillet, add the shallot and basil stems to the middle and cook until softened but not browned, about 1 minute. Stir in the remaining 1 tablespoon flour and cook 1 minute. Add the chicken broth and lemon juice and bring to a boil, scraping up any browned bits. Reduce the heat and simmer, turning the chicken occasionally, until cooked through and the sauce is thick, 3 to 4 minutes. Turn off the heat and swirl in 2 tablespoons butter until melted. Add the lemon zest and season with salt and pepper.
  • Melt the remaining 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add the zucchini noodles and season with salt and pepper; cook, stirring occasionally, until just softened, 2 to 3 minutes. Toss in half the torn basil. Divide among plates and top with the chicken, lemon sauce, remaining basil and red pepper flakes.

I typically double the recipe so that we can have leftovers. The recipe is from the cookbook Fresh & Fast by Marie Simmons. I serve with fresh seasonal vegetables.

2 lbs chicken, bone in, with skin (about 4 pieces)
salt
pepper
4 large fresh basil leaves
4 garlic cloves, mashed slightly with the side of a knife
1/2 lemon, cut into 4 thin slices
1 tablespoon extra virgin olive oil

Steps:

  • Preheat oven to 400°F.
  • Clean and trim fat from chicken, and salt and pepper each side. Place chicken in a baking dish, skin side up.
  • Loosen the skin on each piece, and place a basil leaf under the skin, directly on top of the chicken meat.
  • Toss the garlic around the chicken in the baking dish.

4 (1 lb) boneless skinless chicken breasts
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1 medium onion, cut into thin wedges
1 (1 lb) bag frozen vegetables (baby green beans and carrots)
3/4 cup water
1/2 cup lemon basil stir-fry sauce
1 teaspoon cornstarch

Steps:

  • Cook rice as directed on package. While rice is cooking, cut chicken into 2 X 1/4 inch strips.
  • Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat.
  • Add chicken to skillet; sprinkle with pepper and garlic powder. Stir-fry 4 to 6 minutes or until brown. Add onion; stir-fry 4 to 6 minutes or until brown. Add onion; stir-fry 2 minutes.

2 (5 ounce) chicken breasts
2 tablespoons olive oil, or more as needed
salt and freshly ground black pepper to taste
⅛ teaspoon garlic powder, or to taste
1 medium lemon, halved
1 bunch fresh basil, chopped

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
  • Wash chicken breasts and pat dry with paper towels. Trim and discard fat. Tenderize chicken with a meat mallet. Rub 1 tablespoon olive oil on each breast, lightly covering both front and back. Season with salt, pepper, and garlic powder and set on the prepared baking sheet.
  • Squeeze juice from one lemon half over the chicken breasts. Sprinkle with basil. Cut 2 slices of lemon from the remaining half and set 1 slice on each breast. Reserve remaining lemon for another use.

20 ml olive oil
1 red onion, cut into wedges
25 g butter
800 g skinless chicken breasts, cut into bite sized pieces
2 strips fresh lemon rind, cut into thin strips
2 tablespoons capers, rinsed and drained
80 ml lemon juice
1/4 cup shredded basil

Steps:

  • Heat a wok until hot, add half the oil and swirl to coat.
  • Add the onion and stir-fry for 2-3 minutes or until softened.
  • Remove from the wok and set aside.
  • Reheat the wok, add another teaspoon of oil and half the butter, and stir-fry the chicken in two batches for 3-5 minutes each batch, or until browned, adding the remaining oil and butter between batches.
  • Return all the chicken to the wok with the onion.
  • Stir in the rind, capers and lemon juice.
  • Toss well and cook until heated through.
  • Add the basil and season with salt and freshly ground black pepper.

1/3 cup lemon juice
1/3 cup soy sauce (gluten-free)
4 tablespoons dried basil

Steps:

  • Sprinkle chicken, both sides, with basil (1 T per piece). It should be a liberal coating; you can even use more than what's listed.
  • Heat a fry pan on medium-high and add 1 T of the olive oil.
  • Mix remaining oil, lemon juice and soy sauce. Set aside.
  • Brown chicken in oil, both sides. Add liquid mix. Bring to a boil.
  • At this point you can either place chicken in an oven pan and bake at 375°F or just turn the stove down to a simmer; cook for 15-20 min for boneless and 40-45 min for bone-in chicken.
