VANILLA POPSICLES
My daughter loves to make homemade popsicles. Found this on the net. Something a bit different and somewhat healthy. COOK TIME IS FREEZER TIME!

Steps:
- Combine milk, sugar and vanilla in a large bowl and stir until sugar dissolves.
- Pour mixture into the paper cups until they are half full.
- Freeze for 1 hour or until slushy enough to support stick.
- Put popsicle sticks in the cups for handles.
- Freeze in freezer for a total of about four hours.

Steps:
- Pour cream soda into a bowl and whisk until no longer bubbly; set aside.
- Heat water and sugar in a saucepan over medium high heat, stirring until the sugar is dissolved, about 5 minutes.
- Stir sugar mixture and vanilla extract into the cream soda.
- Pour mixture into small plastic cups or ice pop molds, then insert wooden ice pop sticks. Freeze until firm.

DIABETIC CHERRY VANILLA POPSICLES
The other day I got 5 cans of Splenda-sweetened cherry pie filling on the discount aisle at the market. Who knows why it was on discount, but I snatched it up like it was going out of style. I came up with these popsicles because you can't buy this kind of decadence and I was craving something cold and special.

Steps:
- Prepare the pudding with the milk.
- Place a tablespoon of pudding into freezer-pop molds. Place a tablespoon of pie filling on top of the pudding. Continue until the molds are full. Using a knife, swirl the pudding and pie filling. Don't mix, just swirl. Place the sticks into the molds.
- Place in the freezer until frozen. If you have leftover pudding and pie filling, transfer the pie filling into a non-metal container, cover and refrigerate. Cover the pudding on the surface with plastic wrap to prevent a skin forming on the top.
- Repeat the process to make more or use in another recipe.

- Dissolve Jello and sugar in boiling water.
- Dissolve Kool-Aid in cold water. Pour Kool-Aid and Jello mixture together.
- Pour into small (3 oz) paper cups, ice cube trays, or pop molds.
- Freeze until almost firm.
- Insert popsicle sticks, party picks, etc. and freeze until firm.

- Place the sugar, salt and cornflour in a saucepan. Whisk to combine. Next, whisk in the milk (make sure there are no lumps of cornflour).
- Add the blueberries, sugar and lemon juice into a saucepan. Heat under medium heat, until the sugar dissolves and the fruits start to break down. Let it all simmer until the juices thicken into a syrup. About 10 - 15 minutes (longer if you are making a double batch).
- Blueberry Vanilla Popsicles - mix 2 heaping tbsp of cooled blueberry compote with roughly ⅔ cup of the vanilla popsicle base. Mix just enough to create ripples. Transfer the mix into 2 popsicle molds (2.7oz - 3 oz). Tap it on the table to remove any air bubbles.
