THE BEST HOMEMADE APPLESAUCE

The Best Homemade Applesauce image

After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

Provided by Food Network Kitchen

Categories     condiment

Time 1h35m

Yield about 5 cups

Number Of Ingredients 5

4 pounds assorted apples, such as Golden Delicious, Gala, Honeycrisp or McIntosh (about 8), peeled, cored and chopped
1/4 cup sugar
Kosher salt
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon ground cinnamon

Steps:

  • Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
  • Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
  • Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

PUMPKIN APPLESAUCE SQUARES.

Pumpkin Applesauce Squares. image

This recipe was in a box of loose recipes I'd cut out of magazines and newspapers. I'm posting it here so it won't get lost. UPDATE: I made these and they are delicious. I wasn't sure how pumpkin and applesauce would taste together. The predominate flavor to me was the molasses. I used all white flour and butter. The texture is more like a cake than a square. I did cream the butter, sugar, molasses, brown sugar, applesauce, eggs and pumpkin before adding the dry ingredients.

Time 37m

Yield 48 squares

Number Of Ingredients 21

1 cup unsweetened applesauce
3/4 cup packed light-brown sugar
1/2 cup vegetable oil
1/4 cup 1% low-fat milk
2 large eggs
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon allspice
1/8 teaspoon clove
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
1 3/4 cups all-purpose flour
1 cup chopped walnuts, toasted
1/2 cup moist golden raisin (optional)
1 1/4 cups packed light-brown sugar
3/4 cup all-purpose flour
1/2 cup cold butter (stick not spread)
2 teaspoons ground cinnamon
1/4 teaspoon nutmeg
1 cup walnuts, coarsely chopped

Steps:

  • Heat oven to 350°F.
  • Line a 15 1/2 x 10 1/2 inch jelly-roll pan with foil, letting it extend above pan at the ends.
  • Grease foil in the pan with oil or margarine.
  • In a large mixing bowl, add all ingredients except the flour, walnuts and raisins. With mixer on medium speed, blend ingredients.
  • Switch mixer to low speed and beat in the flour - just until blended.
  • Fold walnuts and raisins (optional) into the batter. Turn into the prepared pan. Set aside.
  • Make the streusel topping: Put brown sugar, flour, butter (cut into small pieces), cinnamon and nutmeg into a large mixing bowl. Stir with a fork until crumbly; add walnuts.

  • Lift foil by ends onto a cutting board. Cut into squares; discard foil.
  • Serve with coffee, tea, milk or mulled cider. These are also awfully good with a little scoop of ice cream and a glass of warmed brandy.
  • Cook's Tip: If desired, sprinkle with confectioners sugar instead of streusel.
  • Storing Tip: Refrigerate in an airtight container for up to 1 week.
