ROASTED POTATOES WITH FIGS AND THYME

Roasted Potatoes With Figs and Thyme image

A fall walk through New York's Greenmarket with Eleven Madison Park's chef, Daniel Humm, brought the idea for this unusual dish. Hot black tea lends a deeper flavor to dried figs, which are scattered with potatoes on a pan with thyme and then roasted. The recipe calls for fingerling potatoes, but any waxy potato will do. (And for everything you need to know to make perfect potatoes, visit our potato guide.)

Provided by Kim Severson

Categories     dinner, side dish

Time 40m

Yield 6 servings

Number Of Ingredients 7

1/2 pound dried black mission figs or other dried figs
1 1/2 cups brewed black tea, more if necessary
2 pounds fingerling potatoes
1 head garlic
5 sprigs of thyme
1/3 cup olive oil
Salt and black pepper to taste

Steps:

  • Place figs in a bowl, cover with hot black tea and let cool. Cover and refrigerate for 4 to 6 hours or overnight, depending on initial softness of figs.
  • Preheat oven to 400 degrees. Wash potatoes well and trim any bad parts. Separate garlic head into individual cloves but do not remove outer skin.
  • Drain figs. In a bowl, combine garlic, thyme, figs, potatoes and olive oil; toss. Place on roasting pan and bake until potatoes are tender enough to pierce with a fork, about 30 minutes. Remove and season immediately with salt and pepper. Serve. Diners may remove skin from garlic at the table and eat along with the potatoes, if they wish.

FALL STOUT POT ROAST WITH AUTUMN VEGETABLES

Fall Stout Pot Roast with Autumn Vegetables image

Provided by Geoffrey Zakarian

Categories     main-dish

Time 12h10m

Yield 6 to 8 servings

Number Of Ingredients 18

4 pounds boneless beef chuck roast, tied (ask your butcher to do this)
Kosher salt and freshly cracked black pepper
1/4 cup canola oil
1/2 cup all-purpose flour
2 carrots, peeled and cut into large chunks
2 turnips, peeled and cut into large chunks
1 red onion, cut into large chunks
2 tablespoons tomato paste
5 cloves garlic, peeled
3 sprigs fresh thyme
2 bay leaves
Two 12-ounce bottles stout beer
2 cups beef stock
4 tablespoons butter
2 cups frozen pearl onions
2 cups frozen green peas
1/4 cup thinly sliced chives
2 tablespoons chopped fresh tarragon

Steps:

  • The night before, season the chuck roast liberally with salt and pepper and refrigerate uncovered.
  • When ready to cook, preheat the oven to 300 degrees F.
  • In a large Dutch oven, heat the canola oil over medium-high heat. Season the chuck roast again with salt and pepper and dust with flour, shaking off the excess. Sear on all sides, browning the meat evenly, 4 to 6 minutes per side. Remove the roast to a plate, then add the carrots, turnips and onion to the pot. Lower the heat to medium and cook, stirring occasionally, until the vegetables are caramelized, 6 to 8 minutes. Stir in the tomato paste, garlic, thyme and bay leaves and cook another 2 minutes.
  • Add the roast back to the pot, then add the beer and beef stock. Nestle the roast down among the vegetables so that it is mostly submerged in the liquid. Bring to a simmer. Cover, leaving the lid slightly ajar, and place in the oven to cook under very tender, 3 to 3 1/2 hours, testing with a small knife for tenderness after 3 hours.
  • Meanwhile, heat the butter in saucepot over medium-low heat, add the pearl onions and peas and season with salt and pepper. Cook, stirring occasionally, until the onions and peas are warmed through, 3 to 5 minutes.
  • Once the roast is done, remove it from the pot and cut off the string. Discard the thyme and bay leaves. If you'd like the sauce thicker, place the Dutch oven back on the stove and bring to a simmer over medium-high heat. Simmer, stirring occasionally, until the liquid is reduced to the desired thickness (you're looking for a rich and smooth sauce).
  • To plate, slice the roast into thick slices. Place the vegetables on a platter, then the beef, then ladle the sauce over. Spoon the peas and onions on top and sprinkle with the chives and tarragon.

ROAST QUAIL WITH FRESH FIGS

Roast Quail With Fresh Figs image

If you're making this entire menu, you'll want to brown the quail and figs before starting the eggs; then you can simply pop them in the oven when serving the first course.

Yield Makes 6 servings

Number Of Ingredients 29

1 medium onion, finely chopped
2 celery ribs, finely chopped
1 large garlic clove, finely chopped
1/2 stick (1/4 cup) unsalted butter
1/3 cup veal demi-glace
2 tablespoons chopped fresh tarragon
1 tablespoon fig balsamic vinegar
3/4 cup chopped walnuts (2 oz)
2/3 cup soft dried Mission figs (1/4 lb), stems discarded and figs finely chopped
1 cup coarse fresh bread crumbs
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 stick (1/4 cup) unsalted butter
1 pt fresh figs, stems discarded and figs halved lengthwise
1/4 cup finely chopped shallot
1/4 cup finely chopped celery
1 cup dry red wine
1 1/3 cups veal demi-glace
1 teaspoon arrowroot or cornstarch
2 tablespoons fig balsamic vinegar
1 tablespoon chopped fresh tarragon
1/2 teaspoon salt
1/4 teaspoon black pepper
12 semiboneless quail
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons unsalted butter
2 tablespoons vegetable oil
kitchen string; wooden picks

Steps:

  • Cook onion, celery, and garlic in butter in a 10-inch heavy skillet over moderate heat, stirring, until pale golden, about 10 minutes. Add demi-glace and boil, stirring occasionally, until most of liquid is evaporated, about 3 minutes. Stir in tarragon, vinegar, walnuts, dried figs, bread crumbs, salt, and pepper, then spread stuffing on a plate to cool.
  • Heat 2 tablespoons butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then brown figs, cut sides down, without stirring, about 3 minutes. Transfer figs to a bowl with a slotted spatula. Add shallot and celery to skillet and sauté, stirring, until golden, 3 to 5 minutes. Add wine and 8 to 10 browned fig halves (reserve remainder) and boil, stirring and mashing figs, until wine is reduced to a syrup, about 5 minutes. Stir in demi-glace and bring to a boil. Stir arrowroot into vinegar until dissolved, then add to skillet, whisking to incorporate. Boil sauce 2 minutes, then pour through a fine-mesh sieve into a 2-quart heavy saucepan, pressing on and then discarding solids. Stir in tarragon, salt, and pepper.
  • Discard any disposable metal skewers from cavity of each quail, then rinse quail inside and out and pat dry. Stuff 1 quail with a scant 1/4 cup stuffing, pressing and shaping it to fill out breast. Tie legs together with string and push legs up against body. Thread cavity closed with a wooden pick. Repeat with remaining quail.
  • Put oven rack in middle position and preheat oven to 350°F.
  • Sprinkle quail all over with salt and pepper. Heat 1 tablespoon each butter and oil in cleaned 10-inch heavy skillet over moderately high heat until foam subsides, then brown 6 quail on all sides, about 10 minutes total. Transfer with tongs to a large shallow baking pan. Wipe skillet clean and brown remaining 6 quail in same manner in remaining tablespoon each of butter and oil.
  • Remove strings and picks from all quail, then roast quail, breast sides up, until just cooked through (check inner thigh - meat will still be slightly pink), 10 to 15 minutes. Add reserved browned figs to pan for last 2 to 3 minutes of roasting.
  • While quail roast, return sauce to a simmer, then add remaining 2 tablespoons butter, whisking until incorporated.
  • Transfer quail and figs to a serving dish and pour any juices from baking pan into sauce. Serve quail with sauce.
  • Do Ahead: Stuffing can be made 1 day ahead and cooled completely, uncovered, then chilled, covered. Bring to room temperature before proceeding. Figs and sauce (without remaining 2 tablespoons butter) can be prepared 1 day ahead and cooled, uncovered, then chilled separately, covered. Bring sauce to a simmer before adding butter. Quail can be browned 1 hour before roasting. Keep quail, uncovered, at room temperature.

ROAST PORK WITH FIGS ONIONS AND MARSALA

Roast pork with Figs Onions and Marsala image

A rather sweet pork roast. I like this a lot because not only is it delish, but it freezes quite well sliced in the juices. Another Boil-in-bag thing.

Provided by T. Woolfe

Categories     Pork

Time 2h30m

Yield 6 serving(s)

Number Of Ingredients 9

2 lbs pork tenderloin
12 dried black figs, approximately
1 cup marsala wine or 1 cup dark port wine (with a drap of Honey)
1/2 cup boiling onions
2 tablespoons oil
1 1/2 teaspoons salt
1 teaspoon ground black pepper
3/4 teaspoon allspice
1 tablespoon sweet butter (optional)

Steps:

  • Soak the Figs in the Marsala at least an hour.
  • Put the Boiler Onions in warm water 20 min, skin cut off the root and stem, cut a X in the bottom.
  • Mix 1 TBS Oil, Salt, Pepper,& Allspice then rub the Pork let it stand half an hour.
  • Sear the rubbed pork in the rest of the oil.
  • Put everything but the butter in a coverable roasting pan.
  • Roast covered at 325F for an hour.
  • Uncover, drop the oven to 275F and continue roasting to an internal temp of 145F.

  • Remove the meat to a plate.
  • Remove the most solid of the Figs and onions.
  • Put the liquid in a pot and degrease, I use paper towels.
  • Chech the seasoning.
  • Whisk in the butter to the hot liquid, I use my hand blender.
  • Slice and enjoy, figs and onions on the side.
