This jalapeno popper mac and cheese recipe is extra creamy with loads of cheese, bacon and jalapeno peppers, with just the right amount of spice. This is a no-bake version. Come and get it!

1 pound noodles (I used cavatapi, but you can use similar noodles)
8 slices bacon (chopped)
3 jalapeno peppers (chopped)
2 tablespoons butter
3 tablespoons flour
1 cup milk
1 cup crema or sour cream
4 ounces cream cheese
1 tablespoon paprika
1 teaspoon cumin
Salt and pepper to taste
1 tablespoon of your favorite hot sauce (or more, as desired!)
8 ounces Monterrey Jack cheese (shredded)
8 ounces cheddar cheese (shredded)
FOR GARNISH: Extra jalapeno slices, spicy chili flakes, fresh chopped parsley

Steps:

  • Cook the bacon and jalapeno peppers in a pan until the bacon becomes crispy, about 6-7 minutes. Remove with a slotted spoon and reserve, saving the bacon grease in the pan.
  • While the bacon and jalapeno peppers are cooking, boil the noodles in salted water until al dente, about 10 minutes or so.
  • Stir the butter into the pan and let it melt with the rendered bacon fat over medium-low heat.
  • Stir in the flour until a roux forms. Cook it about 5 minutes, until it starts to brown.
  • Add the milk and sour cream and stir until it thickens up, only a few minutes.
  • Add the cream cheese, paprika, cumin, salt and pepper and hot sauce and swirl until the cream cheese melts through.
  • Add the shredded cheese a bit at a time, swirling until all of the cheese is incorporated.
  • Drain the noodles, then stir them and the reserved bacon and jalapenos into the pan until they are completely covered.
  • Garnish and serve!

8 oz. 1/2 pound or roughly 1¾ cups, depending on your pasta medium-size elbow macaroni or other medium tubular pasta like penne
3 tablespoons butter
¼ cup all-purpose flour
½ teaspoon salt
½ teaspoon dry mustard
¼ teaspoon black pepper
2½ cups milk (whole or 2% works)
1 cup plus 1/2 cup grated smoked cheddar cheese (divided)
1 cup plus 1/2 cup medium cheddar cheese (divided)
2 medium jalapeno peppers (stems removed and finely diced (include seeds for spicier chili; leave them out for a milder version))
1 teaspoon jalapeno Tabasco sauce (or more to taste)

Steps:

  • Boil the pasta until al dente, according to package directions. Drain and rinse with cool water to stop the cooking, drain. Return to the pan you boiled it in and set aside. (Toss in a little butter or olive oil to help keep the noodles from sticking together if it's going to be awhile before you make the sauce)
  • In a medium saucepan over medium heat, melt the butter.
  • Add the flour, dry mustard, salt, and black pepper. Whisk constantly over medium heat for about three minutes.
  • Continue stirring with the whisk and slowly pour in the milk.
  • Whisk frequently for about 5 minutes, and then constantly for another 5 minutes or so, until the sauce heats and thickens.
  • Remove from heat and stir in 1 cup of the smoked cheddar, 1 cup of the medium cheddar, jalapeno peppers, and Tabasco sauce, stirring until the cheese has melted.
  • Pour the cheese sauce over the pasta and toss gently until coated.
  • Add half the noodles to a two quart casserole dish and sprinkle on half of the remaining cheeses.
  • Add the remaining pastas and sprinkle on the remaining cheese.
  • Bake at 375 degrees Fahrenheit.for about 25-30 minutes or until bubbly and golden brown.

1 stick (8 tablespoons) butter
6 jalapeno peppers; 4 seeded and finely chopped, 2 sliced with seeds
4 cloves garlic, finely chopped
1 onion, finely chopped
3 tablespoons all-purpose flour
2 1/2 cups milk
Freshly ground pepper
2 cups shredded sharp Cheddar
4 ounces cream cheese
2 cups panko
2 Fresno chile peppers, sliced
5 medium heirloom tomatoes, cut into thin wedges
2 almost-ripe avocados, pitted, peeled and sliced
1 jalapeno pepper, finely chopped
1 small red onion, thinly sliced
EVOO, for drizzling
Juice of 2 limes
Kosher salt and freshly ground pepper
1/2 cup fresh cilantro leaves, coarsely chopped

Steps:

  • For the mac-n-cheese: Bring a large pot of water to a boil. Salt the water and cook the orzo until al dente, about 6 minutes; drain.
  • Meanwhile, heat 4 tablespoons butter in a saucepan over medium heat. Add the chopped jalapenos, the garlic and onions and cook until the jalapenos and onions are soft, 5 minutes. Add the flour and cook, stirring, for 1 minute. Add the milk and stir until the sauce thickens. Season with salt and pepper. Add the Cheddar and cream cheese and stir until melted.
  • Combine the orzo with the sauce and transfer to a casserole dish.
  • Melt the remaining 4 tablespoons butter and toss with the panko to coat. Sprinkle over the casserole and top with the sliced jalapenos and Fresno chiles.
  • For the guac salad: Gently toss the tomatoes, avocados, jalapenos and onions on a serving platter. Drizzle with EVOO and lime juice, season with salt and pepper and top with the cilantro.
  • Divide the orzo mac-n-cheese among plates and serve with the guac salad.

This recipe is easily adjustable to add more heat or to take it away. The amount of jalapenos used in this recipe will yield a nice, spicy mac 'n cheese without being too over-the-top spicy. The mac 'n cheese itself is rich and creamy. Enjoy!

1 (8 ounce) package elbow macaroni
¼ cup butter
1 small onion, diced
5 jalapeno peppers, seeded and minced
2 cloves garlic, minced

2 dashes Worcestershire sauce, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 1 1/2-quart baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and return to pot; set aside.

1 pound elbow macaroni
8 tablespoons unsalted butter
3 jalapenos, 2 finely chopped and 1 thinly sliced
2 1/2 cups half-and-half
1 pound cream cheese, room temperature
8 ounces sharp Cheddar, shredded (about 3 cups)
3 ounces Gruyere, shredded (about 1 cup)
1/2 cup pickled jalapenos, finely chopped, and 1/3 cup pickled jalapeno juice
1/2 cup pickled jalapenos, finely chopped, and 1/3 cup pickled jalapeno juice
1/8 to1/4 teaspoon cayenne pepper
1 cup panko bread crumbs

Steps:

  • Set an oven rack 6 inches from the heat source and preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook until it is al dente, about 6 minutes. Strain, reserving 1 3/4 cups of the pasta water. Set aside.
  • Melt the unsalted butter in a large saucepan over medium heat; transfer half the melted butter to a medium bowl and reserve. Add the chopped jalapenos to the saucepan, toss to coat and cook until softened, about 5 minutes; transfer to a small bowl and reserve.
  • Wipe out the saucepan and add the half-and-half. Cook over medium heat until it just comes to a simmer. Continue simmering until the half-and-half is reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Whisk in the Cheddar and Gruyere until all the cheese is melted and the sauce is smooth.
  • Add the macaroni and reserved pasta water and stir to combine. (The mixture will look very loose, but the pasta will suck up a lot of the sauce as it bakes.) Gently fold in the reserved cooked jalapenos, pickled jalapenos and pickled jalapeno juice. Season with salt and cayenne if needed. Pour into a 13-by-9-inch baking dish. Toss the bread crumbs in the bowl with the reserved melted butter and a sprinkle of salt. Sprinkle evenly over the macaroni and cheese. Lay the sliced jalapenos evenly on top of the bread crumbs. Bake until the cheese is bubbly and the bread crumbs are lightly browned and crispy, about 10 minutes.

  • For the stuffed peppers: Bring a large pot of water to a boil. Add the macaroni and cook until al dente according to the package directions; drain.
  • Heat the milk and butter in a large saucepan over medium heat. Add the cheeses and cook, stirring, until melted. Stir in the kosher salt, seasoning salt and pepper. Add the macaroni and stir into the cheese sauce.
  • Make a slit in each pepper and remove the seeds. Gently stuff a heaping 1/4 to 1/2 cup of the macaroni into each pepper, being careful not to overstuff. Use a toothpick to help seal the peppers and set aside.
  • For the cilantro-lime cream: In a small bowl, whisk together the sour cream, cilantro, cumin, salt and lime zest and juice until well combined. Set aside.
  • For the batter: In a large heavy-bottomed pot, add enough oil to fill the pot halfway and heat the oil to 375 degrees F.
  • Whisk together the flour, baking powder, salt and pepper. In a large measuring cup, mix together the beer and eggs. Whisk the liquid into the dry ingredients until well mixed.
  • When the oil is ready, dip a pepper into the batter until fully coated. Carefully, slowly lower the pepper into the hot oil. Repeat with the remaining peppers. Fry until golden brown and crisp, about 2 minutes. Drain on a paper towel-lined plate. Serve immediately, drizzled with the cilantro-lime cream.

48 round buttery crackers, finely crushed (about 2 cups), divided
