2 tbsp light soy sauce
1 tbsp dark soy sauce
1 tsp toasted sesame oil
1 tsp sugar
1/2 tsp ground ginger
1 lb lo mein noodles or spaghetti (prepared, see notes)
1 tbsp oil
4 cloves garlic (minced)
1 cup mushrooms (sliced, crimini preferred)
1 small carrot (julienned)
1 cup snow peas
2-3 cup spinach (baby spinach preferred)
green onions (thinly sliced, to finish, as needed)

Steps:

  • In a small bowl or measuring cup, whisk together the soy sauces, sesame oil, sugar and ground ginger. Set aside.
  • Heat the oil over medium heat and add the garlic and cook, stirring occasionally until slighly golden.
  • Turn up the heat to medium high and add the mushrooms, cooking and tossing occasionally, until soft.
  • Add the carrots and snow peas and toss for 1-2 minutes, until tender crisp.
  • Mix in the noodles, spinach, and sauce. Toss until well combined. Taste and season with salt, if desired. Sprinkle on the green onions and enjoy immediately.

Better Than Take-Out Chicken Lo-Mein image

2 lb. boneless chicken thighs (1/2" pieces)
2 yellow onion (sliced)
4 carrots (julienned)
1 head bok choy (chopped)
1 pkg snow peas
2 pkg Chuka Soba Japanese style noodles
1/3 c. reduced sodium soy sauce
3 cloves garlic (minced)
2 Tbsp. brown sugar
1 Tbsp. garlic chili pepper sauce (Brand: Taste of Thai)
1 Tbsp. oyster sauce
1/4 tsp. powdered ginger
1 tsp. sesame oil
3 tbsp. olive oil for grill

Steps:

  • Whisk together soy sauce, garlic, brown sugar sambel oelek, oyster sauce, ginger powder and sesame oil. Add chicken. Let marinate. (just long enough for you to cut up the veggies. Approximately 10 minutes)*Make second batch of sauce*Chop all vegetables. On blackstone grill med. high heat cook for 5 minutes or until no longer pink. Move meat to side. Add chopped vegetables to the grill add squirt of water and oil and cover with a large lid to steam about 3-4 minutes. Add meat, then cooked noodles to the vegetables, pour with the second batch of sauce. Mix until heated through for a couple more minutes.Serve hot!

I don't get take out very often, but when I do, it's almost ALWAYS chinese. It's certainly my weak spot. The down side is, I don't actually know what is going into this delicious food. Sometimes I don't want to know :-). Okay so who knew it was this easy to recreate something that tastes like it came from a take out carton and certainly is healthier. I used vegetables that I had in my house already but you could mix it up with using snow peas, cabbage, beans, peppers and/or broccoli. I served this with my orange chicken.

1/4 cup(s) soy sauce
1 tablespoon(s) brown sugar
3 clove(s) garlic, minced
1 teaspoon(s) ginger, freshly grated
1/8 teaspoon(s) black pepper
2 tablespoon(s) canola oil
1/2 teaspoon(s) peanut oil
2 package(s) yaki soba noodles (discard flavor packs)
3 stalk(s) celery, sliced
1 - onion, sliced
1 can(s) baby corn
1 can(s) bean sprouts, drained

Steps:

  • In a bowl, whisk together soy sauce, brown sugar, garlic, ginger. Set aside.
  • Rinse and separate noodles- drain and set aside.
  • Heat oils in a large skillet over medium/high. Add onion and celery and cook about 2 minutes. Add corn and bean sprouts (or whatever additional veg you are using) Cook another 3-4 minutes.
  • Add noodles and sauce mixture and continue to cook about 4-5 minutes until heated through. Be sure to toss well as it's cooking to make sure everything gets well coated.
