SOUTHERN STYLE CHICKEN AND DUMPLINGS

1 (3 pound) whole chicken
1 onion, quartered
2 slices lemon
salt and pepper to taste
3 cups water
1 bay leaf
½ teaspoon dried thyme
2 cups all-purpose flour
3 tablespoons shortening
1 teaspoon salt
¼ cup water

Steps:

  • In a heavy pot with a lid place the chicken, onion, lemon, salt, pepper, water, bay leaf and thyme. Simmer all over low heat until tender, about 1 hour.
  • Let chicken cool slightly in pot, then remove and take the meat off of the bones. Discard the bones and skin and skim excess fat off the broth if desired. Discard the onion, lemon and bay leaf. If desired, wash out pot well. Return broth and chicken pieces to the pot. Simmer over low heat while making the dumplings.
  • To Make Dumplings: In a medium mixing bowl, cut shortening into the flour and salt. Stir in 1/4 cup water (more if needed) to form a soft dough. Roll out dough on a floured surface, with a rolling pin, until very thin. Cut into 1 inch wide strips using a pizza cutter or knife. Tear off 1 inch long pieces from these strips and drop into simmering broth and chicken meat. Simmer for 10 minutes with the lid off, then 10 minutes more with the lid on. Serve immediately.

This is very basic and easy to make. It does not contain vegetables like a lot of other recipes do. Prep time includes boiling the chicken.

1 chicken
3 -4 quarts water
3 chicken bouillon cubes
1 egg
flour

Steps:

  • Boil the chicken in the water and bouillon cubes.
  • You can use any combination of chicken parts, just be sure to use chicken with the skin on.
  • When the chicken is done, remove it from the broth and chop the meat into bite sized pieces.
  • Take 1 cup of the broth and add the egg and enough flour to make a stiff dough.
  • Roll the dough out on a floured surface and cut into strips about 1x2inches.
  • (dough should be about 1/8th of an inch thick).
  • Drop the strips into the remaining broth (it should be boiling first).
  • Simmer them for 30 minutes.
  • Add the chicken pieces during the last 5 minutes.
  • Add salt and pepper if needed.

My mom made a similar recipe for this comforting dish, and I still remember the wonderful aroma of chicken and dumplings cooking throughout the house. She didn't make it often, but when she did, what a treat. I especially loved the light, tender dumplings, which is still my most favorite part of this dish. (In a pinch, Bisquick dumplings are also very good). For those of you, like my good friend Cindy, who like a more Southern style of dumpling (heavier, chewier), the recipe is at the bottom. This recipe is from Steph's Country Kitchen Goodness. This is my favorite website for recipes.

1 large broiler-fryer chicken, cut up
2 celery ribs, sliced
4 carrots, peeled and sliced
1 medium onion, diced
1 (14 1/2 ounce) can chicken broth
2 tablespoons dried parsley
2 teaspoons chicken bouillon granules
1 1/2 teaspoons salt
1/2-1 teaspoon pepper
water
2 cups flour
4 teaspoons baking powder
1 teaspoon salt
3/4 cup milk
4 tablespoons oil

Steps:

  • Combine chicken, celery, carrots, onion, chicken broth, parsley, chicken bouillon granules, salt and pepper in a large pan or dutch oven; add enough water to cover chicken.
  • Bring to a boil; reduce heat, cover and simmer for 2 hours or until chicken is done.
  • Remove chicken and let stand until cool enough to handle.
  • Remove skin from chicken and tear meat away from bones.
  • Return meat to soup; discard skin and bones.
  • Add more salt and pepper to taste, if desired.
  • Return soup to a simmer.
  • In a mixing bowl, combine dumpling ingredients and mix well to form a stiff dough.
  • Drop by tablespoonfuls into simmering soup.
  • Cover and simmer for 15 to 20 minutes.
  • Serve immediately.
  • Yield: 4 to 6 servings.
  • *SOUTHERN STYLE DUMPLINGS (heavier and chewier) 2 cups flour, 1 cup chicken broth, 2 tsp baking powder, 2 beaten eggs. Combine flour, broth, baking powder and eggs; mix well to form a stiff batter. Drop by tablespoonfuls into simmering soup. Cover and simmer for 15 to 20 minutes.

This is a very simple way to make chicken and dumplings. My mother gave me this recipe. It's great on a cold day.

4 boneless chicken breasts
2 (7 1/2 ounce) cans Pillsbury refrigerated biscuits
1 (14 1/2 ounce) can chicken broth
1 (10 1/2 ounce) can cream of chicken soup
1 teaspoon salt
1 teaspoon pepper
1 stalk celery (diced)
water

Steps:

  • Put chicken and celery in a large pot and cover with water. Bring to a boil. Cook chicken thoroughly.
  • Once chicken is done remove chicken from pot and let cool on a plate. Set aside. Do not throw away broth--it will be used later.
  • Add cream of chicken soup, chicken broth, salt and pepper to pot; stir. Cook on medium-high heat.
  • Slice chicken breasts like you would a turkey (thinly). It will come apart once it's added back to the pot. Add back to pot. Bring to boil.
  • With a rolling pin, roll out each biscuit and cut into fourths. (For smaller dumplings, cut them smaller). I like mine medium size, so fourths work for me. Once you're done, it's time to add them to the pot.
  • Just drop them in one at a time, make sure to stir often. They tend to stick if they aren't stirred. They will swell after they are first added, but they will go back down to normal size after a few minutes. Let them boil for 10 minutes, then simmer on medium-low for about 15 minutes; cover. Continue to stir often. Dumplings are done when the center of the dumpling is slightly darker than the outside.

MOM'S CHICKEN AND DUMPLINGS (CHICKEN PAPRIKA)



Mom's Chicken and Dumplings (Chicken Paprika) image

This was a staple at our house when I was growing up. My mom made this about two times a month and often had to double the dumplings! Since my mom is not good at exact measurements, I tried my best to recreate this great one pot meal from her verbal instructions. She calls this Chicken Paprika, but I am told it would have to have sour cream in it, and it doesn't, which is fine with me :) ****NOTE 1/15/08: I've adjusted the quantities of salt and paprika because depending on what kind of chicken you use, different amounts of water will be used, needing different amounts of spicing. You may also increase the pepper and garlic, if desired, but be careful as garlic should not be a dominant flavor in this dish.

4 lbs chicken thighs, skin removed (boneless thighs if you can find them)
water
2 small onions, chopped
1 tablespoon butter or 1 tablespoon oil
1/2 teaspoon garlic powder
1 -2 teaspoon salt
1/4 teaspoon black pepper (to taste)
1 -2 tablespoon paprika
2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon paprika
1 large egg, beaten
water

Steps:

  • In a stock pot or dutch oven saute onions in butter until tender.
  • Add water until pot is about 1/3 full.
  • Add chicken thighs, garlic powder, salt, pepper and paprika.
  • Make sure water is covering the chicken, if not add more until it just covers.
  • Bring to a boil and then simmer for 90 minutes, covered, stirring occasionally.
  • In the meantime, make the dumplings: Mix the flour, salt, pepper and paprika in a medium bowl until combined.
  • Make a well in the center and drop in the egg and about 1/2 cup water.
  • Stir and add more water by the tablespoon until you have a sticky dough that just leaves the side of the bowl.
  • In a different large pot from chicken, boil water.
  • Drop dumpling mixture by the teaspoon into the boiling water.
  • (I use a regular teaspoon from my flatware, not a measuring spoon.) If dumpling mix is too sticky to drop from spoon, then dip the spoon into the boiling water, the dumpling should slide right off.
  • When dumplings start floating on top, remove them with a slotted spoon or drain them.
  • You may have to reduce the heat to see when they are floating.
  • About 30 minutes before chicken should be done, add the dumplings to the pot with the chicken.
  • After 30 minutes, you should have a delicious dish: the chicken should be tender enough that it is falling off of the bone and the dumplings should have made a thicker sauce out of the liquid the chicken was cooking inches.

My grandmother, from Jellico Tennessee, was a great cook and was truly loved for her chicken and dumplings. My mother was given her recipe and served it quite often since it is very economical and delicious. I have been cooking them for about 20 years now and have added my own personal touches to the recipe. They are to be served in a bowl, not on a plate. It is the creamy, flavorful, gravy-like broth that makes them so delicious. I haven't changed anything about the wonderful dumplings.They are fluffy and soft.They are unbelievably simple to make and just remember don't over-wet or over-work the dough. This recipe would be perfect for a family reunion or church social. It will make exactly (20) 1-cup servings. It does taste good leftover just add a little water or milk when reheating and reheat slowly on low heat. Enjoy!

5 lbs chicken (please use a whole chicken it really makes a difference in the flavor of your broth)
2 medium onions
6 stalks celery
bay leaf, 4
4 quarts water
2 tablespoons dried parsley flakes
2 teaspoons salt
2 teaspoons pepper
2 teaspoons poultry seasoning
1 (10 ounce) can cream of chicken soup
1/2 cup butter
5 cups self-rising flour
2 cups milk (not skim)

Steps:

  • Place the chicken in a large pot at least 7qt. I use my gumbo pot. This recipe makes exactly 5 quarts and you want a little room. Cover the chicken with 4 quarts of water. Add bay leaves, salt, pepper, poultry seasoning, one of the onions quartered, and 3 celery stalks cut into large pieces. These will cook to the point of mush and be discarded later. Put the lid on and boil on medium heat( on my electric stove it is #5) for exactly one hour. Occasionally check to make sure it is at a medium boil and move the chicken around in the pot.
  • When the hour has passed turn off the heat, take off the lid and let it cool down for about 15 minutes. Then remove the chicken to a large bowl. Drain off any broth back into the pot. Cut the chicken down the center and open it up so it may cool. Set aside.
  • Next I strain the broth. I like to have a nice clean broth free of bay leaves, bones, skin etc. If you notice any chicken skin stuck to the pot please remove it. Throw it all out including the mushy onion and celery .Pour your nice broth back into the pot. Chop your remaining onion and celery into nice, pretty small pieces. Add it to your broth, put the lid back on and boil on medium heat while you are making your dumplings.
  • Now is a good time to clean up your mess. Once clean, you will need a nice floured surface about as long and wide as your rolling pin. If you don't have a rolling pin you can use a glass. The area should be about 15x15.
  • In a large mixing bowl add your 5-cups of flour. Make a well in the middle and pour in the 2 cups of milk. Mix well with a fork until all of the flour is moistened and you can make it all stick together in a dough ball. It is better to have a little dry flour in the bowl than to have dough that is too wet. If you really think you need to add milk do it by spoonfuls. Plop the dough out onto your floured surface, roll it around so that the bottom of the dough gets floured and then flip it over and roll the top around in the flour. Use your rolling pin or glass to roll the dough out. If it sticks just sprinkle a little flour on the sticky spots. Roll it out to a 1/4 inch thickness which should cover about a 15x15 area. Push in any raggedy ends. Use a knife to cut the dough into about 1 1/2 inch strips to have nice big dumplings like mine (pictured) or smaller if you like.
  • At this point take the lid off of the pot. The broth should be at a medium simmer--you need to see bubbles before adding your dumplings. Now cut each strip of dough into 1 inch squares. Throw each dumpling in the pot as you cut it. After each row stir the pot. Continue until you have cut all of the dumplings.( It is good for the dumplings to be coated with the extra flour, don't shake it off. This adds thickness to the broth.) Stir well making sure all of the dumplings are separate.Put the lid on and lower the heat. You want a low simmer.
  • Now it is time to remove the chicken from the bone. Separate the breast meat into medium sized chunks.Everything else usually comes off in bite sized pieces. Please make sure you are free of bones, fat and skin. By the time you have all of the chicken removed it is time to add it to the pot.
  • Remove the lid and add the chicken .Then add the cream of chicken soup, butter and parsley. Stir well. You may think your broth looks a little thin. Don't worry, it thickens upon standing. First you need to cook your chicken and dumplings a few more minutes now that everything is in the pot. I like to taste test about now and I usually add a little more salt, pepper, and poultry seasoning to suit my taste. Let this sit on the stove uncovered over very low heat for about 15 minutes. Then turn off the heat completely and let it sit for another 15 minutes. This is when it really thickens up for you. When it is cool enough and thick enough ---eat up!
